Free Soul Cafe - @freesoulcaffe Summary: This may very well be a favorite date spot. Fancier vegan places with great “mood” lighting are hard to come by. Free Soul Cafe has a relaxing indoor ambiance and a spacious patio as well. Their espresso/cappuccinos are so Delicious with great presentations. Though they do not serve alcohol, there is a wine bar across the street to finish you evening. They have a variety of foods from weekend brunch to Italian dinners. We were very impressed with their authentic take on pizza dough and their potato pizza. Their flavor combinations and creativity with their dishes are ones you don’t want to miss out on. We are pleased when a restaurant can make their own cheeses and cream sauces that would fool any non-vegan. We’ve been several times and look forward to returning soon. Vegan Lasagna

It’s my goal to recreate the vegan version of my favorite comfort foods. Lasagna is at the top of the list. I found fantastic lasagna noodles that are vegan and gluten-free in my favorite grocery store.

You can make this quickly and easily or you can go the distance and make your own pasta, marinara, and cheese. I decided to use the store-bought lasagna noodles, my homemade marinara sauce, and store-bought mozzarella and parmesan cheese. Check out the recipe below. It required minimal effort but it’s big on taste!

Vegan Lasagna Recipe

2 24 ounce jars of marinara sauce (or homemade sauce)

2 8 ounce bags of vegan shredded mozzarella cheese

2 container of vegan ricotta cheese (optional)

1 large eggplant, sliced into think discs

1 large zucchini, sliced into thin ribbons

1 large yellow squash, sliced into thin ribbons

1 dozen Bella mushrooms, sliced thin

1 bunch of parsley

Preheat oven to 425 degrees

Prepare a 9X13 baking dish with cooking spray. Pour the marinara sauce inside to cover the bottom of the dish. Place one layer of lasagna noodles side by side, slightly overlapping to cover the surface area of the dish.

Top lasagna noodles with 1 cup of marinara sauce: then a generous layer of mozzarella cheese and ricotta cheese (optional). Repeat for 2 more layers!

Use any remaining sauce on the top layer.

Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 20 minutes. Tope the lasagna with one more layer of shredded mozzarella cheese and place in the oven for another 5-10 minutes until the cheese is melted. Watch this and remove from the oven as soon as the top layer of cheese is melted.

Top with a dollop of marinara, grated vegan parmesan cheese, and parsley.

TIP: When layering lasagna, always make sure the noodles are covered in sauce or they will be crunchy;-(

Feast your eyes on this. In lieu of stuffing ourselves at an overcrowded restaurant, only a week after our last restaurant date (thanks @fouronesix_tlv!) we decided to keep it simple and have a romantic night in. No babysitters, no pumping, just the two of us and bowls of handmade pasta and pesto. And I do mean handmade. Following tutorials for trofie from Pasta Grannies, we attempted to roll and twist with the flick of the wrist…with marginal success. Vegan Zizzi

We recently got the chance to try the three course meal from Zizzi and we obviously had to try the vegan options.

We started off with the "Little Soul" breads. The "Little Soul" bread is baked with garlic & sea salt and comes with a side of salsa. The "Little Soul" breads were beautifully made and we definitely recommend trying them. We also got the bruschetta which had slow-roasted tomatoes with fresh basil and nigella seeds, laid on toasted tomato & pesto focaccia and finished with more pesto. Again the bruschetta was delicious.

For main course, we got the Rustica Jackfruit Italian Hot pizza. The pizza included vegan jackfruit pepperoni, spicy harissa, roquito chillis and vegan MozzaRisella cheese.

And lastly, we got the Golden Millionaire's Slice for dessert. The Golden Millionaire Slice consisted of a chocolate chip cookie base, topped with layers of salted toffee and coconut chocolate ganache. Finished with splashes of gold.

Overall, we thoroughly enjoyed the options available at Zizzi's and absolutely recommend any person who is vegan to try these at Zizzi's.
