Tortilla Pizza
Ingredients:
Flour tortillas
Tomato paste (I recommend the tube kind over the cans)
Dried Oregano (optional)
Shredded cheese (Italian or Mexican blends both work fine)
Instructions:
Put the baking sheet in the oven and then preheat the oven to 350F.
In a mug, mix tomato paste and a little bit of water until you get the desired consistency and add the oregano if desired.
Put a flour tortilla on the hot baking sheet. (If you want a crisper "crust" you can put the tortilla in the oven for a minute before adding toppings.) Spoon the tomato paste mixture onto the tortilla and spread around with the back of the spoon. Top with shredded cheese.
Bake for 6-8 minutes, depending on how cooked you like your cheese.
Best eaten hot so I recommend making them one at a time.

Lunch:
Tumblr media
A simple salad made with lettuce, cucumber, onion, orange and yellow peppers, cheddar cheese, crumbled bacon, a boiled egg and a spoonful of pesto. SO good. Normally I'd have tomatoes in it as well but we were out. :(
I honestly didn't think this would fill me but it did. But I also finished it off with dessert..

The whacky cake I made yesterday with a dollup of cool whip and way too much caramel.. but I'm not complaining! 😍😋

Nicky's Quick "Pickle" Recipe
Julianne cucumber and add to a bowl.
Add 1:1 water and white vinegar until it stand 1/2 inch taller then cucumber.
Add salt and mix until fully disolves. It should taste just under offensively salty.
Leave in the refrigerator overnight before eating. Keeps decently well (in my experience)
Great on burgers, salads, and cold sandwiches. Great for summer. (But let's be honest, it's great WHENEVER you need a pickle or salty snack.) -Hale

Easy Recipe for The Best Italian Ricotta Lemon Bundt Cake
Lemon cakes are one of my all-time favorite desserts, such as orange ricotta bundt cake, chocolate ricotta bundt cake, and almond ricotta bundt cake. This Ricotta Lemon Bundt Cake with Zucchini is the most recent addition to my lemon cake recipe arsenal. You might be thinking, "Zucchini?" What exactly is it? Yes! While zucchini and chocolate have almost become standard. It thickens and moistens the cake, enhancing the lemon flavor.
The icing on this lemon ricotta cake adds a hint of blackberries to the cake's strong lemon flavor. This simple cake recipe tastes and looks delicious, especially when baked in a bundt pan.
Tumblr media
Drizzling a glaze over your lemon cake adds an interesting flavor and a lovely crimson hue.
MY STORY WIHT LEMON RICOTTA BUNDT CAKE
Ciambellone is a simple Italian-style Bundt cake baked in a circular, ring-shaped (Bundt) pan, as the name suggests. ("Ciambellone" translates as "large ring" or "giant doughnut.") In Italy, ciambellone/ciambellotto/ciambella cakes are almost as numerous as Bundt cakes. My version evolved over the years from my Aunt Dina's lemon-and-anise-scented ciambellotto to this version, with olive oil, ricotta, and extra lemon. The combination of olive oil and ricotta results in a delicate, moist cake with a soft, slightly gritty crumb that keeps for several days. It's the kind of plain cake that Italian aunts and grandparents keep on hand for (un)expected visitors.
This lemon and ricotta Bundt cake are like sunshine on a plate, and it's a quick and simple way to commemorate a special occasion. (In fact, I've made this cake for Easter, Mother's Day, Father's Day, baby and wedding showers, and holiday brunches over the years, and it's always a hit, disappearing quickly.) Although citrus fruits are in season during the winter and provide welcome relief from gloomy days, I find myself craving light and colorful lemon sweets like this one more frequently in the spring. This lemon cake feels right at home, brightening up a cold winter afternoon with a mug of hot tea as it echoes the brightness of a beautiful spring day, which is enhanced when served with in-season berries.
This not-too-sweet cake can be served as an afternoon snack or even for breakfast, as the Italians do (with an espresso or cappuccino, of course). Garnish with confectioners' sugar or dollops of homemade whipped cream, fresh fruit, or berry compote. You can gild the lily and elevate the cake to the level of special-occasion dessert by making a simple lemon glaze with confectioners' sugar and lemon juice to spread on top of the cake, but it isn't necessary. (And, while my Aunt Dina would have frowned on this extra step, I doubt she would have refused a glazed piece if she had a sweet tooth.)
WHERE CAN I FIND LEMON RICOTTA BUNDT CAKE INSTRUCTIONS?
This is also one of the simplest cakes to make. No additional layers, icing, or decorating will be used.
THE BEST RECIPE FOR LEMON RICOTTA BUNDT CAKE
Tumblr media
The recipe calls for standard cake ingredients such as butter, eggs, sugar, flour, baking soda, and baking powder to achieve a light texture. But there's one more ingredient that makes all the difference.
INGREDIENTS
• Nonstick frying spray on a bundt pan
• 3 cups all-purpose flour
• 4 tablespoons baking powder
• 1 tablespoon kosher salt
• 12 cups unrefined cane sugar
• 2 tbsp coarsely grated lemon zest (from about two large lemons)
• 1 cup moderately flavored extra-virgin olive oil
• 1 tablespoon vanilla extract
• 1 (16-ounce) container of whole-milk ricotta cheese (about 134 cups)
• four enormous room-temperature eggs
• Confectioners' sugar for final cake coating
INSTRUCTIONS
Preheat the oven to 350 degrees Fahrenheit. Coat the Bundt pan with cooking spray, making sure to get into all of the crevices.
Combine the flour and salt in a mixing bowl.
In a large mixing bowl, combine the sugar and lemon zest until the sugar is moist and aromatic. Whisk in the ricotta and eggs until well-mixed.
Whisk the flour mixture into the wet ingredients with a rubber spatula until thoroughly combined. (I use a whisk here and there to help blend the flour into the thick batter; just don't overbeat the mixture, or you'll end up with a less-tender cake.)
Fill the prepared Bundt pan halfway with batter, smooth the top, and tap the pan lightly. Cook it for 40-50 minutes. To be safe, I usually start checking mine at the 30-minute mark.)
Before carefully transferring it to a rack, cool it for 15 minutes completely. The cake can be kept covered for 2 to 3 days. (I kept mine for a few days on a cake plate covered with a plastic cake dome.)
WHAT IS THE MOST IMPORTANT INGREDIENT IN MOIST CAKES?
Without a doubt, the secret to this show-stopper is ricotta. It makes richer and moisture to the cake quickly.
WHAT TASTE DOES LEMON RICOTTA CAKE HAVE?
The icing adds a hint of blackberries to the cake's strong lemon flavor.
Ricotta cheese is perfect for the dish. It has a beautiful buttery crumb, and the brilliant yellow flesh contrasts beautifully with the rich crimson blackberry glaze!
It's stunning, as are all ricotta desserts. When you serve it to your guests, you'll feel so happy and prosperous! You can also make Martha Stewart lemon ricotta bundt cakes. If you're on a diet, a lemon ricotta bundt cake without gluten would be preferable.
NOTES
* I use olive oil in a lot of my baked goods because I like the depth of flavor it adds; the Italian perfect lemon ricotta bundt cake is very healthy!

Vegan Dishes For The End Of Summer
As you know I am an “almost vegan” who can never be a real vegan but who eats only a little bit of egg or meat every day. For example, an occasional egg white for breakfast, or a strip of turkey bacon for a sandwich. And the secret of being an almost vegan is to seek new recipes all the time. Since I am lazy as far as cooking is concerned, I always look for easy recipes. I have to say some…

Literally One of the Best Snacks Ever!
But I don't really have a title for it, it's just kind of mozzarella ball saucy thing. 🤭 But it's delicious, you won't regret making it!
Note: It's super simple too and it requires no cooking!
Ingredients
Fresh mozzarella (It can either be a mozzarella ball, the mozzarella pearls or also, a mozzarella log, pretty much any form of fresh mozzarella will work in this recipe.)
Black pepper (I personally prefer cracked black pepper, the one with the little grinder on top of the bottle. But really any black pepper, I've also used regular ground black pepper and it tasted just as lovely.)
Pizza sauce or marinara sauce
Olive oil
Honey (Any honey will do but I personally use raw honey)
Optional: grated Parmesan cheese or Parmesan reggiano cheese (The kind in the plastic bottle with the little green or red topper shaker lid.)
How to make
Cut the mozzarella anyway that you'd like if it is a mozzarella ball or log, if it is a little pearls just last many of them as you'd like out onto a plate.
Put put a little olive oil onto them, sauce, black pepper, honey, and then, if you so choose to, grated parmesan or parmesan reggiano cheese.
That's it, that's literally the entire dish, there is no more that you need to do, if you choose to do something else then by all means do it to suit your taste but other than that you're finish. I hope you enjoy this snack and if you try it, please let me know what you think of it!

•┈••✦ ❤ ✦••┈•
Ingredients:
Ground Beef or Turkey
Any Rice
Garlic Powder, Onion Powder, and Season All Salt
1-2 Eggs
Grated Cheese
Optional: Salsa
Optional: Onions
Optional: Peppers of any kind
•┈••✦ ❤ ✦••┈•
This recipe utilizes your leftover ingredients and staples most people usually have. An interesting dish my boyfriend showed me, that has fed us well in our down bad days.
Steps:
Prepare your rice and set up the rice cooker. Of course, stove top rice can be used, it's just way easier in the Cooking rice takes the longest and is susceptible to sticking to the pot, making clean up a hassle. I always clean my rice with 2-3 scrub. If not the starch will bubble out the pot's steam hole. It takes around 15min for the rice to cook this way.
Optional: Chop any veggies you would like to add. Sometimes we dress ours up with chopped green onions or mini sweet peppers.
Prepare your meat of choice. Every meat we cook, we use powdered onion, powdered garlic, and season all salt. Mix your seasonings and meat together and pan fry it. I usually keep the knob around 7 and 8 or between high and med. You'll know when the meat is done because it will go from red/pink to a rich brown. If you're not sure, smash a chunk open and see if there is pink still inside. This can be done while the rice is cooking and will be finished by the time the rice is.
Add your eggs. Turn the heat down to about a 5 or between low and medium, you don't need too much heat for the eggs and the future cheese. I usually just add the eggs directly into the pan with the meat after draining the fat. I then mix well enough that the egg yolk breaks. Once they're cooked you can add the other ingredients.
Add optional: veggies. If you are adding veggies, let them cook a little with the meat and eggs to get softer and spread their flavor.
Add Rice and Cheese. Mix everything together in the pan. When everything is evenly mixed you're ready to serve.
Optional: Top with salsa. To give a little more flavor and some spice, salsa is a great addition to mix in when eating.
