I decided to cook more. The goal is to take on new challenges, try new things, explore my limits, etc., all while remaining comfortably in my house. I enjoy cooking but have been lazy about it the past few years.
So, I made this over the weekend: subbed broccoli for snap peas (I'm not crazy about snap peas) and noodles for rice (love a noodle), kinda underestimated how much ginger to add, and tripled the soy sauce, and it was still freakin great!

I was watching a video by Jamie's Corner and she said to this woman, "you could try a cashew based cheese instead of dairy cheese."
and this woman said, "i have ADHD! i have executive dysfunction! I can barely feed myself as it is."
n im liike what kinda argument is this 😭 i have adhd too. its not an excuse to just shrug off a suggestion that would help animals. also im sure it would help her own body if shes lactose intolerant

Ahh it's real easy these days, you just use vegan cream cheese in place of dairy. Back in my day we had to do twice the amount of work to turn cream of coconut into a viable texture replacement but now there's a readily available vegan subsitute for everything

just pour some milk (a tall glass) and a bit of sweetened milk if u want, one banana, honey (or syrup if u prefer that) to sweeten and some vanilla extract, blend it until its all smooth and there u gooo
(i hate liquid and solid food mixed up so i cant stand chunks in my drink and like to blend until theres nothing JACJKBJK but i guess how smooth you want is up to you)
amount of honey is up to you and how sweet you want it

Dear Endless Expanse of Space,
I hate the way people act about people with different dietary preferences.
I love how prevalent veganism and vegetarianism have become, not because I follow either of those diets, but because as someone who's severely lactose intolerant I appreciate the wider and better quality range of dairy substitutes. And a lot of plant based meat substitutes can be great if you have stomach issues that make eating certain animal products difficult.
And yet I still had to worry every time I went to the coffee shop on my college campus that the barista was going to give me regular milk again because they assumed I was just vegan and it pissed them off. Being sick was horrible enough, I can't imagine also having to deal with the knowledge that you were tricked into consuming something you view as morally reprehensible at the same time (because surprise, if you don't consume animal products for an extended period of time, your body loses the ability to properly process them and resumed consumption can and will make you sick!)
And this whole "Haha, let's give this person the wrong thing because I think they're being stupid even though if I'm wrong it could actually harm them" thing isn't only limited to animal products. I've seen tons of TikToks of fast food workers who brag about giving "skinny bitches" regular soda instead of diet because they assumed they're dieting, completely ignoring the possibility of those people being diabetic, which is a condition that can have very serious repercussions if not managed properly. And there's plenty of people with celiac and gluten intolerances who nearly end up in the hospital because a restaurant worker assumed they were just following the fad diet and decided that they were just so put out by the idea of someone else's dietary preferences that they didn't take the proper precautions and nearly killed someone.
And while yes, there are plenty of people who follow these diets and are pushy/think everyone else needs to change their diet too (That Vegan Teacher), there are just as many (if not more) people who feel personally attacked because someone dares not feel comfortable eating steak or wants to call a plant substitute "vegan chicken".

you went to the london eprix last year right? how did monaco compare?
WELL my faves did better so on that level alone i had a better time :)
anyway - the big downside of both eprix is that the fan village is just... not great. it was slightly bigger in london due to the venue (and the entertainment was better, stan gracey) but in monaco it was just a packed bit of astroturf along the harbour with like, three food stalls, some charging points that did not work, and a small store. at one point between quali & the race they did a q&a with jev that, no joke, i would generously estimate to have lasted about 3 minutes
of course the good thing about monaco is you have basically the entire country to explore instead if you get bored at the fan village, whereas you can't really leave the excel arena once you're in (and the area around it is a big load of nothing anyway). however you do have to be prepared for a LOT of walking on race day because half the country is, well. the track. so there's a lot of detours in place. so getting between my grandstand at tabac and the fan village, which at my fast walking pace was probably a 5-10 min walk the rest of my stay, became a half hour trek. i didn't mind this because i like walking (except stairs as rach will tell you from my incessant moaning all trip) and it killed the time but if you're thinking of ever going to monaco i'd say that is THE thing to be aware of. also a lot of shops around the circuit are closed & the restaurants are all packed with reservations so be prepared to eat at stalls by your grandstand or bring snacks yourself!!
another random thing was at least in my grandstand (K1) i was pretty far from a screen. i could see the action just fine but i had no hope of following the timings or lap count - during quali i got around this by having the live timings up on my phone while watching but when the grandstands filled up for the race my wifi & 4G both tapped out entirely so i just got a lot of fun surprises re: the order every single time the cars came back round hahaha
in terms of the overall experience i'd say i preferred monaco outside of the fan village being worse - the track is obviously so iconic and it's a lot nicer to be in monaco than a convention centre in east london, and i think the racing was a lot more exciting this time round at least - but i had a great time at both and i'm really looking forward to going back to london in the summer :)

ironically i think discovering my lactose intolerance was one of the best things to ever happen to me. like yeah, milk hurts my tummy. whatever. but having to remove dairy from my diet has pushed me to try out so many new foods that i wouldn't have dared to touch if i could just stick to my three lactose full safe meals.
also vegan aisles at the supermarket are one of the best things to ever happen to humanity. i may not be vegan but i absolutely love the fake meat made out of veggies. some great stuff out there. making me rethink my entire diet.
