I'm writing a series of articles about the most important ingredients in Jewish culinary history, and the little raisin turns out to be a biggie in the cuisines of Eastern and Western European Jews as well as those from the Middle East and elsewhere in the Jewish Diaspora.
To accompany the article, I came up with a simplified version of Claudia Roden's Tagliatelle Frisanal (with chicken, raisins, and pignolis), which originated in the Venetian Ghetto. (It's in her wonderful book "The Book of Jewish Food.") It's a dish I've riffed on a million times, especially when I have leftover rotisserie chicken in the fridge, because I almost always have raisins and pine nuts (or slivered almonds) lying around. The version in the Forward is particularly easy to make, and delicious in a comforting and slightly surprising way. That toasted-nut-and-raisin combo makes a very simple sauce sublime. NEW RECIPE! Mediterranean Chili Fries Serves 4 Ingredients: 1 lb ground lamb ½ Melissa's Hatch Sweet Onion, chopped 25.8 oz jar Heka Saucery Egyptian Tomato Sauce 2 tsp black pepper 3 tsp dark chili powder 9 oz package Melissa's Peeled & Steamed Chickpeas, drained 9 oz package Melissa's Steamed Lentils 2 tsp kosher salt 1½ lb bag Melissa's Baby Dutch Yellow Potatoes, cut into 8 wedges per potato, divided 4 oz feta cheese, divided ½ cup Melissa's Pine Nuts, divided ¼ cup parsley, chopped 1 roma tomato, chopped Directions: 1. Preheat deep fryer to 375°F. 2. In a medium sauce pan on medium heat, brown ground lamb. Add onion and stir into lamb. Cover and cook for 5 minutes. Add tomato sauce, salt, pepper, and chili powder. Cover and cook for 10 minutes. Add chickpeas and lentils. Cover and cook for 5 minutes. Adjust seasoning to taste and turn off heat. 3. When fryer is up to temperature, fry potato wedges for 3-5 minutes until golden brown. Remove from fryer and season with a sprinkle of kosher salt. 4. Place potato wedges in a circular, flower petal pattern around the edge of medium size plate. Place about 1 cup chili in the middle of the plate. Garnish the outer edge of the chili with 2 tablespoons of pine nuts. Sprinkle 1 ounce of feta cheese, 1 tablespoon of parsley, and ¼ of chopped tomato on top of chili.
