I love “The Crow’s Prince!” Especially this man who is so in love that he unconsciously gave Rainelle his left hand. He is ready for marriage and doesn’t even care if she is the one to pop the question. Get you a partner like Kamut. 😌 I won’t lie, I’m a little upset over Rainelle pulling a “I have to wait and see if his feelings change when the FL arrives” because we all know that he’s down bad for her and they both care for each other. But it’s fine, I’m too invested and love their relationship too much to drop.

i had another super successful session in the kitchen and i'm here to brag about it again!
my primary goal was to make approximately one shit ton of muffins, because they’re one of the most efficient ways to keep ready-to-eat food on hand for me and my mom, and with my whole grain kamut flour, they’re pretty healthy.
it took a long time and was really exhausting, but with my trusty 24 cup muffin pan, i made TEN DOZEN MUFFINS!!!

i made two double batches (4 dozen) banana walnut muffins, because i had a bunch of bananas that were perfectly ripe, then 2 dozen double chocolate.
next i made 2 dozen cranberry lemon muffins (i bought several bags of fresh cranberries over thanksgiving/christmas and popped them straight into the freezer, where they last for ages), and then 2 dozen peanut butter chocolate chip muffins. i was really excited for those, but sadly the texture doesn’t work for me. i’ll still eat the though lol.

i worked on some other projects while all these were in the oven, including my technique for producing a LOT of roasted garlic very quickly and easily.
i bought a big bag of pre-peeled garlic cloves, sorted through them to cut off bad spots and the woodiest root ends, then doused them in olive oil, covered with foil, and roasted at 350 for... a while? i forgot to keep track.

the most important thing is stirring the cloves regularly, or else they’ll burn where they touch the tray. you might also want to pick out some of the brownest cloves while the larger ones still have a ways to go.

in the end you have a full pint of roasted garlic without fussing with any paper, and you can put them in a container and cover them with olive oil.

this will preserve the garlic by protecting it from oxygen, and also give you roasted garlic flavored olive oil. it’s really delicious, and it lasts for a very long time.

another project i worked on was making some hand cream for my mom and i, which i planned out to be as non-greasy as possible while also being super healing, and then i whipped it into a body butter! but i can’t fit all the pictures in this post, so i’ll have to make another one.
i still have a lot to do, but i’m really happy with these accomplishments. 😊

This is how it works: The must inflammatory foods are: gluten (wheat, rye, couscous, kamut, barley, seitan, spelt), dairy, fried foods, 🌽 corn , soy, sugar and carbonated drinks. So stop eating one of those for at least 5 straight days and see how you feeling. Reintroduce it to your diet and check if that was triggering your bloating. If not, continue with the list. You should also try against grains, legumes (beans, peas, lentils, 🥜 peanuts), nuts and seeds or even raw vegetables (broccoli, coliflower, eggplant 🍆, cabbage, onion 🧅, garlic). However, sometimes is not the food itself but how it’s cooked. When I first did this I wrote everything I ate (detailed ingredients + brand list included) and how my digestion was (poop description too 😅) so I could have a better picture. For example, now I know that i do ok with whole kernel corn🌽 but I do terrible with pop-corn (even if it’s artesanal made). No doctor on earth will be patience enough to do the whole elimination diet and checked your digestion dairy; but you should be the must interested one in getting better, in healing. So even if they don’t recommend it, DO IT. Trust me on this one. It’s also important to upload the intake of the “good” ones. If you don’t get well after this, then you must go to a doctor and discard the possibility of having leaky gut, candida (my case), infection, and even mineral toxicity.

I was like, “Plant some sprouts in a jar! You’ll have fresh food before the week is out!” She was like, “WHAAAAT?! Can you please post this on fb?!” So here I am.
Ingredients (choose one of the below)
2 tablespoons of dry beans such as mung beans, garbanzo beans, black beans, adzuki beans, lentils, or a combination thereof; OR
2 tablespoons of seeds of the following plants: alfalfa, spinach, hemp, clover, black radish, Chinese radish, purslane, pea, turnip, green or red cabbage, Chinese cabbage, endive, celery, carrot, broccoli, beet, leek, onion, garlic, mustard, garden cress, watercress, rocket, flax, chia, basil, sunflower, sesame, gourd, almond, daikon, red, or black radish seeds or horseradish seeds (if you like it hot), fenugreek seeds, parsley, fennel, nigella, cumin, coriander and caraway seed, or a combination thereof; OR
2 tablespoons of dry grains such as rye, buckwheat, rice, quinoa, barley, millet, corn, kamut, spelt, wheat, oats, or amaranth
Instructions:
Evening 1: Put your 2 T of seeds, beans, or grains into a quart jar with 4-6 tablespoons of water (water should be 2-3 times higher in the jar than the beans/seeds/grains). Cover the jar with a screen or some cheesecloth. Leave it on your counter overnight.
Morning 1: Drain your beans/grains through the screen/cloth. Put the jar aside out of the sunlight. You may see teeny sprouts popping out as early as today.

Whole grains are a pretty misunderstood food group, especially considering how carb-phobic we all are right now! So, to help clear the confusion, I wanted to share the actually healthy whole grain foods you should eat on a daily basis. Plus, I’ve got some fun recipe ideas that will help you elevate whole grains beyond a basic boiled side dish.
We’ve heard the term ‘whole grain’ so often that it can feel like nothing more than a marketing term…and it’s absolutely true that not all whole grain foods are that healthy. But that doesn’t mean we should banish these fibre, protein and mineral rich foods from our plates!
What are whole grains?
A whole grain food is one that has all three original parts of the grain, the endosperm (inner part), the germ and the bran. So, flours can be 100% whole grain, as long as nothing has been removed. I will often talk about ‘intact’ whole grains, which means that they have not be milled, rolled, steamed or otherwise transformed from the original grain as it grows. So an intact form of grain would be wheat berries (also called wheat kernels) or steel cut oats while quick oats or whole wheat flour can be considered 100% whole grain.
Whole Wheat vs Whole Grain
While all whole grain wheat flour will be 100% whole wheat, not all whole wheat flour is 100% whole grain. In Canada, up to 5% of the kernel can be removed from milled whole wheat flour and still be called whole wheat, so whole wheat is not always 100% whole grain. It’s pretty close though!
Is whole grain flour healthy?
While I absolutely think that whole grain flours have a place in a healthy diet, I think that we tend to consume WAY more flours than intact whole grains in our food culture so I tend to focus on encouraging people to eat more intact whole grains.
What’s more, we tend to be overly focused on eating wheat. Many of us eat wheat 3-6 times a day and few of us eat alternative grains such barley, rye or millet. As long as you tolerate wheat, eating it can be very healthy; however, eating only wheat means we are missing out on the nutrition that is found in eating a variety of grains.
How you cook or process that grain flour also matters. Many whole grain breads are so fluffy and soft that they have a very high glycemic impact on your blood sugars, which isn’t a great idea on an anti-inflammatory diet. Instead, I tend to recommend my clients look for heavy, 100% whole grain sourdoughs or sprouted grain breads for more fibre, more protein and a lower glycemic index.
While we’re on the topic, I should also mention that whole grain pastas, cooked al dente, are also a great choice on an anti-inflammatory diet as they also have a moderate glycemic index when compared to most other flour-based foods.
Whole Grains List
Gluten-containing whole grain foods you should eat more of
Wheat Berries
Wheat berries look similar to brown rice, and have a dense, chewy texture and slightly nutty flavour that is super satisfying. Wheat berries also contain more protein and fibre, cup for cup, than quinoa…making it an excellent locally grown grain choice on a plant-based diet.
Farro, Spelt and Kamut Berries
Farro, Spelt and Kamut are ancient cousins of modern wheat; each has a slightly different flavour profile and texture but they are similar to wheat berries. They may be a bit easier to digest for those that are wheat or FODMAP intolerant – but they contain gluten so they are not suitable for those with celiac disease.
Bulgur (Cracked) Wheat
Whole grain bulgur is wheat berries that have been cut, or ‘cracked’ into smaller pieces and steamed. A great whole grain substitute for couscous (which is essentially a pasta and not a whole grain) in salads like tabbouleh.
Whole Oats (Groats)
Whole oat groats also look similar to wheat berries, and you can use them in a similar way. When they are cut, they become steel cut oats. When they rolled, they become rolled or old fashioned oats, and if rolled finely and steamed, quick or instant oats. Oats are fantastic because of their soluble fibre content, which is very soothing to the gut and helps promote the growth of beneficial bacteria in the gut. Conventional oats do not contain gluten per se, they are however cross-contaminated with gluten. You can now also find 100% gluten free oats. Just check on the label.
Barley
Barley comes in two forms, pot or pearl. Pot is whole grain and has most of its bran intact, while pearl has been polished (pearled) for longer and lacks the bran. However, barley is also very high in soluble fibre, so even pearl barley is a great fibre pick for gut health. Barley has a lighter, milder taste than wheat.
Rye
Rye groats are harder to find, but 100% rye flour is one of my favourite flours. It has a dark, earthy flavour and a light gluten structure – meaning it’s not a straight 1:1 swap for wheat flour in all recipes. It works well in cookies and muffins and quick breads blended with another stronger flour, such as spelt.
Gluten free whole grain foods you should eat more of
NERDY FYI: Most gluten free grains such as buckwheat, quinoa and millet are not true grains, they are actually seeds that we cook like grains.
Quinoa
Quinoa is probably the most popular gluten free grain after rice, well known for its ‘complete’ amino acid profile. However, people often mistake quinoa for being high in protein. In fact, one cup of cooked quinoa only has 8.5g of protein – excellent as a grain, but not enough to carry an entire meal…you still need to add another concentrated plant protein source to get enough protein. Quinoa flour is quite bitter, not an easy one to bake with.
Black, Brown, and Red Rice
Rice is a staple the world over; however, you might be surprised to learn that brown rice isn’t really that high in fibre. One cup of cooked brown rice has just 3 grams of fibre. For more stable blood sugars, look for long grain basmati or jasmine rice. I also really like black and red rice for their chewy textures and flavour.
Millet
Millet is probably my favourite gluten free grain these days. It has a milder, wheat-ier flavour than quinoa and a fluffier texture that works well in a variety of dishes. It’s slightly lower in protein than quinoa, at 6.5g per cooked cup but boasts a variety of minerals such as iron, zinc and potassium.
Buckwheat Groats
The confusingly named buckwheat has nothing to do with actual wheat; it is the seed of a plant related to rhubarb! Buckwheat flour is dark in colour and richly flavoured and is a common ingredient in pancake and crepe recipes. You can also toast buckwheat groats for a crunchy addition to salads, or cook it as a grain.
Sorghum
A true gluten free cereal grain, sorghum can be found in groats but is most commonly used as a flour. It has a lovely texture that approximates wheat flour in baking, and is great when blended with millet or rice flour. Sorghum is similar in protein content to quinoa and boasts more minerals than millet.

The following is some of Marilyn’s essential shopping list for foods that will help you keep your weight under control…
Vegetables and Salads
Everybody knows about the five-a-day fruit and vegetable target but you should actually aim to eat more vegetables than fruit. Vegetables give you the most benefits for your health but it is often easier to just pick up a piece of fruit. Research has shown that only one in four adults are actually eating five-a-day. Marilyn’s message is to increase your intake of vegetables and as with fruit, enjoy as wide a variety as possible. Go for a rainbow of colours and you’ll increase the range of nutrients you’re taking in (many of the vitamins and antioxidants are contained in the pigments).
Top Tip: Pick a new veg to try each week and remember potatoes do not count as one of your five-a-day due to their high starch content!
Grains
If your budget limits the amount of organic produce you can buy, put grains at the top of your shopping list! Grains are very small so will absorb more pesticides than other goods, so it is best to buy organic. You will have no trouble buying organic grains at health food shops although many supermarkets stock them now too. Include barley, bulgar, brown basmati rice, couscous, millet, oats, brown rice, quinoa (cooks like a grain but is a high-protein seed) spelt and other ancient grains like kamut and amaranth. Go for variety with grains as much as you do with veg and fruit. Experiment with new varieties, don’t just to pasta and rice.
Top Tip: If you feel bloated after eating wheat then limit your intake even of whole wheat and the same would apply to bulgar and couscous. Spelt is a strain of wheat but is often called ‘ancient wheat’ because it is one of the original strains of wheat. Spelt is much easier to digest than wheat so you might find that you get on better with this form.
Flavourings
Choose from ginger, garlic, fresh and dried herbs – spices like cinnamon, turmeric, pepper and chill, lemon juice, sea salt, miso and mustard. Arrowroot or kuzu are good for thickening gravies and sauces. You can find tomato ketchup without sugar and also no-added sugar mayonnaise and salad dressings. Or make your own. Soy or soya sauce is not just for Chinese food – this is good on rice, in vegetable stir-fries and in salad dressings and sauces. Choose organic where possible and avoid those containing monosodium glutamate.
Top Tip: If you are avoiding wheat then buy tamari, which is a wheat- and gluten-free, soya sauce.

Fish
All fish is inherently good for you. Its saturated fat levels are low and it is very nutritious. Oily fish is particularly good as it contains high levels of omega-3 fatty acids so buy and enjoy mackerel, fresh salmon (organic or wild, not farmed), tinned salmon (eat the bones) and sardines! Avoid fish, which could be high in mercury such as swordfish, marlin and fresh tuna. Tinned tuna is often produced from young tuna so does not usually contain high levels of mercury but loses the omega-3 fatty acids in the canning process. 
Top Tip: Sardines and other tinned oily fish retain their omega-3 fats even when tinned so opt for these if you’re on a tighter budget.
Tofu
Tofu is soya bean curd, made from yellow soya beans. On its own it has no taste: its flavour is dependent on what you cook with it. It is very versatile because of this ability to pick up the taste of whatever you combine it with and because it can be prepared in a variety of ways. It can be sliced, cubed, mashed, scrambled, pureed and used in both savoury and sweet dishes. Add tofu to an ordinary stir fry simply by cutting into cubes and cooking it with the other ingredients. Add strong flavours such as garlic, ginger or tamari, which the tofu will absorb.
Top Tip: Try cutting tofu into thin slices rather than cubes and lightly fry in olive oil. At the end of cooking, when it is pale brown and the pan is still hot, I sprinkle the tofu with tamari and gently turn it over. Eat as is with brown rice and veggies or pop into a sandwich with mayonnaise, mustard and salad.

Depression, Low-Blood Sugar and Allergies
How much of depression is biochemical? How much is psychological?
Well, the mind can effect the biochemistry of the body and vice versa. In her book, Seven Weeks to Sobriety, researcher, Dr. Joan Mathews Larson describes the frequency that hypoglycemics experience certain symptoms:
Nervousness 93%
Irritability 89%
Exhaustion 87%
Depression 86%
Forgetfulness 69%
Indecisiveness 50%
(Now, I can relate to the indecisiveness situation when, during my late 30’s, I was in a state of exhaustion and unable to make a simple decision regarding lunch. Fortunately, I chose a hardy carrot ginger soup and chicken dish and I was able to think more clearly.)
Dr. Larson also stated that her patients with allergies were prone to emotional outbursts and depression. In one case, a patient fasted for a week, with no symptoms. But, after a meal of pizza, the patient went into a fit of crying.
It is also interesting to note that many alcoholics and suicide victims were mineral and vitamin deficient. Some were especially deficient in vitamin C and demonstrated symptoms of scurvy. A person’s nutrient-deficient brain will often contribute to low-blood sugar, confusion and even depression.
My own experiences with mega-dosages of nutrition have been that after taking massive amounts of B vitamins, adopting a high protein diet and cutting out bread and processed foods, I made greater muscle gains, slept better, drank less alcohol and gained better mental focus.
This is not to dismiss cognitive or group therapies, but rather give another tool in the toolbox of good health. I constantly urge my clients who are trying to lose weight or gain muscle to cut out the highly allergic foods that contain sugar, wheat and corn. Replace these foods with nerve-building, high protein foods like chicken, fish, beef and vegetable proteins. These along with fresh vegetables and berries promote stable blood sugar and feed one’s brain and nerve tissues.
Here is a typical low-energy diet:
Breakfast: Coffee, wheat toast, processed cereal
Snack: Coffee, Danish
Lunch: Salad with dressing, fruit-flavoured yogurt, French fries. Pop.
Supper: Coffee, burger and French fries
Snack: Ice cream
Not only is this diet packed with over 20 teaspoons of sugar, it depletes vitamin and mineral reserves and sends the person’s blood sugar on a roller coaster ride.
Here is a sugar stabilizing diet:
Breakfast: 2 eggs or egg whites and unsweetened oatmeal, one slice of rye, kamut or spelt toast. Multi-vitamin with minimum 500 mcg of vitamin B12, 100 mg of B1 and 300 mg vitamin C.
Snack: Crackers and cheese or humus
Lunch: Salmon salad
Supper: Stir fry chicken with brown rice
Snack: Oat crackers
Before someone protests that the following eating plan is too expensive, may I interject that cooking your own breakfast alone costs 1/5 of a fast food meal or a couple of chocolate bars or a gourmet coffee. So, do not even try that excuse. Many immigrant families eat good at a fraction of the cost of western or fast food.
