My favorite local mexican joint is closed for renovations, so I am making do. Also I need to find ways to use all this cilantro I'm growing. I used canned refried beans because it's a tuesday night and I refuse to exert myself, and because I am out of sour cream to thicken them with I stuck a big spoonful of the dill-ranch cucumber spread (which is what I used up the sour cream making) and tbh it's...super good??? I did not expect that to actually pan out.

Also no one is allowed to judge me for the number of limes. I love limes. I will literally squeeze a lime onto a taco and then eat it like I'm taking shots, with bites of lime between bites of taco. I will eat limes whole with little to no provocation.

#lime peels arent great so i wouldn't really recommend that tho #the beans are in a jar because I tend to put things directly into the container I will store them in #this is a one pan meal because I cook the meat with the onions peppers garlic and tomatoes in a pan #then dump that into some pyrex that it'll be stored in #and then cook the beans in the same pan #and dump that into a jar to store it #i cleaned out the bean residue from the pan with a shell and that was a delicious crunchy snack #and then brown the shells in the same pan #because i HATE dishes

Taco potatoes/ Spiced fried eggs and potatoes

Olive Oil in a pan let it get hot while you chop potatoes, tomatoes, and white onion. Add in your chopped potatoes I’d suggest letting them get brown while you’re chopping the veggies, toss the potatoes add in the tomato and onions, season with adobo, black pepper, sea salt, garlic powder, onion powder, cumin, chili powder, and paprika. And a squirt of tomato paste. Mix them around and let it cook! Make some pockets in the vegetables crack in some eggs, put a cover on the pan, let it cook! Congratulations now you have some egg fried potatoes thing, top with salsa or chili oil or hot sauce, whatever you like! It’s fine! Yes it tastes good!

Make it as dinner, a side, add in any meat or tofu do what you want with it, it’s your food. Don’t like runny yolk? Scramble the eggs, cook the yolk, don’t even have to use eggs.

this is so boring but probably flatbreads with various accompaniments 💥💥

one of my actual favourite meals is like curried chicken with salad on a flatbread and i often get some nice pre made flatbreads from a supermarket, but since theyre pretty quick to make i just make some and fry em in a pan sometimes.

flour, water, oil, with a bit of garlic power and melted butter in the pan when u fry, an it goes super well, i usually fill with salad and dry fried tikka spiced chicken, but sometimes i do it with a paprika/cumin based coating what goes really well if u put some mozzarella on the flatbread

#i loooove a flatbread #tesco has these taste the difference ones in a pack of two made with olive oil which are a tiny bit greasy but REALLY nice #i warm those up in a frying pan when ive dome the other stuff #im p sure youre from the uk so they probably have those if theres a tesco nearby #if u ever find urself looking for flatbreads for a meal those are some of the best ive found #ask
