CHEF ILONA: Maple Candied Prosciutto & Avocado Club Sandwich

Ah, prosciutto, the sweet-and-salty, dry-cured ham that’s the shining star of every charcuterie spread. But this salty Italian, porcine pleasure can do much more than sit on a cheese board wrapped around a piece of melon.

Candied proscuitto produces the extreme, yet ethereal balance between salty and sweet and makes for asandwich you will not soon forget.

Prosciutto is a sweet, delicate ham. True prosciutto comes from Italy, but other versions are now produced elsewhere.

Other than this sandwich, my maple candied proscuitto tastes great on top of a salad or crumbled and sprinkled over some grilled peaches and balsamic reduction. I also enjoy is as a garnish for mac n’ cheese.

Maple Candied Prosciutto & Avocado Club Sandwich Created by: Chef Ilona Daniel Directions for 1 sandwich

Candied Prosciutto:

Lay sliced prosciutto onto a parchment lined cookie sheet (4 slices per sandwich). Drizzle with Maple syrup. Cover with another sheet of parchment and another cookie sheet on top; this keeps the prosciutto flat. Bake for 10 minutes at 375F. Meanwhile prepare the rest of the sandwich fillings

1 Brioche Bun, split, brushed with melted butter (garlic butter if you’re feeling fancy). Toast on the top cookie sheet where the prosciutto is baking in the oven for 4 minutes.

2 slices of Tomato

4-6 sliced red onion rings

3 slices of avocado

2 leaves of Boston Bibb Lettuce

Blue Cheese or your favourite type of cheese (smoked cheddar works awesome here)

Once the prosciutto is crisp, assemble the sandwich by layering the fillings onto the bottom bun. Top with top bun and enjoy.

Figured out a critical difference between the original video games I liked and the modern copycats that only annoyed me.

Harvest moon and virtual villagers where a couple of my favorite games as a kid and I always tried to play modern replications of those games like farmville or myisland or whatever but I always got sick and tired of them pretty quick without being able to express what exactly I didn't like about them.

It's the constant expansion in the new games that annoyed me. The destruction of the surrounding nature to make more farmland or develop more space for the village. As if the forest existed only as a placeholder of emptiness for eventual advancement. Every tree is a resource waiting to be logged down. You clear new land so you can build a new house/field so you can make more money so you can clear more land etc.

In the harvest moon family of games the whole premise is that you come into ownership of a neglected old farm with an established field that's full of junk and overgrowth. Money is used to fix the house or build structures only within the original homestead. Eventually you restore and manage everything within your bounds to utter perfection.

The point of virtual villagers, for me at least, was to grow as high a population as possible given the limited resources and space I had to work with. This wasn't just mindless growth since you had to educate the villagers in farming to grow food more efficiently, medicine to live longer, and other stuff.

In both of those you are restoring something old and neglected into being something prosperous once more.

I don't know whether these new games are a reflection of USA colonialism "nature is just empty space waiting to be developed" and neighbors somehow just don't exist, or capitalism's cancer-like endless growth for more profit, or if those old games just had limits to their functionality.

Either way, it's a bit funny that even tiny!me was an environmentalist and anticapitalist even when I didn't know what those words ment.
