The reason I believe Guillermo couldn't kill people when turning because he thought it was selfish and he had no way to justify it. He is perfectly fine killing for others because he CAN justify it. He can say he had to do it to feed his master, that he had to kill people to protect the vampires. The moment he has to kill for himself, to feed himself, to experience the life of a vampire, he can't do it. Guillermo is a giver, all he does is give to those around him, even when they take it for granted because that's all he's been allowed to do. Now he's been given a chance to be self-indulgent and he feels horrible because he doesn't know how to take for himself and can't comfortably justify killing for himself.
