Ajax's bloodlust and quick temper are a consequence of his time in the abyss and if you pay attention the same can be said for Signora.
It presents differently for each of them: Ajax takes his bloodlust out on opponents on the battlefield, where as Signora takes it out on her subordinates.
She carries this air around her that she's superior and doesn't have any need to interact with anyone of lower status or power and she isn't the first to throw herself at a fight. However, I think that attitude stems from the appeal of a strong opponent. She doesn't want to waste time with lower opponents that she knows she's stronger than, she gets no entertainment in breaking them. Save for her subordinates but thats largely because of the power dynamic at play there and she knows her subordinates are stronger than the average Teyvat citizen.
Khaenri'ah is canonically an underground nation and likely existed in or not far from the abyss itself much like how Enkanomiya fell into the abyss during the war between the Primordial One and the Second Who Came. During and just after the cataclysm there was an incredibly strong and constant amount of abyss magic in Khaenri'ah as the abyss order was corrupting the people and using the nation as a gate to Teyvat. I'm under the impression that as the Crimson Witch, Signora spent those 500 years down in Khaenri'ah or somewhere not far from the original nation as there's no trace of her fire, via scorch marks, anywhere in the current explorable area of Teyvat and with the information we have Khaenri'ah may possibly turn out to be underneath Mondstadt.
We canonically know that prolonged time in the abyss distorts your mind: Rhinedottir, The bloodstained knight, Ajax, etc.
I think it shows in her attitude towards the duel with the traveller as well, that Signora had been itching for a genuine fight for some time now. And stood before her was someone she knew would be a strong opponent.
