galbi for dinner
My brother got us short ribs & I wanted to cook it . .. so I did :D
Made my 1st galbi with it - Korean-style short rib. The key, as I’m sure you know, is the marinade portion. It’s what distinguishes one place from another place. There are numerous recipes online that I drew from but in the end, I made some substitutions bcos I didn’t have the item at home.
I can’t give you amounts but here’s the list of what was in my marinade (for my 3 pieces of short rib):
- Korean soy sauce
- Korean plum extract
- minced garlic
- sugar
- salt
- white pepper
- Evoolution figs balsamic vinegar + about half of a bottle of pineapple yakult (yes, I didn’t have Korean pear or any pear for that matter & I didn’t wanna use apple)

Marinated in fridge for about 2 hrs. Yeah... I started this when I got home after work so I didn’t have much time BUT I felt it was a sufficient amount of time. They do say the longer the better.. like ideally 6-8 hrs, or even overnight. The problem is. .. I find that if you marinate lean-er meat cuts over an extended period of time, it loses its elasticity & firmness. Unless it’s the fatty beef, I like my meat to have a bit of a chew. That’s why I really dislike how some Asian restaurants use corn starch to soften the meat. The texture is kinda gross.
Anyway, cook each side for about 3mins.

Yoon Haeundae Galbi
This KBBQ joint in K-Town is great. Their beef heavy menu has an impressive list of selections, including wagyu, beef belly and dry aged prime beef.
