When Noé first heard Vanitas call you his 'sister' he got very confused, you didn't look/seem related at all so why was Vanitas calling you sister, unless you really were related.

Noé knows of Vanitas' hatred for vampires so he tried to be a bit secretive about his relationship (which didn't work out) and he tried being as gentle as possible towards you, especially around Vanitas.

He might ask Vanitas if he could date you out of respect but if he doesn't allow you to and you still want to he will date you without Vanitas' permission, you are your own person after all.

After finding out you were dating or after Noé asked to date you Vanitas really didn't like the idea. He would frequently tell you not to get involved with vampires and you're here dating one! He would scold you for hours and tell you to break up or atleast be careful.

Vanitas does want you to be happy but not at the cost of your own life!

After finding out Vanitas tried to infiltrate the relationship and get you guys to split up Noé was pissed, understandably so.
