Castletown Café Episode 22: Gamer’s Delight
Tumblr media
Berdly, the annoying bluebird, wants to work with Queen, the main antagonist of Chapter 2. Understandably, Queen can’t stand him, and runs or hides whenever she hears him approach. One of Berdly’s attempts to get her attention is to tempt her with some pie that he calls a “Gamer’s Delight”, which shares the same sprite as Queen’s Battery Acid Pie that she offers to Noelle. Berdly claims to have baked it himself, but did he really just steal a battery acid pie and claimed it was a “Gamer’s Delight”? We may never know. Another thing we may never know is what a Gamer’s Delight even is.
Many fans believe a Gamer’s Delight would be a pie flavored like Mountain Dew and Doritos. Yuck! Or even include those as ingredients: Dorito chip crust with Mountain Dew filling. Personally, it sounds very unappetizing to me, so I took a different approach and made a different kind of pie: pizza!
I’ve heard it said that pizza is the ultimate gamer food. Or at least it was before Mountain Dew and Doritos took over. But those are just snacks! Why not have a pizza loaded with fresh, nutritious toppings? Caramelized red onion, bell pepper, spinach...okay, children probably won’t find that very appealing, but it can be delicious served this way, with the pepper and onion having been cooked and seasoned juuuuuuuuust right. Before being added as pizza toppings, the onion and pepper are cooked with garlic over the stovetop until noodly, with a squeeze of lemon juice to add to the flavor. Add salt and pepper, and a pinch of Italian seasonings as you cook it in olive oil, and you got yourself a lovely layer of pre-cooked veggies for your pizza. The top layer of spinach is added toward the last 5 minutes of baking the pizza, so it resembles the sprite a little more. As much as it can, anyway.
You can use either pre-made crust and pizza sauce or you can make your own. Doing it yourself will be healthier and taste better, however, it will also take much longer, which is why it’s easier to go with pre-made. Either way, it’s sure to be delicious.
GAMER’S DELIGHT:
1 pre-baked pizza crust
About 1/2 cup pizza sauce
1/2 red onion, chopped
A generous squeeze of fresh lemon juice
1/4 tsp or less of Italian seasoning
1 green bell pepper, chopped
3 cloves garlic, minced
Salt and pepper to taste
1 tablespoon olive oil
1/2 cup shredded mozzarella cheese
1/2 cup freshly grated Parmesan cheese
Pepperoni, real or plant-based
1 & 1/2 cup spinach, stemmed and chopped
Preheat oven to 450 degrees F (230 degrees C).
Slice a lemon into wedges. You’ll only need one wedge, so save the rest to use for whatever you’d like.
Wash and chop onion and pepper into thin strips and mince garlic. Grate Parmesan cheese and set aside.
Heat olive oil on medium heat and begin cooking the onion and bell pepper. Add garlic, lemon juice, Italian seasoning, salt, and pepper. Cook until soft and noodly. Remove from heat.
Place pre-baked crust on pizza pan and spread pizza sauce over it. Top with mozzarella and Parmesan. Add pepperoni and top with the cooked onion and bell pepper.
Bake for 10 minutes while chopping up spinach. Remove pizza from oven after 10 minutes, top with the spinach, and return it to the oven and bake again for another 5 minutes.
Remove from oven one final time, slice up, and enjoy.

Making pizza at home is not only a rewarding experience but also allows for creative customization to suit your taste preferences.
Here's a straightforward guide to crafting mouthwatering pizza in just four simple steps.
Step 1: Prepare the Pizza Dough
Ingredients: Gather flour, water, yeast, salt, and olive oil.
Mixing: In a mixing bowl, combine the flour, water, yeast, salt, and olive oil. Knead the dough until it forms a smooth, elastic ball.
Rising: Place the dough in a lightly oiled bowl, cover with a clean kitchen towel, and let it rise in a warm, draft-free place until doubled in size, usually about an hour.
Punching and Shaping: Once the dough has risen, punch it down to release the air bubbles. Divide the dough into portions and shape each into a ball. Allow the dough balls to rest for 15-20 minutes before rolling them out into pizza crusts.
Step 2: Prepare the Pizza Sauce
Ingredients: Gather canned tomatoes (or tomato sauce), garlic, olive oil, dried basil, dried oregano, salt, and pepper.
Sautéing: Heat olive oil in a saucepan over medium heat. Add minced garlic and cook until fragrant, being careful not to brown.
Simmering: Add canned tomatoes or tomato sauce to the saucepan. Stir in dried basil, dried oregano, salt, and pepper to taste. Simmer the sauce for about 15-20 minutes until it thickens slightly and the flavors meld together.
Blending: For a smoother sauce, use an immersion blender or transfer the sauce to a blender and blend until smooth.
Step 3: Assemble the Pizza
Preheat the Oven: Preheat your oven to the highest temperature possible, typically around 475°F to 500°F (245°C to 260°C).
Roll Out the Dough: On a floured surface, roll out the pizza dough into your desired shape and thickness. Transfer the rolled-out dough to a pizza peel or baking sheet dusted with cornmeal or flour.
Add Sauce and Toppings: Spread a thin layer of pizza sauce over the dough, leaving a small border around the edges for the crust. Sprinkle shredded cheese evenly over the sauce, then add your favorite toppings, such as pepperoni, mushrooms, bell peppers, onions, olives, or fresh herbs.
Bake: Carefully transfer the assembled pizza to the preheated oven. Bake for 10-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Step 4: Serve and Enjoy!
Cool and Slice: Allow the pizza to cool for a few minutes before slicing it into wedges or squares.
Garnish: For a finishing touch, drizzle the pizza with a bit of olive oil and sprinkle with freshly chopped herbs, such as basil or parsley.
Serve: Serve the homemade pizza hot and enjoy the delicious fruits of your labor with family and friends.

Looks pretty crazy for a pizza... But trust me on this: Apricot jam, cream cheese, pizza cheese blend, red onions, red bell peppers, blackened chicken, cajun spices, and topped with fresh grated carrot, green onions, and cilantro! 🤯😍
When I lived in Alaska, I worked at a restaurant called the Bear Tooth Theater Pub. It is a shoot off of the Moose's Tooth Pizza, and their brewery is called Broken Tooth. They are an award-winning, internationally acclaimed pizzeria; everything they make is crazy good. I worked at their theater/venue location, so I would man the line for viewings and live events. One of our more interesting but nonetheless popular pizzas was the Amazing Apricot pizza. That is my husband's favorite on the menu.
So of course I make it from scratch at home from time to time for him. He also really likes thick, pillowy pizza crust, so I use Matty Matheson's Three Day Fermented Dough. It's a mad easy recipe; the hardest part is waiting lol. And I can't talk about a super delicious recipe without sharing it, so here's the dough:
Matty Matheson's Three Day Fermented Dough Recipe
(Makes one full sheet pan pizza, or two half pan pizzas)
Ingredients:
- 4 cups bread (or all purpose) flour
- 2 teaspoons salt
- 1/3 cup olive oil (or preferred cooking oil)
- 1 3/4 cups warm water, about 100°F
- 8 grams dry active yeast (one packet)
In a standing mixer bowl, combine water and yeast. Allow yeast to rise and get foamy, 5-10 minutes.
In the meantime, combine the dry ingredients in a separate bowl.
Add the oil to the mixer bowl once the yeast is ready. Using the dough hook, mix the liquids on low, slowly adding the dry ingredients until completely incorporated. Turn the mixer to medium and knead the dough for 5-8 minutes, until a soft and smooth ball forms.
Place the dough in a well oiled bowl, and cover the bowl with a towel or plastic wrap. Let rise in a warm place until double in size, about an hour.
Once risen, punch the dough down and fold it over itself a few times. Place the dough seam side down in the oiled bowl, and cover securely with plastic wrap. Refrigerate the dough for 24 hours.
After 24 hours, punch the dough down again. Gently pull the dough out to a large rectangular shape, and place the dough on a parchment paper lined sheet pan. Cover the dough again with plastic wrap, and refrigerate for another 24 hours.
When you're ready to bake, remove the dough from the fridge. Gently press the dough to the edges and corners of the pan, and allow to rest for 20 minutes at room temperature.
Top with your preferred pizza toppings, and bake at 500°F for 20-25 minutes, or until the edges are golden brown. Let rest for a few minutes at room temperature before cutting and serving. Enjoy!

Mushroom Pepper and Burrata Pizza (Vegetarian)
Tumblr media
This gorgeous Mushroom Pepper and Burrata Pizza, fragrant with herbs, and colourful with fresh vegetables --some grown in my garden!-- makes a deliciously festive Friday night dinner. Have a good one!
Ingredients (makes one pizza):
1 tablespoon unsalted butter
1 tablespoon ch oil
200 grams/7 ounces cremini and button mushrooms
half a dozen leaves fresh sage
1 garlic clove, minced
1 tablespoon Modena Balsamic Vinegar
a pinch of salt and freshly cracked black pepper
a whole green Bell Pepper
half an orange Bell Pepper
half a red Bell Pepper
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon salt
½ freshly cracked black pepper
1 tablespoon olive oil
1 cup Tomato Concassée
¼ teaspoon Red Chili Flakes
255 grams/9 ounces Pizza Dough
125 grams/4.4 ounces Burrata Mozzarella
¼ teaspoon Red Chili Flakes
Melt butter with olive oil in a large, nonstick skillet, over medium-high heat.
Slice cremini and button mushrooms into thick slices. Once the butter is just foaming, add mushrooms to the skillet, and sauté, coating in butter and oil, about 3 minutes.
Finely chop sage leaves, and stir them in as well. Cook, a minute more or so, until mushrooms are well-browned. Stir in minced garlic.
Then, deglaze with Balsamic Vinegar. Cook, 1 minute. Season with salt and black pepper. Remove from the heat and allow to cool.
Preheat oven to 250°C/485°F. Lightly oil a large pizza pan, or line a baking tray with baking paper.
Seed and slice  green, orange and red and Bell Peppers. In a shallow plate, combine dried basil, dried oregano, salt and black pepper. Stir in olive oil and mix well. Toss Bell Pepper slices in the oil and herb mixture, coating them well. Set aside.
Combine Tomato Concassée and Red Chili Flakes, stirring well to mix.
On a lightly floured surface, roughly roll out Pizza Dough (you can also hand-stretch it, if you prefer. Place Pizza Dough onto prepared pizza pan or baking tray.
Generously spread Chili Tomato Concassée onto Pizza Dough, just leaving out the edges.
Scatter Bell Pepper slices all over the Concassée. Scatter Balsamic mushrooms on top. Tear Burrata Mozzarella into chunks, and scatter liberally on top. Sprinkle with Red Chili Flakes.
Place pizza in the hot oven, and bake, at 250°C/485°F, for about 14 to 17 minutes, until crust is beautifully golden and cheese is bubbly.
Serve Mushroom Pepper and Burrata Pizza immediately, with a glass of chilled Pinot Grigio or rosé.
