Pinakbet Dish
Pinakbet is made from mixed vegetables sautéed in fish or shrimp sauce. The word is the contracted from the Ilokano word pinakebbet, meaning "shrunk" or "shriveled." The original Ilocano pinakbet uses bagoong of fermented monamon or other fish, for seasoning sauce, while further south, bagoong alamang is used. Pinakbet is a Filipino vegetable dish. It is composed of a variety of vegetables and it also has a protein component. I made use of lechon kawali or crispy deep-fried pork belly for this recipe. This recipe is a variation of the popular Pinakbet Ilocano.
Pinakbet (also called pakbet or pinak bet) is an indigenous Filipino dish from the northern regions of the Philippines. Pinakbet is made from mixed vegetables sautéed in fish or shrimp sauce.[1] The word is the contracted from the Ilokano word pinakebbet, meaning "shrunk" or "shriveled."[2] The original Ilocano pinakbet uses bagoong of fermented monamon or other fish, for seasoning sauce, while further south, bagoong alamang is used. The dish usually includes bitter melon (ampalaya).[3] Other vegetables used include eggplant, tomato, okra, string beans, chili peppers, parda, winged beans, and others. Root crops and some beans like camote, patani, kadios are optionally added. The young pod of marunggay is added. It is usually spiced with ginger, onions, or garlic. A Tagalog version typically includes calabaza (kalabasa).

nung bata ako, di talaga ako mahilig sa gulay. kalabasa, carrots at patatas lang kinakain ko noon. ayaw ko ng sitaw (til now medyo) kasi nakakangilo nga siya. unless overcooked na siya sa sinigang haha. pati kangkong naduduwal kasi ako dun dati. lalo naman okra, ever since natikman ko siya noon tas naramdaman ko yung parang mga balahibo niya, para akong natrauma at never ko na talaga ginusto kumain ng okra kahit sarap na sarap yung iba dun pag sinasawsaw sa bagoong. 
hindi rin ako kumakain ng talong noon, tortang talong oo, pero iniiwan ko yung part na puro talong haha. not until one time, i got drunk. tapos umuwi akong gutom na gutom, walang ibang ulam na naiwan sa bahay kundi pritong talong at bagoong—tinikman ko. para akong high na high na sarap na sarap sa talong non, simula noon kumakain na ako ng kahit anong luto ng talong. talong is life. char! haha. 
wala lang, naalala ko rin kasi, pakbet ni lola lang paborito ko noon na luto ng gulay. ayaw ko ng ibang pakbet sa lalo sa karinderya. naku, kung matitikman niyo lang ang pakbet ng lola ko noon, kahit hindi ka kumakain ng gulay mapapakain ka talaga. parang may magic. panggalatok kasi ang lola ko, kaya napakasarap niya magluto nito. pero lagi kong iniiwan yung ampalaya. 
ayaw ko nga kasi ng ampalaya. ang pait pait. paglaki ko nalang ako kumakn ng ampalaya dahil ayaw ko na maging choosy lalo pag walang ibang choice. tsaka tinuruan ako ni mommy, galing lang rin sa mga natutunan niya sa mga lola ko, kung paano bawasan yung pait. ngayong natuto na ako, paborito ko narin siya. 
iniisip ko kailangan ko matuto kumain ng gulay, kasi dun kila Joemar, halos puro gulay ang inuulam namin doon. napakain nga nila ako ng hindi masyado kilalang gulay dito sa Manila na meron doon. sa totoo lang, ayaw ko nun. pero ayaw ko naman mag inarte sakanila kaya napakain na ako. haha. as long as magata, okay ako. masarap naman, pero kung may ibang choice hindi ko iyon pipiliin. 
Ilokana nga pala ang mama ni Joemar kaya masarap din magluto. hindi ko pa ata natikman o nakitang nagpakbet si tita nung andun ako. nung pinaalam kasi namin na doon muna ako, ang sabi ng mama niya “okay lang basta hindi maarte sa ulam” haha. di naman ako masyadong maarte sa ulam, kumakain ako kung ano ihain sa mesa. ayun nagulat sila na kumakain pala ako ng talbos ng sayote—first time ko rin yun. tinikman ko lang kasi sinasawsaw nila sa bagoong. kaya nagustuhan ko narin. gusto ko rin lahat ng ginugulay ng mama niya. naaalala ko lola ko sakanya. ang sarap mag gulay. siguro kasi pareho silang taga norte. paborito ko rin yung ensaladang gulay ng mama niya. 
wala lang. gusto ko lang pag usapan ang gulay kasi nagluto ulit ako ng ginisang ampalaya, and now i can finally say na paborito ko narin ito. ang sarap ko narin magluto ng gulay—pero hindi ko pa natry mag pakbet. susubukan ko aralin sa susunod. hehe

Wow, Uzuki Under Night, a true and literal one-scene wonder 💖 One-line wonder, almost. My main thought about her is that her design is pretty sick, and I'm also excited for what she gets up to in the sequel X) I'm especially excited for her dynamics with the other Amnesia members. We know that she hates Hilda and makes Chaos uncomfortable, but I need more details. *holds a microphone up to her face* And what are her motives for being in Amnesia for the first place? Glimpse of Paradise: A Nature Filled Journey Through Pangasinan
It's our family's tradition to travel during the semester break every year, and last year was no different. Last year's trip, however, held a special place in my heart as it marked our return to travel after the pandemic came. Pangasinan was the chosen destination of my parents, and the trip was uneasy for me. We left Manila around 2 AM and stopped by a McDonald's around 6 AM to have breakfast. I don’t know about you, but hot chocolate on the road is top-notch! When we arrived at our first destination, the Manaoag Church, I was not that impressed because of the bustling crowd. The line to enter the church was longer than my patience, but stepping inside mesmerized me. The structure of the place, the sparkling decoration, and the presence of Our Lady of Manaoag left me speechless. After the mass, we continued our journey to our next destination. After driving for more-or-less 3 hours, we arrived at Bolinao Falls. To get a glimpse of the magnificent falls, we needed to take a not-so-long walk. I immediately changed into my swimming clothes when we reached the falls. The glistening water is pleasing to the eye. It was like staring at a thousand diamonds. We stayed for a while and had our lunch at Bolinao Falls. After long hours of enjoyment with the beauty of the falls, we went to the Airbnb we’d be staying at. The owner greeted us with a shiny smile and showed us the place. It was a pleasing two-story house with three rooms and a pleasant patio. The owner was kind enough to let us use the kitchenware in the house and even offered to buy our food from the market for us. For dinner, we had pakbet, prepared by the homeowner, and sinigang na bangus. The warm, sour soup was perfect to conclude the day. As the sun rose on the second day of our trip, my family wasted no time and went to the breathtaking Hundred Islands. It was the peak of our trip. The scenery of the islands is astonishing. We were lucky that a kayak was available when we got there. I was able to go round and round the glistening water with the kayak. The water is so clear, you can even see the bottom. It was the last stop of our trip. It was very tiring and enjoyable at the same time. When we arrived home, I realized how beautiful the Philippines is and how underappreciated our nature is. Two days is definitely not enough to appreciate the beauty of Pangasinan; however, it is safe to say that it was one of the best two days of my life.

December 4, 2023
Last day of my 2 day off. It sucks. Woke up with Ed not by my side because he knows he might wake me up. That's so considerate of him.
Ate the remaining cookies and shared one with Ed downstairs. He cooked some pakbet and it was so good because we had the real kalabasa and not the butternut squash that we have here. We're going to pack it for our lunch tomorrow. My GP called me and prescribed something for my constipation. I'll try it but it seems to me that I might not know what I was saying earlier. I'll ask for an investigation soon. My constipations is getting better but I sometimes have to strain because I feel it's incomplete when I poo sometimes. That's what I hate. Maybe it's my diet or what but I'm not really happy with it.
Spent the day just being lazy and watching reels and drowning in the algorithm. That's what lazy days are meant for isn't it? I saw that I have a bank shift on Saturday and it's an IPP list. My very first one. I'm going to do it because it'll pay me more than a regular day. I'm so glad I was booked by Sam. I'll have extra dough to save up for my US trip.
Today's been so lazy but that's fine. I skipped gym today because my body can't handle lifting today. I'll go early tomorrow since I'm on a late shift and would have the chance to workout.
