🍝Pasta and morning star vegan meatballs, daiya mozzarella shreds

Pasta sauce recipe

Ingredients:

2 Tomatoes fresh and 2 tinned

Spinach (big handful)

Mushrooms (half punnet)

1 Onion

2 cloves Garlic

Tomato purée/sauce

Method:

With coconut oil in a pan, fry onion, garlic, fresh tomatoes, and half of mushrooms

Then once cooked, add half of tinned tomatoes and all of the tomato sauce/purée & add basil, salt, pepper, oregano, parsley, red pepper flakes, garlic powder, onion powder and paprika

Then blend

Put into big pot, add rest of mushrooms and tinned tomatoes and add spinach, season a bit more

Cook all through to boil and condense down, done!

Spicy peanut satay stir fry for dinner tonight 👌 I can’t get enough of this sauce, it fuels my peanut butter obsession 😍

Simply mix 1 tbsp peanut butter, 1 tbsp sweet chilli sauce and 1 tsp dark soy sauce with a little hot water until it forms a smooth sauce. Then pour over your choice of veggies and carb!

Absolutely delicious stuffed butternut squash this evening. I had the seedy end of the ENORMOUS butternut squash I got from @riverford left over and I decided to stuff it with a noochy lentil and veg mix and bake it in the oven. It was so tasty and the butternut squash was a particularly flavourful one too 👌

I got a butternut squash in my @riverford veg box this week and just knew I had to make @lizmoody’s unnamed one pan rice dish. I think I’d call it Sunshine Squash Risotto ☀ because this dish is freaking delicious! I subbed dried cherries for chopped prunes which was really tasty. I can’t wait to eat the leftovers for the rest of the week 😄😄

This evening I was inspired to make potato cakes. These potato cakes were actually gluten free as I used rice flour which adds a really nice flavour! I had them with an aldi piri piri burger and delicious @riverford veg 👌🙊

I mashed 180g of precooked potato and added about 25-30g of rice flour and a little salt and milk to mix. I then shaped them and fried them until they were crispy and golden brown 😍

bbq tofu with garlic lemon pepper potatoes 🥔 and sautéed bok choy 🥬

To make the potatoes I just chopped a few then put them in a pan with some water and the lid to steam/boil them. They cooked in under 10 mins, then I just added some vegan butter, garlic powder, lemon juice, and black pepper. Mash it all together and that’s it ☺️

For the tofu I just sliced extra firm tofu and pan fried each side for a couple of minutes in olive oil. Then at the end I added some bbq sauce to each side and cooked for a few more minutes.

The bok choy I washed and chopped the ends off because I don’t like the horse radish flavour they have 🙈 and sautéed them for a couple minutes with garlic and olive oil. Super simple and delicious 😋🌱

So I’ve literally been looking for this meal kit for about six months and last week I finally found it in @morrisons! I didn’t manage to take any photos of the meal itself as duck pancakes are a rather unphotogenic thing to attempt to photograph. But I tell you, they’re so good! So similar to the takeaway ones, I would bet that a meat eater would be content with these 🤗🤗

I haven’t cooked pasta for a while so time for simple, delicious, absolutely fake Italian pasta is now! 😌

1. What is required:

  • ~ 100 g. pasta of choice (my choice is spaghetti, classic)
  • 2 vegan sausages
  • 1 yellow onion
  • 2-3 garlic cloves
  • 400-500 g. marinara or any tomato sauce
  • 2 tbsp nutritional yeast
  • 1 tbsp olive oil
  • chili flakes, chili powder, rosemary (optionally)
  • salt to taste

2. Cook the pasta according to the package’s instruction. Save some pasta water for the sauce.

3. Cut sausages diagonally into thick pieces. Roast them in olive oil until crunchy and brown. Remove the sausages from the pan and set aside.

4. Cut the onion into cubes and slice garlic cloves. Fry the onion and garlic in the same frying pan until slightly golden. Add more olive oil (or splash of water) to deglaze the pan if needed. Add spices.

5. Add tomato sauce and nutritional yeast. Cook for 10-15 minutes adding pasta water. It makes the sauce thicker how I like. If you are pretty happy with the consistence, don’t add it.

6. Add cooked pasta and sausages. Stir well.

It turned out so good. The only one minus of this pasta is that I ate two plates of it 😅 I was so full after this so breathing was a challenge. Don’t repeat my mistake.

Besides, I am glad I cooked it.
