Day 25: Wednesday January 25, 2023 - “Portland Day”
Took some time away from the conference today to be sure to experience some of my old local favorites in Portland.  
At Powell’s City of Books I ventured the aisles and the different colored rooms to find a big haul of self help, fiction, parenting, memoirs, and baby books.  It was an accomplished grin when my total came out to triple digits.  Good haul.  I spent some time in there at a coffee shop catching up on my homework and enjoying an awesome cinnamon bun.  Why would I have thought to catch up on work anywhere but here?  I first came to this massive book store in 2010, before the Photo Blog even existed and got an old worn out, now cherished copy of On The Road and every time Ive come back, its never disappointed.  Could I have gotten these books on Amazon and not had to lug them all back to the Pueblo?  Sure!  But the connection to a place, a place like this, is worth the effort.  “I got this one at Powell’s in Portland - ever heard of it?”  It was neat too, later in the day, Id get an honorary addition with the UofIdaho team got me a special copy of Hemingway with a nice note in it to add to the pile.  After my heart!
For lunch, I walked the streets to find the oldest establishment in the place.  I think it was a recommendation from River Horse and Heat Moon the first time Audrie and I came here the day after thanksgiving that year, to get their everyday service of the traditional Thanksgiving Dinner.  Though I had to go back to work for one more meeting, I splurged and got the Spanish Coffee which the bar keep expertly sprung together, well practiced many times for just this moment, when he poured the coffee into my small glass as the alcohol burned.  What a treat.   A Portland special.  I suppose I wasn’t as dry as I wanted to be on this trip - but I give myself grace and begin again tomorrow.
Finally, I had to find me a smoker’s lounge here for a smoke I could enjoy since they’ve been so hard to come by with the upticked pace of parenthood these last few months.  I sat in a comfy sofa with two other Tucsonians telling good stories about whats brought us here to the Great Pacific Northwest and I appreciated the opportunity for low pressure socializing.  It was a great Brazilian smoke and a great atmosphere and I told the young man Id be back (next time im in PDX).  He was happy to have me.
Finished the night at authentic Italian restaurant with the whole Symp team including our CEO where we enjoyed good wine, some shop talk, and great food as we shut the place down and said good bye to each other until next year, when we return, and no doubt I’ll have a day that looks almost exactly like this one...because as I get older and I come back around to cities that I have loved, I am more interested in enjoying those favorites than trying something new.

Whether exploring a new city, indulging in local cuisine, or simply relaxing and rejuvenating, there are numerous ways to make the most of that extended wait between flights.   Layovers, an inevitable part of many international flights, are built-in breaks between connecting flights. They can result from airline routing, budgetary considerations, or the unavailability of direct flights. Historically, layovers were seen as inconvenient pauses, causing interruptions in the rhythm of travel. But with the modernization of airports, growth in amenities, and easier access to city centers, they are increasingly being viewed as opportunities. Many travelers even intentionally opt for long layovers to squeeze in a mini-vacation or break the monotony of extended flights. Explore the City One of the most fulfilling ways to use a long layover is exiting the airport and exploring the city. Many major airports are well-connected to the city center by fast public transportation, making it feasible for travelers to get a taste of the locale. Before beginning your mini-adventure, ensure you know the country’s visa requirements. Some cities even offer free transit tours for travelers with long layovers. For instance, if you’re at Incheon Airport in Seoul, you can sign up for a free transit tour, which ranges from a quick city tour to a visit to historical palaces. Pack a small day bag with essentials and leave your luggage in airport storage. Remember to factor in the time you’ll need to return, clear security, and board your next flight. Pamper Yourself  Airports, especially the larger ones, have transformed into mini-cities offering many services. For those not keen on venturing out, consider indulging in some self-care. Many airports boast spa services where travelers can get a massage, facial, or refreshing shower. Lounge access is another luxurious option. While traditionally reserved for first or business-class travelers, many lounges now allow free entry. These spaces provide comfortable seating, complimentary food and drinks, Wi-Fi, and sometimes even sleeping pods. If shopping is therapeutic for you, explore the duty-free shops. From high-end brands to local souvenirs, various shopping options are available. Engage in Leisure and Learning Long layovers are the perfect opportunity to catch up on reading, watch that movie you’ve missed, or even learn about the place you’re in. Some airports, like Singapore’s Changi, have movie theaters showing films for free. Others, like Portland’s PDX, offer local art exhibits and mini-museums. Consider downloading a language app and picking up some basic phrases from the country you’re visiting. Alternatively, pen down your travel experiences in a journal or blog. For those traveling with kids, many airports have play areas designed to keep children entertained and active. While long layovers might seem like tedious pauses in a journey, they hold the potential to be experienced in their own right. Whether you’re an intrepid explorer, a leisure seeker, or someone looking to learn and engage, there are myriad ways to make these hours count. The key lies in shifting one’s perspective from viewing layovers as delays to seeing them as opportunities. Homelessness In Portland
We must help the homeless off the cold wet streets of portland PDX, in any way we can.
We have to provide food and shelter for the homeless, and oppose racial discrimination and promote civil rights, while also promoting equal rights for women. We have to encourage a return to traditional moral values. Most importantly, we have to promote general social concern and less materialism in young people.
I may not be homeless, but I see the homeless every day. I see tents everywhere. There is clearly a problem that needs help.
The homeless cover a portion of every street every road every sidewalk in downtown portland. as these people suffer the terrible rain and cold of portland winters the homeless crisis becomes even more rampant in 2022.
Homelessness has decreased by 17% for individual adults, and a 27% reduction for people experiencing homeless for more than 1 to two years. However, this years point in time count found a 48% increase in the number of unsheltered African Americans from two years ago. Supplemental data indicates that levels of homelessness have increased in these communities, including, Native Americans, Latinos, and Asians. Nearly 400 children are homeless, the number of adult women experiencing homelessness has increased by 15%. the number of homeless people over the age of 55 have increased by 23% from 2013 to 2015. 57% of homeless are disabled.
During the ice and rain of winter 2021, plagued by pandemic and the new omicron varient of COVID19, and with an increased murder rate of 348%, indeed the homeless have suffered. My cousin is homeless and I havent seen her in years, we work to help the homeless because they could be our loved ones! They could be a neighbor, a neighbors child, they could be suffering from alcohol or drugs or other mental health problems. How can we help?

we need more organizations creating jobs dedicated to helping the homeless! an example of an organization creating jobs that are dedicated to helping this homelessness crisis, and all of the portland homeless peoples, we need more non profit organizations like central city coffee located in downtown portland, its a nonprofit organization, and most of their trainees come from a background of homelessness, substance use, and they get donations of coffee beans that they roast to sell at stores like new seasons, and proceeds give jobs to the homeless. Central city seeks to give women with a background of homelessness and substance abuse with a background in the criminal justice system many of them are single moms and they are working to rebuild their lives after facing homelessness. with the help of central city all kinds of people are off the streets on the track to a brighter tomorrow. Wouldn't it be great if more organizations like this were created?

Greek Salad Buffet
If you’re having a group of friends over but want to serve lighter fare accommodating their food allergies and taste preferences think about setting up a Greek salad buffet.  Try adding some Middle Eastern sides such as babaganoush, hummus, stuffed grape leaves, tabbouleh...all dishes you can pick up at your local grocer’s prepackaged deli section.  This idea works well if you don’t have the time or feel confident in your cooking for a group abilities. Just set out generous bowls filled with the following salad fixings for folks to pick and choose their favorites from.  It will go over well...
romaine greens, chopped  
red onion, diced
ripe tomatoes, diced
bell peppers, green or orange, diced
Kalamata olives, pitted, whole
feta cheese, crumbled
marinated artichoke hearts, quartered then halved, reserve liquid
oil and vinegar or marinated artichoke liquid as dressing
Set out each salad ingredient along with the prepared sides.  Maybe have a selection of dippers such as large radish slices or zucchini rounds.  What about melon for dessert...  Your guests will be pleasantly surprised at your thoughtfulness and you will be pleased at the high impact with lower effort on your part for this gathering of friends - nice.  Maybe set out a soft flatbread - maybe in the bakery dept. or frozen case.

Twister.
What a weekend. I wish you all could know the first-world-but-very-real struggles I’ve just endured for you. Well I mean, it’s kinda for me too, but it’s mostly just so I can show off for you.
I’m of course talking about my attempt to make   donuts     Natalie Portman fall in love with me  croissants. Some might believe this to be a simple task, but I can assure you that despite its [relative] simplicity, impeccable accuracy doing said simplicity is key to having any kind of success. It’s not like making regular bread; you need to form a pastry that is buttery, light, and above all, flaky. I’m talking like, “college BFF / sorority big” flaky.

This is not an easy task. It’s a four-quarter game, and there are a lot of steps that need to happen correctly for this to work, which means there’s plenty of room for error. Only through patience, meticulous deal and proper execution can you impress your friends at the next dinner party. (And some posh table wine would probably help too.)
The first step is doing the proper prep work: having a chilled butter-flour block to work with, and having a good dough made with the proper kind of flour (side note: if your roommates tell you that the brown flour is all-purpose even though you’re pretty sure it’s wheat flour, you’re probably right).
The second step is keeping your ingredients cold as you work with them, which means having the restraint to stop working if they get too warm and put them back in the refrigerator for a half-hour or so. You’ll be ill-pressed to rush the process of making croissants. This is not a “hmm, maybe I’ll make this today” sort of thing...more like a “hmm, maybe I’ll make this a decade from now” sort of thing.

Oh, and you’re probably gonna want to start climbing. You’ll need the kind of forearm muscles that only climbing can give you, because there will be a lot of folding & rolling dough. Practicing some minor surgery won’t hurt either - that way you can measure precisely and handle a small knife easily to cut loose edges. Forming nice rectangles is a theme to working with croissant dough.
If you make it through the second-quarter madness of single turns and chilling dough repeatedly, then you get a 4-hour halftime break of letting the dough settle in the fridge. Get a good nap in, because the next part is gonna get serious. Some brief calisthenics after the nap wouldn’t hurt either.

Now THOSE are the calves of someone who’s ready to make a good puff pastry.
The shaping of the croissants is the denouement of this saga. It will take the average person quite some time to cut and roll them, but apparently there are people that can make them so fast that Gordon Ramsay can’t even keep up. Honestly, what sort of hope does that leave us mere mortals? Not much, but you can try. And honestly, the shape isn’t your main concern - it’s the texture - so just give it the ole college try. Remember that you’re on a clock - this dough is best worked with cold - not cool, but cold. I’m talking “ex-girlfriend” cold.

You asked for it.
Now comes the final act. Cover your creations with a towel, and watch them make like the Dark Knight and rise. After about 90 minutes, you’ll want to preheat the oven...but don’t you DARE put them in yet. You’re forgetting arguably the most important step to ensuring your texture is spot on.

THE EGG WARSH
A quick glaze of egg wash is key to making sure the top of your croissants brown and easily flake off the top. If you knew this already, good for you, but I don’t give extra credit for being a know-it-all.
Now, you get to see if all your hard work paid off...in exactly 20-25 minutes at 375 degrees Fahrenheit.

Rather, WHO I will see.
My first attempt at making these bad boys was a solid effort. I followed the recipe as best as I could, but I ultimately used the wrong type of flour (cough cough roommates), and was also not ready for the challenge of whole wheat croissants...not to mention, what kind of psycho actually wants whole wheat croissants? Despite knowing about this mistake halfway through, I decided to see it through to the end, baking [and even eating] them.

Though this ship was ultimately doomed to sink, it was a beautiful one.
As you can see in the image above, my croissants actually looked pretty good. But after baking, they did not hold their shape, and the center was underdone while the outside was overdone. And although they tasted alright, they were quite dense. Some of this could be attributed to the flour, but I bet a lot of it was just my general inexperience. But, I am working on a second batch as we speak, which will hopefully yield Instagram-worthy results.

All in all, for a first official attempt at baking, this was a pretty tough technical challenge. I’ve learned that croissants are very under-appreciated, and are an intense time investment that need the utmost attention to pull off. I had a good time making them, and suffered a great first failure which allowed me to learn quickly and give me the motivation to try again.
The best part of all this? If I plan things far enough ahead in time, I can drop this line at the end of a third date:
“I can drive you home now if you’re ready. But before we go, I thought you should know: in the morning, I’m making croissants...
...from scratch.”

Although Bird & Branch has closed its doors in NYC to patrons, they’re still baking up a storm in the café for health-care workers. Thanks to financial donations from dedicated clientele, the team has been able to deliver hundreds of goodies to hospital workers across the New York metropolitan area. “The owners [Brandon and Faith Lee] realized the shop did no good by being open so they temporarily closed it,” says Mary Wolmart, assistant manager at Bird & Branch. “There isn’t much coffee can do directly during this time and many are suffering. But thankfully we’ve been able to find a small way to bring some good by providing joy to people.”
When you go on the café’s official website, you have the opportunity to purchase a coffee-breakfast kit for a health-care worker or even a care package for a friend in need within the United States. “The number of messages we get from the recipients is numerous!” Mary says. “Of course we’re still a small shop with three people doing a lot of work so it isn’t a huge number, but we know these care packages are having an emotional impact.”

Meal Delivery by Stone Soup PDX, Water Avenue Coffee and Portland, Ore.-area- restaurants
Stone Soup is a nonprofit organization that provides culinary training and life skills to individuals experiencing barriers to employment. While these operations have been put on hold due to the pandemic, Stone Soup has switched into food prep mode, with help from several other restaurateurs in the Portland area. In partnership with Multnomah County, these groups have been working to prepare take-away meals for people experiencing homelessness, and Water Avenue Coffee is the official beverage provider. “We are VERY THANKFUL to these food and beverage providers for their continuous hard work in helping keep the guests at the county shelters nourished with balanced and healthy meals,” says the team at Stone Soup. “We are also thankful to Multnomah County who is playing a key role in keeping these restaurants operational during this difficult time.” According to Water Avenue co-owner Matt Milletto, Stone Soup and company have provided about 9,000 meals and beverages per week! Melitta USA and GoFundBean Partner to Support Baristas in Need
GoFundBean has been one of the first initiatives to support baristas when they began getting laid off during the pandemic. Recently, manual coffee brewer manufacturers Melitta USA stepped in to join the cause, and 100% of pourover equipment sales from their website goes directly to GoFundBean through the end of June. The natural shift from café coffee to home brewing has been enormous, and with the help from these sales, consumers who haven’t seen these virtual tipjars will still end up supporting their baristas after all! “We’re incredibly grateful for GoFundBean and other organizations that are stepping in to provide assistance to an integral part of the coffee community that is experiencing significant impact from COVID-19,” says Chris Hillman, vice president of marketing at Melitta USA. “It’s great to see the industry banding together to help those in need, and Melitta is proud to be a part of that effort.” To grab a cone yourself, check out the online store, or submit a café to GoFundBean for it to be added to their donations list.

The Producer Relief Fund by Sustainable Harvest
COVID-19-related threats to the production chain have been slowly unfolding in several ways, and among the people who are most affected are coffee producers. One way that coffee importer Sustainable Harvest has seen farmers affected is the lack of food security for them and their families. Therefore, the company established a producer relief fund, in which they have contributed $156,000 to cooperatives that are coordinating assistance to their producers based on each community’s specific needs. In addition to this, Sustainable Harvest has started a GoFundMe for what they call “farmer relief kits,” which include essential supplies like nonperishable foods, protective equipment, and sanitation supplies—things that are currently harder to access with road closures, lockdowns, and enforced closures. Upstate Coffee Collective
The Saratoga Springs, N.Y.-based coffee club was getting ready to gear up for their March Meetup group when things took a left turn, with all future meetings canceled indefinitely. After getting permission from their community to donate their monthly club funds to virtual tipjars, the gang had a moment of clarity upon realizing that the initially planned $100 wasn’t going to be nearly enough to cover their fellow baristas. Therefore, they gave their entirety of funds, $560, to six different local tipjars. “We could not be a Coffee Collective without a functioning coffee industry, and your generosity in keeping our Meetups moving has gone towards lessening an already heavy blow to the industry (and the world),” says the Upstate Coffee Collective in their COVID-19 response blog post. “We may be starting from zero again, but so are many others and we hope our (Collective) small act of generosity inspires others.” In the meantime, you can check out the weekly podcast they’ve been doing to keep their community connected, or their new coffee retail series called Highlight Roasts.
