Was encouraged by Tulli to post some of my original work here today for portfolio day. Besides GG20s, I'm also developing a cyberpunk story about a rookie cyborg boxer in an alternate 2001 Los Angeles in the style of late-90s anime.
I also have a side project, developing a video game idea on exploring the Pacific ocean and speculative marine sciences.
Also some posters I've done, including a piece I made for The Lovers.
If it's fighting game bosses, I'd probably pick Magaki from KOF XI off my head not that he IS the hardest I just hate him.
Granted, I've probably had a harder time overall with Jivatma from KOF Maximum Impact 2.
Fighting Game Bosses, on average, are made to be absolute chores even outside of Arcades so it's an unfair pedigree.
Would say Death in Castlevania Lament of Innocence just because I can't think of anything else at the moment (that fight was a cop out) and I never finished God Hand.
BUT I think my BEST answer would be a boss from
One Piece: Unlimited Adventure.
It would have to be among the final boss, Aokiji, Lucci, or
Monster Chopper.

This is my rw au(Project Triple Affirmation), it takes place in a setting where the Ancients are still alive. One day, Looks to the Moon announces that she has found the Triple Affirmative—the answer to the Great Problem: to eliminate death by uploading all consciousnesses to a virtual reality, for without death, there is no rebirth, thereby breaking the cycle. She sees herself as the savior of everything, granting an ethereal eternity.
To put it into simpler words: Moon with her local group killing everything and uploading their victim’s consciousness to FP’s processor(a virtual reality).
While Moon claims that her plan “Solves” the Great Problem, her real agenda is far more radical: she wants to play god. To create a new world in her vision.
