Roots
To see the earthy vegetables cleaned of soil and laid out ready for storage every fall brings such a joy for me. The work of a successful summer garden and harvest at the end of the season gives proof of a future that provides for winter health and happiness.
Gardening and the food it provides is medicine.

All harvests are satisfying, but unearthing root veggies is my favorite.
Celery, beetroots and parsnips were decent this year. Carrots and parsley not so much, was only left with digging maybe half a bucket of each at the end of the season.

Look at these monstrous beetroots. About 20 of them are waiting to be harvested, I only need a few free afternoons to be able to process them as well.
I always leave them in the ground until the end of the season, to get as big as possible. Even though they harden a bit, I'll be pickling them all, so it doesn't really matter. It's actually even better.
(The one in the left was 1.9 kg and the one on the right 1.7 kg.)
