Instant Pot Shredded Hummus Chicken
This Instant Pot Shredded Hummus Chicken is a simple, healthy recipe that can be made during food prep and served alone or in a wrap for a quick lunch or dinner.
Hi friends!
As you may have guessed by now, my love for the Instant Pot knows no bounds. (Here’s the {affiliate} link to the one I have) It’s time for another month of the Recipe Redux. This month the theme was “Spring Clean the Kitchen” and we were challenged to make a meal using at least 3 items that were currently in our fridge or pantry.
I’m gonna let you guys in a little secret: I’m pretty good at food prep (I even wrote The Ultimate Guide To Food Prep) but I’m not the best at meal planning. There was a time when I would sit down every week and plan out all of my meals for the week ahead. I think that’s a great idea and I regularly encourage people to do it. However, for me personally, I much prefer to just head to the store, stock up on some healthy staples and then throw things together during the week based on how I’m feeling.
I guess what I’m saying is…this challenge is pretty much what I do several times a week in the kitchen. I have a standard list of things I buy every single week at the store – eggs, milk, yogurt, bread, peanut butter, etc…and then some things that vary slightly week to week like specific vegetables, types of meat etc. Once my fridge is stocked, then I figure out how to turn all the components into a meal.
Instant Pot Shredded Hummus Chicken
This Instant Pot Shredded Hummus Chicken is something I’ve made a couple of times now. I make either shredded chicken or pork pretty much every week in my Instant Pot and I’m always looking for new ways to flavor it. (This Instant Pot Asian Chicken is one of my favs). When I was coming up with this recipe, I was looking for a new way to flavor the chicken. Hummus is one of those things I usually buy weekly. I’m terrible at remembering how much we have left week to week so I usually just grab a couple no matter what…which occasionally leaves us with a surplus.
Since I knew I needed a little liquid for cooking, I mixed it with some broth (which I always have in the pantry). Then I added some garlic and some sriracha (another pantry staple) to give it a kick. Mix it all together into a sauce, pour it over the chicken and boom! 20 minutes later the chicken is ready to shred and eat.
This chicken would be great on its own, served with some rice and veggies and is perfect for prepping during a food prep session. Last week I ate it a lot for lunch and I really enjoyed using it in a wrap. Tortillas, cheese, red peppers and avocados are also things I tend to always have on hand. I also keep some 100 cal Wholly Guacamole packs in the freezer for times I run out of fresh avocado!

Ingredients
1.5 pounds boneless, skinless chicken breasts
3/4 cup hummus (I use plain or Supremely Spicy)
1/2 cup broth
3 cloves garlic, minced
1 - 2 Tbsp sriracha (optional, to taste)
For wraps: tortillas, bell pepper strips, sliced cheese, avocado
Instructions
Place chicken in the Instant Pot.
In a small bowl, mix hummus, broth, garlic and sriracha until well combined.
Pour sauce over chicken and stir to coat.
Cook in Instant Pot for 22 minutes.
Remove chicken, shred and return to pot.
Serve immediately or use later to make wraps: Smash avocado and spread over whole wheat tortilla. Top with shredded chicken, bell pepper strips and cheese (optional). Place in a panini press until heated through.

This chicken will be a little bit liquidy. If you’re using it on a wrap, I’ve found it works better to make it ahead of time and let cool before using. If using it right after making, use a slotted spoon to add to your wrap. Play around with the amount of sriracha depending on how spicy you want it. I like to use spicy hummus AND add sriracha but you could easily use plain or roasted garlic and then add some for less spice.
You could also use this chicken on salads, nachos, in grain bowls, etc! If you don’t have an instant pot you could try this in a slow cooker….you just might need to add a little more broth.

1/5/17 VLCD Day 1
So it begins...
I did my 2 loading days, and so my weight this morning was 209.8. Gee- right back where I started 3 months ago, but ok- get over it.
This morning I had 2 cups of coffee with heavy cream and a little sugar free creamer. As I mentioned, this is not “on plan”- plan calls for 1 tbsp milk per day, but I probably have a tbsp in each coffee, plus the sf creamer. I struggled with what creamer to buy- all natural with fat and sugar but not as processed, or the sugar free which is full of all kinds of things, but not much sugar or fat. I had previously given up artificial sweeteners, so I didn’t even enjoy the artificial taste, but I’m sure I’ll get used to it quickly.
Lunch was a 8 oz container of chicken with ginger bone broth (45 cal). I added 1/2 pkg of John Soules Foods grilled chicken (100) and 3/4 cup frozen green beans (25). I had my exciting grissino bread stick (25) for a total of 195 calories.
Dinner was 1/3 Chicken Chili Verde meal (140), and a cup of arugula (5). I didn’t have the breadstick since the meal was not really on plan although it was very low in calories, sugar (2), fat (4), and carbs (5). So dinner’s total is 145.
I got an infusion water bottle for Christmas, so I am putting frozen berries in it, and since I have no idea how many calories I get from that, I am just skipping one of the 2 fruits. I will have some plain vanilla chai tea and an apple (75) for a snack later.
If I say I had 2 tbsp cream (120) and 1 tbsp sf creamer (15), that would bring my daily calorie tally to 550. I am supposed to be under 500.
Oh well- it is going to be very hard to stay under 500 calories, let’s just see how the weight loss goes. I was doing a lot of online searching, and it is said that you can stay on the diet phase for as long as 40 days if you have a lot to lose, which i certainly do. I cannot imagine staying on this for 21 days, let alone 40. The most I’ve ever done was 10 days, and it was very modified- more like atkins with no breakfast and HCG drops. But you know what? I have to keep in mind that this is MY diet and MY body. I have committed to weighing daily (during the week only- on the weekend I go to the other house and there is no scale there). I am just going to monitor my weight and make adjustments as needed. The book I read by Jory Ames was very inspiring- in part 2, which covers the last 6 months of her weight-loss journey, I think she only lost 6 pounds in total (beginning weight minus ending weight). During the whole 6 months, she had month-long plateaus, she would go up 7 pounds, and then go back down, but she stuck with it. I feel like I definitely would have given up, I let the scale screw with my head. She was very committed, and though it drove her crazy, she stayed the course.
I did go down to the YMCA and weigh in for the contest, which is about 3 months long. If I am the woman that loses the most weight, I could win $300 and a free membership. That doesn’t really matter though- I just want the weekly weigh ins to stay accountable, and possibly prepare myself for Weight Watchers meetings in the future.
I felt very hungry today, but I know from past experience that goes away in a few days. I was a little headache-y from the sugar withdrawals, but not so bad that I even needed an aspirin. My attitude was great- I think I’m just happy to be “back on a program” instead of mindlessly eating (I did eat an entire almost half-gallon of the Breyers Mint Chocolate Chip in one day- I knew I could do it). I was getting shit done today, and there is plenty to be done. The food I ate was tasty, so that was good. I think that will be the hardest thing. I don’t mind not having much variety, but I have to be enjoying the little food that I have. I live to eat, not the other way around.
I’m going to sit and watch a diet documentary on Netflix, and then early to bed. One day down (39 to go?)
Doubtful.
