Vegan Cookie Mug Cake 🍪

Made with basic pantry ingredients and cooks in the microwave!

Get this easy recipe below:
Vegan Cookie Mug Cake
4 tbsp flour of choice (I used spelt flour)
1/2 tsp baking powder
1 tbsp brown sugar
Pinch of salt
2 tbsp natural peanut butter (other nut and seed butters work)
1/4 cup dairy free milk
1-2 tbsp chocolate chips

Add dry ingredients except chocolate chips in a mug. Add peanut butter and milk and whisk together with a fork. Fold in chocolate chips and place mug in the microwave for 1 minute and 30 seconds. Please note, every microwave is different. If you are worried yours might be set too high, microwave for 45-50 seconds first. Open the door, check doneness of cake and microwave for an additional 10 seconds until cake looks baked. Make sure to have enough space in your mug to allow your cake to rise. You can make this allergy friendly with a few swaps.

Use dairy free chocolate chips. Use the dairy free milk you prefer. Use oat flour, almond flour or 1 to 1 gluten free all purpose flour. Use a seed butter instead of nut butter to make nut free.

Enchiladas always look so nice in the baking pan and then BAM! as soon as you put them on a plate, they suddenly lose all structural integrity. 
These are black bean, onion, pepper enchiladas with pico de gallo and lime crema. I love to make a ton of enchiladas and freeze them for later. So versatile.

i think vegetarian food is bad in countries like america because the main focus is on meat substitution, rather than enhancing the inherent flavours of produce. no one would ever judge chicken on how much it can taste like spinach... u have an entirely different set of flavours w vegetables, work with them rather than against them.

Miso Glazed Mushrooms 🧡

(Makes 4 servings as a side)

Ingredients
14 oz button mushrooms *
1 medium onion chopped
1/3 cup tamari
2 tsp miso paste
2 tbsp apple cider vinegar
2 tbsp maple syrup
2 tbsp water
1 tsp arrowroot powder
Instructions
Start by boiling the mushrooms in a saucepan until fully softened. How long this takes depends on the size of the mushrooms, but usually takes 5-10 minutes. To test, take one out with a wooden spoon, wait for it to cool down and then test with a knife or a toothpick.
Add the onion to a non-stick frying pan and cook for 2-3 minutes, until softened.
Meanwhile, prepare the glaze my stirring together the tamari, miso paste, apple cider vinegar, maple syrup and water.
Drain and rinse the mushrooms, and add to the frying pan, stirring for a minute to reheat and brown.
Pour in the glaze together with arrowroot powder. Cook for 2-3 minutes over a medium heat, stirring, until the glaze thickens..** Serve with rice or any other side or main dish! 
Notes
* Other mushroom varieties will work, but keep in mind that cooking times will vary. If you are going to use shiitake or oyster mushrooms, skip the boiling stage and simply add them in with the red onion, frying for around 5-7 minutes until softened and browned.
** The glaze can go goopy if left for too long, therefore I would recommend making the mushrooms and onions in a batch ahead of time and keeping them in an airtight container for up to 3 days. When you are ready, whip up the glaze and add to a frying pan together with the mushrooms and arrowroot and serve!

TIME TO EAT THE PREFERRED FRUIT OF MONSTERS OF THE MIDWEST!
And by that I mean sweet corn. It’s cheap as FUCK in late summer. Do you have $2? GET READY FOR SO MUCH CORN YOU’L HAVE TROUBLE CARRYING IT ALL!. (Especially if you can get it off the back of some guy’s truck)
This recipe goes out to all the educate’n and just-trying-to-get-by motherfuckers. We’re making sweet corn in a coffee maker.
If you’ve got a pot and a stove handy, just shuck ‘em, de-hair ‘em, and chuck them in some boiling water for about 15 minutes. Ta da! Corn.
But if you’re stuck somewhere with only a coffee maker and your fragile dreams for the future, or you’ve never made corn on the cob before, get ready to SUPPLEMENT YOUR DREAMS WITH THIS SHIT!
Step 1) BUY CORN. If you live in the USA it should be cheaper than a straight guy’s opinion this time of year.

STEP 2) STRIP IT TO ITS UNDERGARMENTS. Ask consent first.

STEP 4) BRUTALLY BREAK ITS SPINE RIGHT IN HALF. THE BATMAN IS NO MORE!

STEP 5) RINSE OUT YOUR COFFEE MAKER, FILL IT WITH CORN AND WATER

STEP 6) TAKE OUT THE CORN TO NOTE WHERE THE WATER LINE IS. Empty the coffee pot, rinse, and fill with fresh water back to that line. YELL ABOUT SCIENCE AS YOU USE THE POWER OF DISPLACEMENT

STEP 7) UNTAINTED WATER GOES IN COFFEE MAKER. CORN GOES IN POT!
STEP 8) INTRODUCE LIGHTNING

Dress up your corn with:
- butter
- bbq wing sauce
- Mayo and Parmesan cheese
- NOTHING, EAT IT WITH THE STEAM IT WEEPS AS IT SCORCHES YOUR GUMLINE IN SELF DEFENSE!
