* Quinoa, smoked tofu, edamame and sunflower seeds give this meal a protein punch. 🤛
* The broccoli provides loads of nutrients along with good iron.

Pear vegan cheese salad |Päärynä-vegaanijuustosalaatti 🍐
This makes a side salad for 2-3 people.
Näillä määrillä saa lisukesalaatin 2-3:lle.
Ingredients:
2 kale leaves
Couple of lettuce leaves
2 pears
Handful of vegan salad cheese
5 walnuts crushed
Salad dressing:
3 teaspoons olive oil
1 teaspoon Dijon mustard with seeds
2 teaspoon balsamic vinegar
Pepper
Couple drops of lemon juice
Method:
1. Make a salad bed with kale and lettuce.
2. Peel and slice the pear and place the slices on the salad bed.
3. Sprinkle on the cheese and walnuts.
4. Mix the ingredients for the dressing and pour it on top of the salad.
Ainekset:
2 lehtikaalin lehteä
Muutama salaatinlehti
2 päärynää
Kourallinen vegaanista salaattijuustoa (Porlammin maistuu hieman vuohenjuustoiselta)
5 saksanpähkinää murskattuna
Salaatinkastike:
3 tl oliiviöljyä
1 tl Dijon-sinappia siemenillä
2 tl balsamicoa
Pippuria
Muutama tippa sitruunamehua
1. Tee salaattipeti salaatista ja lehtikaalista.
2. Kuori ja viipaloi päärynät ja laita viipaleet salaatin päälle.
3. Ripottele juustoa ja saksanpähkinöitä salaatin päälle.
4. Sekoita kastikeainekset keskenään ja kaada salaatin päälle.

🍋Lemon Dill Hummus | Creamy, zingy, + irresistible! Recipe Below ↓
* 1 (15.5oz can) garbanzo beans drained and rinsed
* ½ teaspoon baking soda
* ⅓ cup tahini
* ½ teaspoon grated lemon zest
* Juice from 1 lemon
* 2 tablespoon extra virgin olive oil
* 2 garlic cloves
* ¾ teaspoon cumin
* 1 teaspoon salt plus more to taste
* 1/3 cup fresh dill
* 1/4 cup ice water
Method
1. In a pot, combine garbanzo beans and baking soda. Cover with 1 inch of water. Boil, then reduce heat to medium-high and simmer for 12-15 minutes until chickpeas are soft and thoroughly cooked. Drain.
2. In a food processor, add tahini, lemon juice, and lemon zest. Blend for 30 seconds, scrape the sides, then blend for another 30 seconds to form a thick paste.
3. Add extra virgin olive oil, garlic, cumin, and salt. Blend, scraping the sides as needed.
4. Add half of the cooked chickpeas and blend. Scrape the sides, then add the remaining chickpeas and dill. Blend until smooth and creamy, approximately 30 seconds.
5. While the processor is running, gradually pour in ice water until the hummus becomes creamy & smooth.
6. Season with salt to taste.

🥯🥕🍣 Often when people talk about making food such as hotdogs out of vegetables like carrot even I may roll my eyes. However, this “smoked salmon” made from roasted carrots is actually something to rave about.
The key to this dish is to:
* slice the carrots thinly
* roast carrots in a salt bath in the oven
* use liquid smoke or smoked paprika to give it a smokey flavour
There are a tonne of recipes online, look for some which have these steps.
I like to enjoy mine on bagels with cream cheese, sliced red onion and capers.
