If you have some leftover vegetables, it's great to use them as filling to make these easy and yummy snacks. Ultra Green Lo Mein *Vegan* Yields 4 Servings. Each servings packs about 474 calories, 19 grams of Protein and 6 grams of Fiber Ingredients: -1 Block of Extra Firm Tofu pressed dry -2 cups of Broccoli Florets -1 pack of Pad Thai Rice Noodles -¼ cup Sliced Bella Mushrooms -1 cup of cut Green Beans -1 tbsp of Sesame Oil -3 cloves of Garlic -Scallion Greens -1 tbsp of Rice Vinegar -2 tbsp of Sriracha -2 tbsp of Low Sodium Soy Sauce -1 tsp Sesame Seeds -2 tbsp of Light Olive Oil Steps: -Place tofu in a tofu press or press dry with paper towels. -Rinse and dry all vegetables. -In a medium sized bowl, create your marinade. Mix together soy sauce, sriracha, rice vinegar and sesame oil. -Once tofu is dry, chop into little squares and place into the marinade bowl, ensuring each piece is saturated with the marinade. (If there is any leftover marinade, save for later.) -In a large skillet on medium-high heat, saute tofu for about 15 minutes. Stirring often. -In a large pot, bring 5 quarts of water to a boil. Once boiling, toss in your noodles for about 5-7 minutes or until they are softened. -When noodles appear softened, rinse with cold water in a colander to avoid any sticky noodles. -When tofu appears slightly browned, add mushrooms and green beans to your skillet. Stir until mushrooms appear slightly browned as well. -Add lo mein noodles to your skillet and mix everything together. Add remaining marinade to your skillet. -Once everything is fully incorporated in your skillet, plate and top with scallion greens and sesame seeds. Yes! I do eat often in restaurants and the food is in accordance with the Medical Medium protocol 🥰 . I usually don’t check to much the menu but I talk to the people (waitress/chefs) and I’m asking for Plant based (Vegan), no soya, no gluten, no corn and no oil (except coconut oil & olive oil). I’m very friendly but also strict! Like: we don’t want to call an ambulance right 😉 . I usually cook even while travelling. I love visiting local markets and grocery stores and try to figure out how to use some of the local ingredients. However this time around I’ve yet to touch a stove due to all the delicious and easily accessible vegan food Singapore has to offer, and surprisingly really cheap. My host took me to this vegetarian spot inside a restaurant “market”, 15mins walk from the apartment. They were so many options laid out buffet style. It was hard to choose 😱. I was very tempted to tell the lady to fling everything she was suggesting onto my plate 😂. I ended up with 6 different dishes which included vegetable fried rice, 2 types of tofu, 2 types of noodles and broccoli because....greens 🤷🏾‍♀️. And whether you guessed it or not...it was so tasty! 😍 Oh and the price! Only 6 SGD...that’s less than 5 USD! 😲 Gosh I can still taste it now. I’ve already left Singapore but I’ll be back soon 😉 Next stop: Malaysia (hopefully for equally delicious vegan food!
