So my online grocery order glitched and I ordered 3x more spinach than I had intended to last week. In a frantic attempt to find some way to keep it from going bad on me, I made a TON of Spinach Artichoke Dip.
Thankfully the recipe I found was AWESOME and stupidly easy! It's a crock pot recipe so while it takes 1-2 hours, you're really just dumping ingredients in and letting it cook. Though you wanna stir it a couple times throughout the cooking, you're really not spending much more than 10 minutes prepping the dish, and most of that is rough chopping spinach.
Tips:
-I HIGHLY recommending adding more salt (and cheese) than the recipe calls for. It'll ultimately be to taste, and you can always add more salt to an individual serving if you wanted, but the first time I made it, it needed a little more salt.
These go great with tortilla chips or thinly sliced little toast pieces!

GRINCH DIP
*Aka Baked Spinach Artichoke Dip*
Ingredients
10 oz frozen spinach, thawed, squeeze excess water out
7 oz artichoke hearts (like half a can), squeeze excess water out
8 oz cream cheese, softened
½ c parmesan cheese *
½ c mozzarella cheese *
¼ c mayonnaise
1 Tbs garlic, minced *
1 tsp oregano
½ tsp basil
*measure with your heart- I definitely round up
Method
Preheat oven to 350°F
Chop artichoke hearts, spinach, and garlic until well incorporated - I use a good processor to break down the artichokes first then add the other two for a few pulses
Mix everything together
Spread evenly in a shallow oven safe dish - I have a designated dip dish
Bake for 25 minutes until warmed through
Serve with all the carbs - I usually have an Italian loaf of baguette with it
Chopping the veggies in a food processor together spreads the green through the dip in ways usually avoided by folding in the spinach carefully. This was an accident on my part that renamed the whole dish and is now a requested variation.
