People are right, the portobello mushroom does have a meaty taste to it. I haven't tried them since I thought all mushrooms tasted the same (the button ones are the ones I usually think of.) I made a stir fry with the portobello. Turned out nicely.
A cheap, delicious, and low-effort stirfry recipe I’ve been enjoying! The sauce is inspired by these seasoned bean sprouts. It’s great with just bean sprouts and garlic, but today I used some leftover ham, fried tofu, onions, and green peppers.
First, fry anything that you want to flavor the oil: onions, garlic, ham, etc. If you’re using any non-bean sprout veggies, slice them thin and add them now. Mix the sauce—1.5 tsp each ponzu, mentsuyu, and sesame oil, 3.5 tsp kombu dashi powder, a pinch of sugar, and vinegar/lemon and chili oil to taste. Once the other ingredients are cooked, add the bean sprouts to the pan, cook til translucent, then add the sauce and toss to coat. Optional sesame seeds and green onion to serve.

General Cho’s Chinese Chicken Soup Dumplings, Spicy Tuna Roll, Stir-fried Malaysian Noodles w/Tofu. ChoLon Modern Asian (Central Park). Denver, Colorado. 5.17.2023.
NOTE TO SELF: I had higher expectations for this meal, but I probably would have liked it more without them. Nothing bad, but nothing to die for. The Malaysian noodles were not the kind of noodles I wanted. They were wide and flat. I confused them for bamboo shoots.
