Potato Varieties
Potatoes are a beloved staple in many people's diets, and growing your own can be a rewarding and delicious experience. With so many varieties of potatoes available for sale, choosing which ones to grow can be overwhelming.
CATEGORIES OF VARIETIES
Potatoes can be categorized in several ways, including their skin color, flesh color, and time to maturity. The most common skin colors are red, yellow, and white, with red potatoes having a more robust flavor and yellow potatoes having a buttery taste. Flesh colors can range from white to yellow to blue. Time to maturity can vary greatly, with some varieties taking as little as 70 days to mature and others taking over 120 days.
TIME TO MATURITY
There are three basic categories of potatoes depending on the time it takes to mature from planting to harvest. It’s important to note that many potatoes can be harvested early, while immature, with the potatoes being smaller but still perfectly edible and delicious.
Early Season Potatoes
Early-season potatoes are typically harvested between 70 and 90 days after planting. These potatoes are perfect for gardeners who want to harvest fresh potatoes early in the season. Early potatoes are usually small, with thin skins and a delicate flavor, and may include “new” potatoes - aka potatoes harvested before reaching full maturity.
Mid Season Potatoes
Mid-season potatoes take around 90 to 110 days to mature. These potatoes have thicker skins and are usually larger than early-season potatoes. Mid-season potatoes have a more balanced starch content than early-season varieties and are commonly used in salads and soups. Mid-season potatoes can store well for several months, making them a popular choice for winter storage.
Late Season Potatoes
Late-season potatoes are harvested approximately 110 to 135 days after planting, usually in late summer or early fall. These potatoes take longer to mature than early and mid-season varieties, but they produce higher yields and are ideal for storage. Late-season potatoes have thicker skins and denser flesh, which lends to a longer shelf life than other types of potatoes, making them an excellent choice for winter storage.
COLOR
Potatoes can also be categorized by their color.
White potatoes are the most commonly consumed variety of potatoes. They have a mild, delicate flavor and fluffy texture, making them perfect for mashing or baking. This category includes the Russet potato, the king of baked potatoes.
Yellow potatoes, also known as golden potatoes, have a buttery and rich flavor with a creamy texture, making them a popular choice for mashed potatoes, roasted dishes, and soups. They are ideal for roasting or frying and are often used in dishes such as potato salad or gratin. Some popular yellow potato varieties include Yukon Gold and German Butterball.
Red potatoes have a thin, smooth red skin that makes their namesake. They have a firm texture, hold their shape well during cooking, and are often used in stews or roasted dishes. Red potatoes are also great for making potato salad or scalloped potatoes. Blue and purple potatoes are relatively new to the market, and I’ve never tried these myself. They reputedly have a slightly sweeter flavor than white potatoes and a nutty, earthy flavor that pairs well with herbs and spices.
HOW TO CHOOSE YOUR OWN VARIETY
When choosing which potato variety to grow in your garden, there are several factors to consider. One of the most critical factors is your climate. Potatoes grow best in cool weather, and some varieties are more tolerant of heat than others. If you live in a warmer climate, choose a variety that matures early in the season before the summer heat sets in.
Another factor to consider is the taste and texture you prefer. Some varieties are better for baking, while others are better for mashing or frying. Consider what dishes you like to cook with potatoes and choose a variety that will suit your needs.
Finally, consider the size and yield of the variety. If you have limited garden space, choose a type that produces smaller potatoes but yields more per plant. If you have plenty of space, choose a variety that makes larger potatoes but fewer per plant.
VARIETIES I'M GROWING
This spring (spring 2023), I am planting Red Luna, Rio Grande Russet, and Yukon Gold potatoes.
Red Luna is a red, early-season potato with red skin and gold flesh, taking 70 days to maturity.
Yukon Gold potatoes are a yellow, early-season potato with yellow skin and flesh, taking 65 days to maturity.
Rio Grande Russet potatoes are a white, mid-season potato with brown, thick skin and white flesh, taking 100 days to maturity.
All of these should suit my climate well and produce high yields. Watch this space for updates!

To anyone wanting to practice understanding dialects (or even just practice listening in general) — try doing a search for “studentradioen i [city name]” and you might find a bunch of student podcasts featuring your target dialect! There are lots of different genres, and you can either listen live or stream them wherever you listen to podcasts.
For example, I found a podcast called “studentmorgen” that I’ve been enjoying from Studentradioen i Bergen! It features different hosts each day of the week and there is a good mix of Bergen dialects with others. Plus, the vibes are somewhat casual, so I feel like I’m getting good insights on what day-to-day conversations sound like.
Would recommend for anyone at a B1/B2 listening level or above! :)
