Most people have like work, school, relationships, or other responsibilities and are too busy to play catch up with the mcu. Only the biggest mcu super fans could enjoy keeping up with the movies and shows, and that’s fine if it makes them happy, but it’s going to lose the general audience’s interests fast. Especially when there’s other franchises out there competing for our attention. The superhero genre alone has a lot of other options. Fact is, most people don’t want to bother with homework before movie night.
You honestly summed up the difference between Hardcore MCU stans and General Audiences there, because not everyone really is in the mood to watch over three hours (the highest run time for an MCU movie) runtime of movies and shows just so that they can see a movie because they either felt like seeing a movie or wanted to see it with someone. Like, let's cite one example: No Way Home. You obviously gotta watch Civil War (Spidey's debut), Spiderman Homecoming, Avengers Infinity War, Avengers Endgame, Spiderman Far From Home and oh would you look at that, we got different Spidey's in this film, so let's add: Spiderman, Spiderman 2, Spiderman 3, The Amazing Spiderman and The Amazing Spiderman 2. That's a shit ton of homework to do for ONE movie, and I'm not even touching how much you gotta watch to understand Endgame according to this logic, and sure, it may be fun for MCU stans, but at that point, I'm seeing another movie.

A Comprehensive List of Viewing Prerequisites for Marvel Phase 4
Because I’ve seen complaints about how the MCU is now overcomplicated because of how many movies you need to watch to understand any new piece that comes out, I’m going to break down what is actually required for each movie or tv show. 
There are three levels:
Necessary-- This movie is a direct sequel to the one listed and/or the plot or character arcs will not fully make sense with knowledge of this movie
Helpful-   it borrows a secondary character but you can probably get by without their background; a specific plot point or character ties in but someone could explain it to you in a sentence or two and/or the movie itself gives you the pertinent details.
Bonus-  there are references or appearances that you won’t get if you haven’t watched these but they’re minor enough that you probably won’t even notice they’re there; or a character appears but the movie explains/introduces them well enough that you don’t need prior knowledge; or all references/appearances are constrained to credits scenes
Does not include She-Hulk or Wakanda Forever because I’m making this before they release.

With a few notable exceptions you really only NEED to have watched those properties that the movie/show is a direct sequel too. For those characters that have been around in the MCU a while that adds up. But it’s far from unreasonable to think that, for instances, the fourth Thor movie would expect you to have some knowledge of the previous Thor appearances. 
On the other hand, the movies/shows on here that are about NEW characters, truly don’t require that much MCU knowledge to dive in. Eternals vaguely mentions the Blip but a 3 sentence summary of Infinity War/Endgame would suffice. Ms. Marvel expects that you know the Avengers EXIST and that Carol Danvers is a powerful superhero but really nothing else AND the show sets the stage well enough that if you had never heard of the MCU and started watching the show, there’s enough context to know what’s going on. Moon Knight truly is only connected to the MCU by ONE offhand reference to a fictional Marvel country. 
So new characters are largely being made to stand on their own, and sequels are acting... like sequels. 
The two notable exceptions are No Way Home and Multiverse of Madness which have a much higher number of references. But both of these were billed as big event movies. They’re in no way the norm. (And really MoM requires much less prior knowledge than it would have you believe.) 
And honestly I’ve seen complaints in both directions-- the MCU is TOO interconnected and the MCU is really connected at all. But I don’t really give either side much credence because they’re doing a healthy mix of it. Some are tightly woven into a bunch of different threads. Some have a few carefully chosen connections. And some are pretty standalone, building their foundation before they start to weave their way in.

So I'm a newbie to everything marvel and I want to watch the movies and learn. What order would you recommend I watch the movies in?
Hi! Thankyou!! Ok boi!! This depends on how committed you are? Because there are something like 25 movies and then there's the shows, which are all split up into 4 phases. So if you want the full experience, and want to start from the beginning and watch them all then there are two options, release order and chronological order. It's personal preference for which way you choose but there really isn't much difference between the two. But the release order is as follows (under a cut because it's long)
Phase One:
Movies
1. Iron Man 1
2. The Incredible Hulk (you can skip this one, I've never seen it and no one cares about it)
3. Iron Man 2 
4. Thor 1
5. Captain America 1: The First Avenger
6. The Avengers 1
Phase Two:
7. Iron Man 3
8. Thor 2: The Dark World 
9. Captain America 2: The Winter Soldier
10. Guardians of the Galaxy 1
11. Avengers 2: Age of Ultron
12. Ant-Man 1
Phase Three:
13. Captain America 3: Civil War 
14. Doctor Strange 1
15. Guardians of the Galaxy 2 
16. Spider-Man 1: Homecoming
17. Thor 3: Ragnarok
18. Black Panther
19. Avengers 3: Infinity War
20. Ant-Man and the Wasp
21. Captain Marvel
22. Avengers 4: Endgame

Phase 4:

I would then the watch the shows, because you need to watch at least WandaVision and Loki before continuing with the Spiderman 3 and Dr Strange 2 movies which all deal with the multiverse.

5. Moon Knight (I haven't seen this one yet so don't know what happens in it or if it's necessary to watch)
Movies
27. Spider-Man 3: No Way Home

If you want to watch them in the in universe chronological order then watch Captain America 1: The first Avenger first, then watch Captain Marvel second, then continue with the above list, so instead of starting with Iron Man 1 it would now be third, The Incredible Hulk would be fourth ect. And watch Black Widow somewhere between Captain America 3: Civil War and Avengers 3: Infinity War. Also Black Panther takes place about 10 days after Cap 3: Civil War so you could move it up the list to directly after Cap 3, but it doesn't really matter what order you watch 14-18 in.

The first time I saw Deadpool was a few years back. I had taken mushrooms and thought the whole movie was the intro.
I thought that Spider-man's webs were part of him. But no, they're tech. Not my Spider-man. I can't think of Spider-man without organic webs. Also, I was scared to watch those movies as a kid cause of the whole "spider" thing.
