Hey!
It's my first post on tumblr and I gonna talk you about some vegan breakfast ideas (ED friendly).
Tofu "cottage cheese"
1/3 of 250 g tofu pack
1-2 g zero kcal sweetener
Some oat drink
Mash it with a fork and mix with a plant yogurt. Add a handful of blueberries, some roasted sunflower seeds.
2. Black tea with combo of bread, vegan spread and vegan mozzarella
3. Unsweetened cornflakes with oat milk
4. Oat milk coffee and sandwiches
Grain bread, vegan spread, tomato sauce, nutritional yeast, chilli pepers and salt, tomato slices and fried tofu (oilfree)
5. Smoothie
Chocolate oat milk, scup of spy protein, 2 handfuls of blueberries (you can add zero kcal sweetener if you like)
6. Vegan apple pie and oat milk coffee

I have 2 lb of regular firm tofu (not silken) to use up. Most recently I made green beans and tofu with peanut sauce. We also have spinach so I could make spinach "paneer" with tofu.
I mean I also know another dozen recipes I could try, but I'm in the mood to try something new so was wondering if anybody has favorite tofu recipes they would like to share.
*preferably recipes that do not rely on soy sauce for flavor

Tofu veggie scramble
Ingredients:
Extra-firm tofu (no need to press it; just break it apart into scramble-like pieces)
Turmeric (optional; for colour)
Onion Powder
Garlic Powder
Nutritional Yeast (or cheese)
Salt
Your choice of vegetables
Method:
Drain the tofu, then break it apart using your hands or a couple of forks until it resembles scrambled eggs.
In a bowl, mix together the tofu, nutritional yeast, garlic, onion, salt, turmeric, paprika, and pepper. Let it sit for 5 minutes to let the flavors meld.
Sauté the tofu on medium-low heat until hot (about 8-10 minutes). You can use a nonstick pan without oil, but if you prefer, use 1-2 teaspoons of oil.
Roast and serve with your favourite vegetables (think tomatoes, spinach, mushrooms, or zucchini)
Variations:
Veggie Variations: ➔ Spinach and Tomato: Sauté spinach and cherry tomatoes with garlic before adding the tofu. The vibrant colors and flavors will elevate your scramble. ➔ Bell Peppers and Onions: Dice bell peppers and onions, then cook them until slightly caramelized. Mix them into the tofu scramble for a sweet and savory twist. ➔ Mushrooms and Kale: Sauté sliced mushrooms and kale until tender. Fold them into the tofu mixture for an earthy flavor.
Spice It Up: ➔ Add a pinch of red pepper flakes or a dash of hot sauce if you like some heat. ➔ Experiment with different herbs like fresh basil, chives, or parsley for added freshness.
Cheesy Goodness: ➔ Besides nutritional yeast, you can also sprinkle in some vegan cheese or dairy-free feta for extra creaminess.
Texture Play: ➔ For a crunch, toss in some sliced almonds or sunflower seeds. ➔ Crumbled vegan bacon or tempeh adds a smoky flavor and texture.
Serving Ideas: ➔ Serve your tofu scramble on whole-grain toast, in a wrap, or alongside avocado slices. ➔ Top with a dollop of vegan sour cream or a sprinkle of chopped green onions.

We've been passing by Soy & Bean Stores 豆腐小店 thinking that they only sell taho drinks and desserts. Turns out it also offers Chinese Tofu (50php/400grams), Korean Tokwa (50php/400grams) and even Sisig Tofu (130php/tub). Just like any Asian household, we often use Chinese Tofu and Korean Tokwa as an affordable, healthy and versatile food ingredient. ⭐️ Tofu Cacciatore 😋 Check out this recipe 👊 Growing up, I used to love Pollo Cacciatore. Having been plant-based for 17 years now, here's my version using tofu. The exact same recipe, just swap out the chicken for tofu. I like to bake the tofu after coating in cornflour, garlic powder, and herbs. Then, using garlic and onion? Create your base. Add baked tofu, tomato 🍅 olives, white wine, herbs, and that's it. A one pot dish is yes for me. Serve with pasta or foccacia bread. Who's making this one?
