One of the pastas that I’ve been intrigued by in Missy Robbins’s Pasta is her pink peppercorn and Parmigiano-Reggiano pasta, but I decided to add some citrus to it because I had a bag of Cara Cara oranges that needed some use. 
Pink peppercorns are an interesting ingredient--they are far more delicate than their black counterparts, and they bring in a much different flavor profile versus black peppercorns, but it’s one I want to play with. The original recipe is kind of a cacio e pepe variation with Parmigiano-Reggiano cheese and the pink peppercorns, while I was playing up the pink concept with the Cara Cara oranges. Unlike blood oranges, you don’t really get any color in the juice, so it didn’t end up as pink as I initially thought, but the final dish was still really good.

Manuka Honey and Gin Cured Salmon

This beautifully pink Manuka Honey and Gin Cured Salmon, excellent as a Christmas Day entrée or as a Christmas Eve main, is well worth the effot it took filleting it from a five-kilo whole fish! Happy Christmas, friends!
Ingredients (serves six to a dozen):
2 heaped teaspoons good quality Manuka Honey
4 tablespoons good quality London Dry Gin
3 cups coarse sea salt
3 cups caster sugar
1 tablespoon pink peppercorns
1 teaspoon freshly cracked black pepper
half a large salmon (about 900 grams/2 pounds), filleted
In a small bowl, combine Manuka Honey and Gin, stirring until honey is completely dissolved. Set aside.
In a large bowl, combine coarse sea salt and caster sugar. Crush pink peppercorns, and add them to the bowl, along with the black pepper, stirring well to mix. Set aside
Unwrap a large portion of cling film, without cutting it. Arrange about a third of the salt and sugar mixture onto it, and sit salmon halve, skin-side down firmly onto it. Drizzle generously with Manuka Honey and Gin mixture.  Top with remaining two thrids of the curing mixture, fold cling film over and wrap tightly. Place in the refrigerator for at least 24 hours.
Remove cure, and wash salmon under cold water. It now has taken a deeper pink hue, and the flesh is harder to the the touch. Pat salmon dry with paper towels.
Remove Manuka Honey and Gin Cured Salmon from the refrigerator, about half an hour before serving, with Baby Carrots and Garden Beetroots, and a chilled dry white wine, like a Waiheke Island Pinot Gris or a Sèvre et Maine Muscadet sur Lie.

served cold on toast with ricotta, flaky sea salt, and dried oregano. also works on crackers or crostinis, and tastes great with gravlax.
these are weird because they're so perfect and refreshing for the hottest days of late summer to cool you off, but also for the bone-chilling midwinter temperatures of minnesota's january and february, when your nose hairs freeze on a sunny, -10° day after a fresh snow.

I barely tasted any pepper, and I’m not normally about cherry, but this was darkly sweet and slightly tart and I very much enjoyed it!

I’m pretty excited with this pasta dish: linguini with pancetta, pecorino cheese, and pink peppercorns. It’s not cacio e pepe, but it’s inspired by some of the ingredients you find in both that dish and pasta alla gricia (though, to be clear, the original version of that dish uses guanciale and not pancetta). It’s been a comforting dish to dive into for lunchtime leftovers all week--look for the recipe soon.

Gravadöring (Cured Trout)

My little Midsommar celebration might be a solitary affair (this year!), but I’m still enjoying my favourite Swedish treats, like this beautifully pink and delicately tasty Gravadöring!
Ingredients (a small fillet):
1/3 cup coarse sea salt
1/3 cup caster sugar
1 teaspoon pink peppercorns
4 sprigs Garden Dill
1 (130-gram/4.5-ounce) fresh trout fillet
In a small bowl, combine coarse sea salt and caster sugar, stirring well to mix.
Roughly crush pink peppercorns with a pestle in a mortar, and stir into the salt and sugar mixture.
Finally, finely chop Garden Dill, and stir into the mixture as well, until well-combined.
Unwrap a large portion of cling film, without cutting it. Arrange about a third of the dill salt and sugar mixture onto it, and sit trout fillet halve, skin-side down firmly onto it. Top with remaining two thrids of the Dill curing mixture, fold cling film over and wrap tightly. Place in the refrigerator for at least 24 hours, up to 48 hours.
The next day, remove cure, and wash trout fillet under cold water. It now has taken a deeper pink hue, and the flesh is harder to the the touch. Pat trout dry with paper towels.
Serve Gravadöring with Senap och Dillsås, and Rye Bread or toasted Brioche and a glass of Citron och Dillsnaps!
