How come Pesto keeps beating up Squit? What caused Pesto to get riled up so easily toward what others say?
Sorry for taking over a year to answer this. It was a hard year for me to think about Animaniacs lore and such, but I'm trying to get back to it.

I'll start by saying the obvious, which is that the character Pesto is parodying is also short tempered. Pesto takes that to a comedic extreme by taking even completely innocent comments to be insults. His entire character is a parody of that one scene from Goodfellas (Rated R movie warning). That's not the kind of analysis you're here for, though. :)
Pesto seems to be both insecure and arrogant. He has an inflated view of himself but not always the highest intelligence, which is part of what leads him to twist Squit's big words into meaning things that they don't. I would say that the other half of it is that he expects to be insulted. He's insecure enough that he thinks everyone around him is out to get him. He jumps to conclusions without really hearing what Squit is saying and becomes extremely defensive at even the slightest provocation. He feels that he has to constantly prove his tough guy nature.

Why Squit in particular, though? Pesto doesn't do this with anyone else. There's something that makes Pesto default to hostility when it comes to Squit. I think a lot of it has to do with Squit being the newest, most naive member of the Goodfeathers. Pesto was always suspicious of him and is always looking for a reason to resent him, even though Squit is a super nice guy in reality. It's like Pesto wants Squit to be mean to him, to insult him. He wants a reason to dislike Squit. Maybe he's unnerved by how nice Squit really is. That's foreign to a tough gangster type like him- it might seem insincere. I would say that he's looking for a reason to kick him out of the group, but he continues to do this even when he's warmed up to Squit being a full-on Goodfeather.
So in conclusion, I would say that Pesto has a superficial tough guy personality that he feels the need to maintain because of his insecurity. It's just the way that he was brought up. He's also scared, anxious even, that people around him are going to make fun of him. He has a fragile ego, or a low self-esteem, or both. If he feels like he's being made to be the butt of a joke in any possible way, he reacts with extreme aggression. He just can't take it.

Back IN MY DAY Pinky and the brain had an entire episode in black and white that was a parody of the Orson Welles movie "The Third Man" from 1949 and they made 0 effort to explain this to its then mostly child audience.

While Goncharov posting was (and, to a certain extent, continues to be) fun, I do regret that the trend seems to have reduced Scorsese himself to a meme on Tumblr.
Like, when people on here respond to every post that mentions his name by jokingly bringing up the nonexistent movie that he supposedly directed, do they know that they're talking about the very same man that cast Shinya Tsukamoto—the underground filmmaker behind such deranged, perverse cult classics as Tetsuo: The Iron Man, Tetsuo II: Body Hammer, and A Snake of June—as a devout Christian in Silence?
Was anyone who hopped on the bandwagon even aware that Scorsese played Vincent van Gogh in Akira Kurosawa's Dreams? Or, to lower the bar a bit, that he voiced Sykes in Shark Tale?
I mean, Jesus Christ, are any other users on this site old enough to remember the Animaniacs episode in which the Goodfeathers' preferred hangout spot is a statue sculpted in Scorsese's likeness?
It's time we stopped degrading Scorsese's legacy by falsely crediting him with entirely fictional accomplishments... and started acknowledging the objectively hilarious things that he's actually done throughout his career.
