He comido muy bien en @restaurantebaoli, que está afinando todos los detalles. A pesar de sólo tener una hora, han cumplido y el servicio ha sido excelente. Es eficaz y elegante, aunque yo le quitaría los guantes negros de cocina y los pondría blancos, como deben ser. O simplemente los evitaría. Los pequeños bocados de bogavante con caviar, de waygu envuelto en mil hilos y de foie con trufa negra son excelentes y opulentos si bien hoy, tanto la trufa como el caviar, casi brillaban por su ausencia. Espero que haya sido mala suerte o escasez ocasional porque…o se ponen o no se ponen. Esta nueva moda de ingredientes de lujo (casi nunca necesarios) para encarecer los platos solo se justifica si mejoran y si se notan. Poner las cantidades que se ven en las fotos, pues ya me dirán… El pato pequinés es antológico. Solo por él vale la pena la visita. Y muchas vueltas. Volvemos a la elegancia de poner solo la piel en las obleas, olvidado esa moda (tacaña) de añadir la carne también. No obstante, esta se aprovecha en un delicioso salteado de verduras. La salsa Hoisin es perfecta y el pato un manjar. Lo hemos tomado con un arroz que es un mil delicias. Como postre, ya no pido otro, les recomiendo la tarta de queso que hacen al modo de una crocante pastella de muchas capas. Tanbien estupendo el flan chino. 元宵节快乐 Happy Lantern Festival aka The Fifteenth Day of the Lunar New Year which marks the last day of new year celebrations for the Year of the Rabbit 🐇✨🏮 // had Lunar New Year celebrations here at Jade Court, Cottesloe twice and pre-ordered their Peking Duck (aud85 with two courses: pancakes and San Choy Bao) and five spicy quails ($12.50/quail). Also ordered the Hong Kong egg noodles (aud23.90). Love the Peking duck here and how there’s a bit of meat with the skin. Also best San Choy Bao in town imo. Quails were very crispy with tender meat. Some parts of the quail were heavily seasoned. Happy National Peking Duck Day! The history of the roast duck can be traced back to the Ming Dynasty, which is about 600 years ago. Cooks from all over China traveled to the Forbidden City and wanted to cook for the Emperor because only the best chefs could enter the palace kitchens.   It was in these kitchens where dishes of exceptional quality such as the Peking Duck was first created and crafted to perfection by palace chefs.   When the Qing Dynasty ended in 1911, the chefs who left the Forbidden City worked in restaurants around Beijing and brought the Peking Duck to all people. The meticulous preparation of the Peking Duck includes a rather interesting step, where air is pumped into the duck so as to separate the skin from the fat.
