Oatmeal Souffle/Mug Cake/Thingy! Today I tried an oatmeal recipe by @toriv.fit and sent to me by @kaitlynkennafitness. It's made by blending some oats, milk, syrup, baking powder, and protein powder and then baking at 350° for 15 minutes (after adding peanut butter and chocolate chips.) Mine did not have the same consistency as her video, but I did make slight alterations. For instance: I added some PB Powder and I used coconut milk instead of almond milk (and likely too much of it.) I also used a broken up zero sugar Hershey's bar, but that's just genius on my part. 😉 You can always adjust as needed. The texture of mine was sort of like a mug cake only better. I also used Cinnamon Cookie Batter Level-1 but I think another flavor would have been better suited. Regardless, it was fantastic! Will definitely have to make it again. Perhaps I'll shoot for lower carbs in the future. 😬 By the way, I always recommend 1st Phorm protein powder and American Dream Nut Butter. Happy Oating! Air Fried Steak Last night's dinner was a thick cut ribeye steak done in the air fryer with a while mess of parsley butter and a vegetable medley. I was skeptical at first but it was surprisingly pretty tender! 10/10, will do it again. Yum!! I cooked it at 400° for a total of about 8 minutes I think (4 minutes per side) on account of it being so thick. Big Meaty Breakfast A huge ribeye steak, scrambled eggs, and two slices of crisp bacon. The steak was seasoned with coarse salt and leftover Red Robin seasoning. After cooking, it was smothered in butter and sprinkled with parsley. The eggs were cooked in the bacon grease and covered with sriracha. I was going for medium rare, but since I was too hungry I didn't bother searching for my thermometer (that I somehow lost yet again.) Eggless Savory Pancakes with Salsa I whipped up some eggless pancakes with tomato, onion, jalapenos, and cheese and then smothered them in medium style salsa from @salsa_aguilar. (Not an ad! I just really like their salsa and highly recommend it. I don't get anything for saying that, I swear! Haha.) There may or may not be some beer in the batter (and the "chef.") I do wish I enjoyed pancakes more. I just really feel like something was lacking. Anyone have any suggestions/tips? Fried Tomatoes with Grated Parmesan over Fresh Greens with Fried Polenta, Mac'n'Cheese and a BBQ Vinaigrette Drizzle. I agonized over this dish. I visualized how I'd put it together and how to plate it... and yet I'm still not super satisfied with the "messy"ness of it. I gotta say though... it looks delicious and it was! Labor Day 2019 Special Burger It's a real chore thing to finish this monster! I ate half, which is the probably the size of a "normal" burger. Two beef patties, here. I didn't make then myself but I seasoned them with salt and pepper and basted them with bourbon (of course) throughout cooking. The order of ingredients is: Buttered/Grilled slice of whole wheat bread/toast, a slathering of spicy/tangy chipotle sauce, beef patty with melted swiss, grilled onion, three slices of crisp bacon, slice of toast, second patty with swiss, grilled onion, a few picked jalapenos, more bacon, a fried egg (with a not overly runny yolk in honor of my good friend Ken), ketchup, mustard, a whole mess of mayo, and grilled/buttered top. Served with a pickle spear and red raspberry wine (I don't have any dry wine nor do I really care for it.)
