Scallops With Daylily Shoots and Blooms Tiny’s favorite place to nap was in the afternoon sun, by the daylilies. I will never see daylilies and not think of him. They are coming up now, and with a knife I gathered shoots. I am aware that spring’s jellies, jams, syrups, and dried blooms will soon be made, so hesitate not in the now more generous use of last year’s stores. I made a little rice and set it aside. In a skillet I added onion, garlic, chopped daylily shoots, a little broth so it wouldn’t burn, last year’s dried daylily blooms, and scallops. With the lid on, a rich broth formed as it all cooked... Once done, I stirred in some rice and a dash of lemon, spooned it into a bowl, then finished the scallops in the now-dry pan. Over it all I tossed wild violet, viola and speedwell blooms. Each year I remind people not to confuse edible hemerocallis fulva with toxic lilies; consider this your annual warning. Daylilies are eaten to detox and help insomnia. They contain protein, calcium, and potassium, and the blooms are high in beta carotene and vitamin C. The shoots are delicious raw or cooked, and taste a bit like asparagus with leek. Wild violet blossoms are a lymphagogue, aiding lymph glands and congestion, and reduces inflammation. Last night Becky and I made real Chicago style deep dish pizza! And it was soooooo good! That good Chicago pie was one of the top reasons on the, “Stay in Chicago” side of my lost when I was trying to decide if I should move to L.A.. I realized it’s been more than a decade since I’ve had one. And I’m really happy with how it turned out!! For this we has homemade crust, sausage, caramelized onions, lots of fresh garlic, spinach, tomato basil sauce, fresh Parmesan, and great big slabs of good mozzarella! Makes me want to grab a cheap glass of Old Style beer and go catch a Cubs game! Also, fun fact. Frosty Collards MuChim Stew I’ll say it again: I just love greens. I think I enjoy non-summer vegetables even more than cucumbers, squash, MAYBE even tomatoes. I don’t really pick collards until after a frost or two, but with this week’s hard frosts, it’s open season on collards. I wanted Korean, and Koreans don’t cook with collards, but we’ll just keep that to ourselves. First I sliced collards and simmered them with garlic, some hot peppers, some miso (I had no doenjang), a dash of vinegar, and broth. I always always always have miso on my pantry list, it takes up no fridge or freezer storage and adds so much to broth! In a pan with sesame oil I sauteed a bunch of garlic, onions, hot peppers, chicken thighs... This should be cooked with a little water in the beginning so everything softens, as the chicken is cooked it’s easy to pull it apart into smaller pieces, then finish by dousing it with gochujang. Don’t get intimidated by goghujang, y’all. While there’s no miso equivalent I can recollect in the south, goghujang is just Korean for sweet salty tangy spicy potent concentrated BBQ sauce! If you think goghujang is hard to say, try saying sweet salty tangy spicy potent concentrated BBQ sauce fast, and three times! Any southerner *I* know can whip up barbeque sauce. But for goghujang you *will* need miso. Blend miso, maple syrup, chili flakes / fave hot sauces, coconut aminos, and garlic. If you don’t use the aminos you can stir in tamari or soy sauce. Super easy. Now everything in the pan is done and about to crisp, so drizzle a bunch of that goghujang over, stir it around, let it get all gooey and crisping… Ladle the collards and broth into a bowl, top with the chicken vegetable bbq mix… sprinkle over toasted sesame seeds. It’s in the 20s, and this stew will heat you up! It is, admittedly, not very pretty, but I made Mole Enchiladas tonight, and they were extremely tasty! I filled corn tortillas with a mixture of baked chicken that was marinated overnight, spinach, corn, caramelized onions, goat cheese and Emmental cheese. Then I topped those with Cabot Hunter Sharp Cheddar.
