Filipino Food - Pinoy Food
From top to bottom: Pancit Malabon, Lechon Kawali, Sinigang, Lumpiang Sariwa, Sago and Kare-Kare.
In line with the major waves of influence that have enriched the archipelago's cultures, the style of food making and preparation and the dishes that go along with it have evolved over many centuries from a largely indigenous base shared with maritime Southeast Asia with diverse influences from Chinese, Spanish, and American cuisines. Other influences have also adapted to local ingredients and palates.

Spoon & Pork, 3131 W Sunset Blvd, Los Angeles (Silver Lake), CA 90026
Tumblr media
Had a hankering for some pork and garlic, so I tried Spoon & Pork, a modern Filipino comfort food restaurant. The menu includes small plates/appetizers, plates for sharing (patita, lechon, chicken inasal, sisig, beef tapa, caldereta), sides, desserts, and extras (sauces, egg, pickled cucumbers, pickled red cabbage). They offer lunch plates Tuesday – Friday from 12 PM – 3 PM. They have vegetarian, vegan, and gluten-free options.
The food didn’t take long to arrive and it looked delicious.
Pork belly adobo ($16): slow cooked pork belly with adobo glaze, rice, tomato, fried egg. Six thick slices of fatty pork belly slow cooked in a soy-based sauce with sugar, vinegar, and garlic and topped with scallions and crispy garlic bits. The pieces of pork tender were tender. The sauce was a little saltier than optimal but mixing it with the steamed white rice and cherry tomatoes helped. The tomatoes seemed a bit odd to include (they were raw cherry tomatoes) but they did add a fresh component. The fried rice had a runny yolk. The rice was plain steamed white rice. I asked for hot sauce and wasn’t told that the chili crisp was an extra $2. Wish they had included pickles and a sauce rather than charging for every condiment.
The interior dining room is small (would not recommend for large groups) and attractive (black, white, rattan theme). There’s also a sizeable covered outdoor patio.

I forgot who originally did this post but imagine that Bruce plans a culture day/week for half of the bat-family, and the eat different foods.
The first week is focused on Dick. The family mainly eat Xarista, bogacha, Pilaf, Schnitzel, and Xaimoko. Richard is very happy about this because he remembers how his parents used to cook him these types of food at Haly’s Circus. Bruce even bakes him stuffed peppers for his birthday and Dick is very moved he breaks down in tears.
The second week is focused on Duke and everyone eats fried fish, Turkey, Vegan Mac and Cheese, sweet potatoes, Okra, Cornbread, and fruit punch. Duke even uses this time to also thank Bruce and even bakes more of it for black history month at school. Not only does he bring it to those who are part of the black student union at his school, but he and the other members even serve it during lunch.
The third week is focused on Damian and the entire family eat Couscous, Falafels, Moutabel, Hummus, Vegetarian fried rice, Crispy bottom pan-fried vegetable buns with no yeast, and Asian chopped salad. Damian was so moved that he and Bruce agreed that for every AAPI month, they were going to eat Arab, Chinese and many other Asian dishes.
The fourth week is focused on Cassandra and everyone eats Dumplings, dim sum, Kung paö Chicken, Char Siu, Vegetarian Chow mein, Asian chopped salad, stir fried rice noodles with peanut butter sauce, and steamed scallion buns. Cass was also moved by this and when she talks to Bruce in private, she gives him a big hug because she can embrace her roots due to eating food from her culture.
The fifth and final week is focused on Selina and everyone eats Picadillo, Papitas fritas, Boliche, Camarones, Churros, Vegan picadillo, Ropa Vieja, Lechon Asado, and Sandwich Cubano. As everyone finishes eating, Selina thanks Bruce in private for baking all of the food and gives him a passionate kiss in the lips.
(Side note: Selina Kyle is Canonically half-Irish and half-Cuban, but DC has sadly erased her Latina identity.)

The Appreciation in Philippine Culture
I appreciate the Philippine Culture because it is beautiful and natural like the variety of clothes in every region like in Kalinga, they have their clothes and they have a colorful life. And we are colonized by some countries like “Spain”, and “America”, so we live like them and make houses like in Ilocos because they have “Vegan Houses”, and they have Spanish cuisines like Paella, Lechon, Pastillas, and More.
And Philippine Culture likes to feast, so they have many feasts in every region like in Baguio City they have the Annual Panagbenga Festival or “The Annual Flower Festival”. And we have our own Philippine Cuisine like Pinakbet, and other unique dishes and we have cultural dances like Tinikling, and Cariñosa, but the best part is their environment.
Because their environment is so beautiful and they always take care of them like the Chocolate Hills in Bohol, and Rice Terraces in Banaue, and we have beaches like Boracay in Aklan, Palawan, and my favorite “The Thousand Islands”, and we have things to offer you like Kayaking, Swimming, Stargazing and More.

Remember when I posted about our 3-week family sojourn in Mindanao where lechon played a default role—be it on regular occasions or on ordinary Sundays after church? There are a couple of meat dealers and roasters among my Mama’s relatives, so that actually explains the story. My guilty self tried to compensate by having fruits and vegetables, and deliberately ditching meat (specifically red meat) in my consumption. Over time, I have seen the versatility of green leafy produce among others, and I loved the effects that they radiate in my wellbeing. I also owe this transition in my lifestyle to my beautiful friend Tiffany who influenced me to eat healthy.
Tumblr media
There had been challenges through the course, but the benefits could not be outnumbered. Aside from its potential health benefits, it also advocates against animal cruelty, decreases your carbon footprint and thereby, helping the environment even on a small scale. So here’s some wheat fettuccine with fresh Shiitake mushrooms to celebrate 4 years of being a pollo-pescatarian! I still eat chicken though, but I am looking forward to the day when I no longer need to consume any meat in my diet, and become a full-fledged vegan. ☺️

Feature Story of the Moment
Recently, our publication failed to produce a broadsheet so I would like to share my feature article about trends in year 2019.
I hope you will find enjoyment while reading my work. And take time, ‘cause it’s long. Have fun my dear readers.
Bang, Boom, Blast: A Year of Surprises
AA Patawaran wrote in his column entitled “Write Here, Write Now” for Manila Bulletin ’s Philippine Panorama Sunday magazine, “but what I like best about 2018 is not so much what the world has to say about us as it is what we have to say about ourselves. To me, the year 2018 is a return to all that makes us proud about being Filipinos”.
It’s a huge year 2018 to remember for every Filipino as it championed us. We made big leaps in different dynamics and it became our starting line for achieving greater goals in future. From the language we speak, our identity and our diverse culture that made the world roar as well as appreciate our uniqueness, glory and grandeur, we Filipinos should always be proud of ourselves.
Thunderous oinks from even the farthest land begin to roam as the swines begin to speak by themselves while the dogs give way and stop barking for a while. 2018 bids farewell to everyone but the memories we experienced from glorious moments nor heartbreaking defeats are worth-treasuring and reminiscing because they shed light and give meaning to our lives. Yet 2019 is now here and is ready to make some noise for itself.
When new year comes, expect new and surprising things to come in our way. No matter what decisions or steps we choose to tap-in, changes will always pave its way in our hearts and minds. Changes can be good or bad but it makes life more meaningful and thorough.
Year 2019 is a road of unraveling new developments in the world of trends. Why not have a sit and relax for a while as you’re here to witness the latest of innovations and evolution as listed by primer.com.
1. 5G’s Rise to Stardom No question or further arguments, the Internet connection in the Philippines is too slow that you need a decade to just finish downloading a movie. Just kidding! With the development of 5G technology for mobile broadband, it will definitely change the users’ maneuver of their respective devices as they’re set to experience browsing the net, playing online games, downloading their perks and do anything they want in higher speed with lower latency and better capacity.
2. Walls in Living Coral Paints Color authority Pantone has announced that 2019’s color of the year is Living Coral or otherwise known as Pantone 16-1546. Make-up products as well as outfits matching this color is on the way of making the market afire with its simple yet elegant and natural beauty to brighten up the world.
3. Be Healthy with Pegan Diet After spending the holidays with mouth-watering dishes such as fruit salad, lechon and menudo then ending up gaining weight; surely you’re finding a way to lose weight, why not try the Pegan Diet. A diet plan out of the Paleo-Vegan merge which is a current trend across the globe as indicated in Google and Pinterest searches. It’s more of eating real foods such as more veggies, healthy fats, raw nuts while leaving it’s sugary content, gluten and dairy in your respective plates. Want to lose some weight, add this diet regime to your healthy lifestyle routine.
4. Instant Food through One-Tap Delivery Food deliveries made its mark in the market last year and earned a place in this year upcoming trends as it favors most of Filipino households or workplaces who find eating diners at their respective homes and offices more comfortable instead of embarking on a journey which they will encounter heavy traffic problems and increased transportation costs. With just one-tap in an app, just wait for a couple of minutes then the delivery man is now ringing the doorbell to give you your order.
5. Auto-Safe Cars Road accidents can never be predicted by anyone even a good driver who is following road safety guidelines cannot prevent it from happening. Technologies continue to improve life as time passes by and such innovation had reached the automobile industry. Through the invention of lane assist, blind spot monitoring, rear cameras and other accident prevention technologies it is expected that the risk of accidents will now be minimized and controlled unless a driver like you continues to violate rules and is carried away by your emotion.
These are some of the most expected trends of the year 2019 that could make a difference in our lives. Yet other trends are still waiting there to be uncovered, we just need to wait, observe and try them when they come in our way. Let’s celebrate this New Year with a big smile in our face together with these trends of change.

Make Your Holidays Healthier With Plant-Based Dishes From WTH (Worth The Health) Foods
Would you believe that I made this Pinoy Spaghetti without using any meat at all? We had a healthy Christmas day meal using plant-based meat alternatives from WTH - Worth The Health Foods. The holiday season tends to be too indulgent, especially with all those parties and lechons. That’s why I decided to balance our diets a little bit on Christmas Day by preparing a healthy meatless lunch for the family.
Founded by a team of young food scientists, WTH Foods is a homegrown plant-based meat start-up with products made from local ingredients and inspired by Filipino flavors. WTH Foods has taken the challenge of turning vegetables into something fit for our meaty cravings. Their plant-based alternative proteins are sustainably made using local ingredients and creating well-loved Filipino food that is healthy and kind to all – the farmers, the animals, the planet, and especially you.
I received this holiday bundle from WTH Foods which was just in time for the Christmas season. It even came with a couple of Nipa Brew’s best-selling beers. WTH Foods was created to cater to everyone, whether you’re a conscious carnivore doing a detox meatless Monday, an environmental advocate promoting sustainability or a cruelty-free vegan fighting for the animals. It not only boosts your health, but also helps save the planet by reducing carbon emissions from animals used as food sources.
My holiday bundle came with five of their specialty items which were all pre-cooked and ready to heat and eat. These can be easily popped in the microwave or pan fried to your liking.
At first glance, you would think that this plate is full of meaty brunch items, but they are actually all meatless items courtesy of WTH Foods.
WTH Corned Beef (P250) comes with flavorful tender shreds of succulent meaty Filipino-style corned ‘beef’ that can make anyone’s morning. It’s actually made with jackfruit meat and is totally plant-based. Add some onions or potatoes to the mix and you can really fool anyone into thinking they were really eating corned beef.
Another masterful creation is the WTH Sausage (P200). These are 100% plant-based as well but it they are just as smoky, juicy and tender as meat-based hotdogs. It’s still a good source of protein and fiber but with zero cholesterol, so that is really what makes it so beneficial.
Other meatless alternatives include the WTH Nuggets (P250). These crispy "chicken nuggets” are made with jackfruit instead of real chicken. Of course, there is still a slight difference in taste and texture, but it is still so much better than just eating the usual boring vegetables.
The WTH Spring Rolls (P250) are also made from their plant-based WTH Ground Meat which uses mung beans and texturized soy proteins as substitutes. Fry it until it turns crispy and golden brown then enjoy its “meaty” goodness.
I was really proud with my Pinoy Spaghetti using WTH Ground Meat (P250) and WTH Sausage. The WTH Ground Meat is a ready-to-eat mung bean-based protein which can be used in dishes that call for ground meat like spaghetti, shanghai rolls, tacos and more.
WTH Foods is offering a promotion for their Frozen Sampler Bundle of 5 where you can get 5 packs of their plant-based meats for a special price of only P999 (originally P1250). Just use the COUPON CODE: WTH999 on www.wthfoods.ph when you make a purchase.
Another Christmas item they have is the WTH Holiday Ham 500g (P550). This vegan ham is the perfect holiday centerpiece for your family dinner. You can enjoy it on its own or drizzle with pineapple sauce. It’s 100% plant-based, and is a great source of protein and fiber, so you can indulge your meaty cravings without the guilt. The WTH Holiday Ham is only available for pre-order and will be delivered 5 to 7 working days from the date ordered.
Check out their WTH website at www.wthfoods.ph for their other Holiday Bundles and Christmas Bundles. You can also click the Shop button on their Facebook Page to check out their other specialties. Enjoy the holiday season and indulge without the guilt with WTH Foods.
