De Petrónio ao pernil gourmet

As “gastronomias” na linguagem dos edis e o torniquete “gourmet” na linguagem dos príncipes do nosso tempo são, cada um a seu modo, clamores que nos tocam o coração. O que seria a contemporaneidade com balcões de mármore corroídos a ver escorrer o carrascão? O que seria a contemporaneidade sem aquela vigilância que atira para a fogueira o papalvo que molha o pãozinho no molho espesso dos túbaros? O que seria a contemporaneidade sem o decoro do léxico dourado que nos salva das impurezas? Tanta interrogação, meu deus.

Vêm estas atoardas a propósito de uma tarde de sábado em que, de modo involuntário, misturei um suplemento do ‘Público’ que raramente leio, o “Fugas” e um livrão com vinte séculos de vida, de seu nome ‘Satyricon’, escrito por Petrónio. Se este último me fez rir e pensar, já os textos do suplemento me engasgaram o pranto, tal é, por vezes, o poder da reverberação. E a digestão desse sábado foi complicada, pois atrevi-me no coração do Alentejo a um rabo de boi com arroz salteado.

O discurso gourmet dos nossos dias encena a natureza e a naturalidade. Ergue com as duas mãos essas bençãos utópicas, fundindo-as depois com geografias que atraem o prazer de soletrar as finas sibilantes de um ossobuco, as aliterações líquidas de um poderoso risotto alla milanese e um ou outro lugar comum, como o dolce fare niente. Ora leia-se esta presteza musical: “Deixamo-nos cair numa esplanada a ver este espectáculo natural, na casa de Luca e Andrea, que têm duas moradas: L’Altro (mais gourmet) e a versão café. Entre um risotto alla milanese que se derrete na boca ao ritmo do açafrão (pode juntar-lhe o ossobuco) e uma panna cotta com chocolate branco e creme de limão, o melhor é cair por aqui no dolce fare niente milanês.”

Quando o corpo cai na Ásia e não na Lombardia, os olhos do Oeste tendem quase sempre a generalizar (“É, a seu modo, um restaurante de fronteira, entre a cosmopolita e pantomineira Nguyen Phúc Chú e o bairro de pescadores”). Mas logo a seguir não resistem a aclarar os magistérios do ‘zen’ que ilustram a gesta gourmet agora tão em voga: “Num tempo em que a comida se transformou numa espécie de religião, por razões de saúde ou de banal lifestyle, com os seus rituais incensados pelos media e o seu pós-moderno olimpo de gurus, o Chau My guarda uma saudável simplicidade; a mãe do senhor Hoa lá vem da cozinha com os pratos de cao lâu, de sorriso acanhado e sem teatro para inglês ver.”. Devo referir que apreciei a metáfora do incenso, a referência ao olimpo, o esteio (ainda vivo do) pós-moderno e ainda aquela película em English que, mais uma vez, remete para o senso comum do “banal lifestyle”.

Até que, chegados ao âmago da reportagem, fica logo provado que uma narrativa de teor gourmet emerge de uma sucessão de actos que se abstrai das fúrias do tempo comum. É como se estivéssemos sempre a levitar a bordo de um tempo extraordinário (tipo Páscoa, Pentecostes, Natal ou qualquer coisa assim elevada). Ora leia-se: “Na mesa, os pratos sucedem-se, apresentados em diferentes serviços Vista Alegre, da colecção desenhada por Christian Lacroix à inspirada em Fernando Pessoa. Os sabores são intensos, do consomé de cogumelos e caça ao leitão assado de pele estaladiça (ao estilo do leitão da Bairrada), passando pelo salmonete de escabeche (e o escabeche é uma receita da avó dos Sandoval, que volta depois num delicioso caldo), pelo pato servido de três formas, pelas super-intensas ovas de ouriço com molho de tripas à madrilena”. A prosa é evidentemente rica, densa e permite fazer crescer água benta na boca, tal é a intensidade e qualidade da porcelana, tal é também a evocação poética e a própria delícia carnal das vísceras.

Recuemos agora dois mil anos e entremos em casa de Trimalquião, o personagem que Petrónio criou para gozar com os novos ricos que enriqueciam e desejavam, a todo o custo, ostentar por ostentar. A festa dada pelo anfitrião na sua mansão ocupa 52 dos 140 capítulos da narrativa. Logo no início, um dos três personagens que estão em permanente estado de orgia (Gíton, Encólpio e Ascilto) relata a chegada à mesa das primeiras entradas. Leiamos lentamente, dando afinco ao ritmo e às suas imagens:

“A seguir aos nossos aplausos, chegou o primeiro prato, que não era tão especial quanto esperávamos, embora a sua originalidade atraísse a atenção geral. Tratava-se, então, de um recipiente arredondado, onde se encontravam dispostos em círculo os doze signos do Zodíaco; sobre cada um deles, o cozinheiro-arquitecto havia colocado um alimento específico e apropriado à natureza do signo: sobre Carneiro, uns grãos-de-bico de corninhos; sobre Touro, um bocado de carne de vaca; sobre Gémeos, uns testículos e rins; sobre Caranguejo, uma coroa de flores; sobre Leão, um figo africano; sobre Virgem, uma vulva de porca jovem; sobre Balança, uma balança em cujos pratos havia um pastel de queijo e um pastel doce; sobre Escorpião, um peixinho do mar; sobre Sagitário, um oclopeta; sobre Capricórnio, uma lagosta do mar; sobre Aquário, um pato; sobre Peixes, salmonetes. Ao centro, um torrão de terra cortado ainda com erva sustinha um favo de mel. Um escravo egípcio andava de mesa em mesa a servir pão, que retirava de um pequeno forno de prata…”.

Moral da história: os novos ricos de Roma ostentavam para fazer estalar o riso (pelo menos aos leitores de Petrónio): “Trimalquião surgia em pessoa” (…) “de um manto escarlate, erguia-se a cabeça rapada e, à volta do pescoço, já abafado em roupa, vinha enrolada uma toalha enfeitada com tiras de púrpura e com franjas que pendiam de um e de outro lado”. Os novos ricos de hoje já não se fazem notar pelas casas ‘estilo maison’, nem pelas ‘arquitecturas brasileiras’ de há um século. Já ninguém liga a isso, razão por que esses volumes já estão certamente em vias de se converter em “património” da UNESCO. Agora chegou a vez da linguagem para adornar a descoberta dos mistérios da terra, analisados a partir da cidade omnipolitana e digital, com a gravidade dos milagres. É por isso que uma açorda alentejana vai acabar por se transformar numa escultura de um centímetro cúbico, feita de pão com pintas vermelhas de colorau e uma borboletinha de coentros. E haverá cronistas sagazes para lhe dedicar as suas odes e os seus mais intrínsecos compassos de dança.

Afinal já estava tudo escrito no século I d.C.: “A coisa começava a dar a volta ao estômago, quando Trimalquião” (…) “reclamou novamente música” (…) “estendeu-se na ponta do leito e ordenou: “Fingi que estou morto; tocai qualquer coisa bonita”. Começaram os corneteiros a tocar uma ruidosa marcha fúnebre…”.
