I usually make pancakes on Sunday, but since every day is now Sunday, I made them today. (The calendar says it’s Saturday.)

The recipe I’ve been using for years and years is from Vegetarian Cooking for Everyone, by Deborah Madison. I’ve altered the recipe some, and this is how I do it:

In a big bowl mix: 1 & ½ teaspoon baking powder, ½ tea baking soda, ¼ tea salt, ½ cup of white flour, 1 cup of whole wheat flour. In a large measuring cup, add 1 & ½ tablespoons vinegar, and 1 & ½ cups of milk. (This is the buttermilk I make when I don’t have any, which is most of the time.) Let the milk and vinegar sit for about 10 minutes. Add two eggs to the milk and vinegar and whisk. Add the milk mixture to the flour and whisk. Mash one very ripe banana and add to the batter. To make the pancakes extra special, I add blueberries  (usually frozen). 

If you have a partner, get him or her or them to stand by the stove, making the pancakes. (Actually, that became Billy’s job when we realized - after too many years - that he makes them better than I do.)

Warm some maple syrup and pour over pancakes. Real maple syrup is the best way to go.

Lunch: remember that pot of black beans? That goes such a long way. The boys were hungry after spending so much time doing basically nothing. I made them some quesadillas, and everyone was happy.

I’m somehow not banned from France yet

Equipment:

  • Air fryer or stovetop
  • Pan or Air frying rack

Ingredients:

  • 2 tortillas
  • 2 slices ham (thin slices)
  • Cheese (any type, I use mozzarella but typically swiss or gruyere is used)
  • Powdered Sugar - for topping
  • Jelly - for topping/dipping

Instructions:

  1. Assemble the tortillas, cheese, and ham into a regular quesadilla.
  2. Cook as a regular quesadilla (5 minutes air frying at 390° or on a stovetop at medium heat (be sure to use butter or spray so it doesn’t stick on stovetop))
  3. Sprinkle with powdered sugar
  4. Serve with jelly
