Caribbean style guitar

I keep hearing this exotic/caribbean style sounding guitar and I'm trying to identify the instrument to get a similar sound in logic pro. There is a great example of in Moodena & Sartorial - Got That Feeling.

There is a sweep from about 48 seconds. At the end of the sweep at about 56 seconds it comes in creating a relief for 2 bars, then again at 1 minute for two bars and repeat every 2 bars for a while. I think the dominant note is a b flat. It sounds like every two bars it slightly changes, but when i try to recreate the chord i always end up playing the same thing.

My main question is: what is that instrument. If anyone can shed some light on what the chords are too and how they are being using to make it sound like its going between two chords (surely it is?) that would be great!
