Avocado toast for dinner was a pretty good idea. Love the whole grain bread I got. Toppings are feta cheese, sriracha and cress.

Vegan Tofu Scallopini (Pan-seared tofu with linguine and a white wine butter sauce 🤤) *recipe by @rabbitandwolves This was my first time cooking tofu so tried to go simple. I was not super impressed with this preparation (I think more spice is needed), but this sauce was TO DIE FOR. Definitely a cheat meal, but will be using again #vegan #vegetarian #pescatarian #healthylifestyle #fitnessjourney #nutrition #nutritioncoach #foodporn #veganrecipes #veganfood #tofu #motivation #inspiration #veganspo (at Charlotte, North Carolina) https://www.instagram.com/p/CN2niVZpqpM/?igshid=1xgb81jufipzw

I recently discovered that steak and mashed potatoes is my ultimate low spoons food, bc I can have it done in all of ten minutes. This method also works for hamburger or other kinds of basic meats:
- thaw your meat of choice (toss it in a sealed bag in a bowl of room temp water and it’ll thaw completely in about five or ten minutes)
- heat up your cast iron skillet or regular pan (medium high for steak/beef, medium for other meats)
-open your chosen meat and season liberally with whatever spice mix you like, my go to is Kinders Buttery steakhouse blend or any garlic sat mixture but you can adjust to your preferences. Kinders makes tons of awesome seasoning mixes
- toss a pat of butter (or whatever oil you like) into the pan and spread it a little, then toss your meat in (if you are using chicken, I recommend cutting it into small pieces because they will cook faster and you can cut one in half to check if it’s completely done)
- four minutes on each side for rare, plus one minute on the edges to brown them. Add another two minutes or so depending how you like your steak cooked.
- while the steak cooks, heat two cups of water to a boil in the microwave or electric kettle, then mix with instant mashed potatoes and let sit
- check that your meat is done to your liking
- enjoy!
* if you want a healthier option you can microwave some frozen veggies instead of or in addition to the potatoes, the juice from the meat is good flavoring but it’s also good with teriyaki sauce (bottled) or just soy sauce

Recipe Post: Coconutty Oatmeal Raisin Cookies (GF, DF)
Recipe Post: Coconutty Oatmeal Raisin Cookies (GF, DF)
It should be pretty apparent that I enjoy developing my own recipes; one of the ways I do this is by converting tried and true “standard” recipes to accommodate certain special diets, as I did with these cookies for a friend who is gluten intolerant. I heard from her recently that she was just finishing off the last of the cookies I had gifted her (she really made them stretch!), and declared…

Simple Black Bean Veggie Burger Recipe
There is nothing like a juicy, all-American cheeseburger unless you are either a vegetarian or vegan. Nonetheless, you can still enjoy this American staple without the beef. This simple black bean veggie burger recipe from allrecipes.com is delicious and easy to make. Even if you’re not a vegetarian or vegan and want to change things up or cut back on meat, these veggie burgers are for you as well!
Simple Black Bean Veggie Burger Recipe
Tumblr media
Ingredients
1 (16 oz) can black beans, drained and rinsed
1/2 green pepper, cut into 2-inch pieces
1/2 onion, cut into wedges
3 cloves garlic, peeled
Egg
1 tablespoon chili powder
1 tablespoon cumin
Teaspoon Thai chili sauce or hot sauce
1/2 cup bread crumbs
Directions
Firstly, preheat your cooking appliance. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat the oven to 375 degrees F, and lightly oil a baking sheet.
Next, mash the black beans with a fork until thick and pasty in a medium bowl.
Thirdly, finely chop bell pepper, onion, and garlic in a food processor. Then stir in with the mashed beans.
Stir together the egg, chili powder, cumin, and chili sauce.
Stir the egg mixture into the mashed beans. Then mix in bread crumbs until the mixture is sticky and holds together. Divide the mixture into four patties.
If grilling, place the patties on foil, and grill about 8 minutes on each side. If baking, place the patties on a baking sheet and bake for about 10 minutes on each side.
Lastly, grab a bun and toppings and enjoy your delicious black bean veggie burger!
