Giverny - Dinner Wednesday - Le Jardin des Plumes

A short walk from Claude Monet’s house, this half-timbered Anglo-Norman 1912 edifice extends an invitation to relax and enjoy the good things of life. The tasteful interior mixes Art deco features (worn blue and white floor tiles, peacock blue walls) with 1960’s white leather armchairs and glass and rosewood tables, while the lovely patio is flanked by a delightful, wooded garden. Normandy born chef, David Gallienne, who trained at the Manoir du Lys, continues to work with some of his former suppliers from Orne and Dieppe fishermen, whilst sourcing new ones. His inventive recipes feature unorthodox flavours and textures. The chef has opened a nearby guesthouse for overnight stays and a delicatessen in Vernon.

In the land of impressionism, this delicate cuisine, with precise and captivating touches, takes on its full meaning. David Gallienne is not only a conductor of great technical skill, but he brings a rare sensitivity, in the choice of sequences, in alloys as well as alliances. A setting in harmony with the environment, full of charm for a brilliant and bucolic plate, local or noble products, willingly marine: the beautiful langoustine yuzu celery and apple, tomato and lobster with an herb broth, beef and lobster eel, strawberries and rhubarb “like a pie”… The cellar, carefully maintained by Cyril Barthélémy, is varied and modern, strong in the Loire, staying away from the large estates and châteaux to remain within uncompromising prices , but measured.

At the beginning of June 2019, David Gallienne was contacted by the production of Top Chef who was looking for candidates. He passed the casting tests and learned that he was selected for the eleventh season on July 14, 2019 2 . He is the seventh chef already starred before the competition to participate in Top Chef after Cyrille Zen, Thibault Sombardier, Julien Machet, Nicolas Pourcheresse, Maximilen Dienst and Mathew Hegarty. However, none of his predecessors went higher than second place in the competition.
Filming for the competition begins on September 30, 2019. David Gallienne is retained in Hélène Darroze's brigade who coaches him throughout the competition. After a lackluster start to the competition, David won several victories as a team with Mallory Gabsi (children's event, sugar-free dessert, black box) and as an individual (signature dish of Stéphanie Le Quellec , gourmet pasta, pithiviers). After narrowly qualifying in the semi-final, he managed to qualify for the final where he won against Adrien Cachot . He believes that it was his more classic menu than that of his competitor which allowed him to win, a choice arousing criticism from some of the spectators, who had made Adrien his favorite for several weeks 21 , 22 .
