simple lower and slower roasted brussels sprouts
adapted from cheryl smith
INGREDIENTS
large bowl
2 lbs brussels sprouts
olive oil
rimmed baking sheet
6 garlic confit’d cloves
INSTRUCTIONS
trim 2 lbs brussels sprouts then wash and dry
half larger sprouts and set aside in large bowl
preheat oven to 350F
in small bowl mash together 1 T ghee (or just olive oil to make vegan) + 6 garlic confit’d cloves
to large bowl add 1 T olive oil + 1 T water + 3/4 t salt + 1/4 t freshly ground black pepper and toss to coat
add to unlined rimmed baking sheet cut side down
bake about 35 mins, just when the sprouts start to brown
when done baking remove from oven and toss with the garlic ghee
