コーンスターチは、片栗粉と同じ性質を持ち、水で溶いて加熱するととろみをつけることができます。コーンスターチでつけたとろみは時間がたって冷えても持続します。
コーンスターチはトウモロコシから作られたデンプンで��別名「とうもろこしでん粉」とも呼ばれます。米国ではコーンスターチがほぼ独占的に使用されています。
片栗粉(potatostarch)はほとんどがジャガイモ、コーンスターチはトウモロコシのでんぷんです。
片栗粉は加熱するととろみが出やすく冷めると低下するため、温かいうちに食べるあんかけ料理などに向きます。
コーンスターチは加熱してとろみがつくと冷めても低下しにくいため、カス タードクリームなどの���菓に使われることが多いようです。
