Pét-nats are sparkling wines made with minimal intervention from the winemaker during production. It is a technique that predates the so-called “traditional method” used in Champagne (and for most other sparkling wines). Rather than induce a second fermentation in the bottle to create the bubbles, makers of pét-nat simply bottle the wine before the initial fermentation has ended. The result is softly fizzy, sometimes lightly sweet from residual grape sugars, usually hazy with unfiltered yeast particles, and typically sealed with a crown cap instead of a cork.
There are no added sugars in pet nat making it a healthier alternative to Prosecco.
It’s not everyday you stumble across a natural sparkling Merlot. Ripe red-fruited, herbal and spicy pet nat with a long round, fresh finish. Surprisingly herbaceous and balanced. A great aperitif to get the tastebuds tingling.
My thoughts on Pet-Nat exactly. Riddle and disgorge. Your cider deserves it.
In the C19th André Jullien noted: “Thoroughly clear wine cannot be obtained unless a certain quantity is left with the lees. This is low wine and its value is halved; and often given to the workers.”
Glorious Muscat–there’s no mistaking it for its explosive tropical fruit nose. And here, it juxtaposes the sharp bite of sparkle with delicate aplomb. A tasty drop with copious sprite and acid. Lovely in all ways. Clean and direct, sweet in the right spots–austere in others. I keep telling myself the pet-nat craze is over, and these just get better and better.

but i do have a question why you decided for "ya rouhi" instead of just "rouhi" (my soul)...in Arabic, adding "ya" is sort of like a feeling of astonishment so it translates to more like "oh" so ya rouhi would be "oh my soul"
We actually used a lovely translator to help us with the nickname, and she suggested this one (along with qalbi!).
The 'ya rouhi' one just really seemed to flow and suit N, and it was the one I originally liked from the beginning.
Though obviously I didn't know about the 'oh' part, lol! Hopefully that doesn't bring you out of immersion too much.
Nary a rosé tint to it, just a breath of rosiness inside deep straw. This is a calm, even pet-nat, not plagued by explosive frizze or harsh spritz: a muted *phitzz* on opening and fine layer of foam upon pour.
