Ok so I like to think that Keith has really thick wavy coarse hair, (I’m definitely not projecting) when he was younger and in the system he had no fucking idea of how to get it to behave. It was super coarse and if he brushed it, it would only get frizzy and be even harder to deal with.
Any foster parents he had that bothered to notice what a mess his hair was, didn’t really know how to care for textured hair and usually just made it worse.
People tried to get him to cut it shorter but he wouldn’t let anyone near it. (He’s skittish around other people, and likes that he can hide behind his bangs.) eventually they gave up trying to mess with it.
When he met Adam and Shiro he still wasn’t aware of the fact that his hair was in-fact not straight, and just kept trying to brush it down into a manageable mop. Adam (a wavy haired king) automatically recognized the puffy mess as uncared for wavy hair and started giving him tips to deal with it. Like using lots of conditioner, for the love of god not dry brushing it, and scrunching it while damp to better form curl clumps.
At first Keith thought this was stupid and too much work, but eventually realized that he liked how it looked a lot better, and the annoying frizziness was under control.
Then the Kerberos mission happened and he stopped caring. His hair became a rats nest again and he usually just tied the longer parts back.
Then he got launched into space and got stuck being a defender of the universe. So between training during his free time, and doing his paladin duties he didn’t really have time.
Until Lance saw Keith after a shower one day with his hair still damp and realized that Keith’s hair actually wasn’t that horrible, he just wasn’t taking care of it. He then forced Keith into his hair care boot camp, and refused to leave him alone about it until he actually took care of his hair. (Lance is absolutely not pining for Keith and how soft his hair looks if he actually conditions it. And he’s definitely not using this as a chance to spend more time with him. Lance would never to something like that.)
Eventually it just becomes a part of his routine, and boy does he thrive with routine. (He has a touch of the tism. More than a touch actually) and just keeps going with it.
He’ll tie it up when training sometimes, as it got longer over the years he braided the back to keep it out of the way.
I just like thinking about these silly little headcannons

when hair care products say “use a dime sized amount” this is what my long, thick, frizz-prone, wavy-curly hair knows they mean

Some days my hair is just so much to handle and it goes straight into a ponytail so it’s one less thing to deal with
