I really don't make stuffed sweet potatoes enough. This recipe was an attempt to reconcile that and, let me tell you, it did not disappoint.
I made about a third of this using 1 1/2 sweet potatoes. This really packs so much flavor, with multiple spices, fresh ginger, plenty of suggested toppings, and the most divine tahini sauce.
My only note here really is that I definitely did not need to add water to my sauce, as the consistency and flavor were just about perfect before I ruined things by following instructions too closely.
As a result, my final serve was a little bit soupy, but thankfully that far from ruined this experience. As I said, there is just so much flavor and texture at play here, all culminating in one of the best meals I've made myself in a while. I can definitely see myself returning to this, as it truly is triumphant out of dinners in my recent memory, a sure sign I need to be prioritizing stuffed sweet potatoes more in my everyday cooking.

U2 Live in Paris was filmed in a very Bono-centric way, but Edge looked like an angel whenever he turned up. And you know? I'd forgotten how tethered they were to all their cables back then, and how tech guys would have to be running around the stage the whole time. The youth of today will never see such things in real life! :)
