Here's a simple recipe for easy overnight oats:
Ingredients:
- 1/2 cup rolled oats
- 1/2 cup milk (dairy or non-dairy)
- 1/4 cup Greek yogurt (optional, for added creaminess)
- 1 tablespoon chia seeds (optional, for added texture)
- 1 tablespoon honey or maple syrup (adjust to taste)
- Fresh fruits, nuts, or toppings of your choice
Instructions:
1. In a jar or airtight container, combine the rolled oats, milk, Greek yogurt (if using), chia seeds (if using), and sweetener.
2. Stir well to combine all the ingredients.
3. Cover the jar tightly and refrigerate overnight or for at least 4 hours to allow the oats to absorb the liquid and soften.
4. In the morning, give the oats a good stir. If the consistency is too thick, you can add a splash of milk to thin it out.
5. Add your favorite toppings such as fresh fruits (berries, sliced bananas, diced apples), nuts (almonds, walnuts, or pecans), or a drizzle of honey or maple syrup.

Hearty and filling, these more-ish Chocolate Overnight Oats make an indulgent breakfast to eat before exploring a new city, perhaps! Happy Tuesday!
Ingredients (serves 1):
125 grams/4.4 ounces plain yoghurt
1 heaped teaspoon unsweetened cocoa powder
1 heaped teaspoon caster sugar
½ teaspoon Homemade Vanilla Extract
1/4 cup whole rolled oats
15 grams/1/2 ounce dark chocolate
a few fresh raspberries, to garnish 
In a small bowl, combine plain yoghurt, cocoa powder, caster sugar and Vanilla Extract. Whisk energetically until smooth and well-blended. Stir in oats until well-combined.
Roughly chop dark chocolate, and stir into the oats
Spoon mixture into serving glass or bowl, and chill, overnight, in the refigerator.
Just before serving, top chocolate yoghurt oats with raspberries, and shave a little dark chocolate on top.
Enjoy Chocolate Overnight Oats immediately.

This Soaked Plum Porridge is warming and comforting in more than one way! The plums which have given a delicious bright pink Liqueur, are a little bit tipsy themselves! It might make a delightful hair of the dog brekkie; but you can also enjoy it as a rainy arvo treat! Happy Wednesday!
Ingredients (serves 1):
1 1/2 tablespoon silvered almonds
1/3 cup rolled oats
1 cup semi-skimmed milk
½ teaspoon Homemade Vanilla Extract
3 teaspoons caster sugar
1 tablespoon unsalted butter
8 halves Damson Plums used to make Damson Gin
In a small frying pan over medium-high heat, toast silvered almonds until just browned and fragrant. Remove from the heat and transfer to a small cup; set aside.
Spoon rolled oats in a medium saucepan. Stir in milk and Vanilla Extract.
Heat over a low flame, stirring often until mixture thickens, about 5 minutes. Stir in caster sugar until completely dissolved. Keep warm.
Add butter to the frying pan, and melt over medium-high heat. Once the butter is just foaming, add Damson Gin Plum halves. Cook, a few minutes until hot.
Remove porridge from the heat and spoon into serving bowl. Top with hot soaked Damson Gin plums and toasted almonds.
Enjoy Soaked Plum Porridge immediately.
