Bengali Pointed-Gourd & Papaya Stew

Ingredients:

10 tbsp mustard oil, 1 tbsp cumin seeds, 1 bay leaf, 8 pointed-gourds (peeled and sliced into half), ½ a green papaya (peeled and cut into 2-inch squares pieces), 2 potatoes (peeled and cut into long slices), 1 tomato (diced), 2 green chilies, 1 tbsp grated ginger, 1 tbsp salt, 1 tbsp turmeric powder, 1 tbsp cumin powder, 1 tbsp coriander powder, 2 cups of water, 1 pinch of sugar.

Method:

In the heated wok, add mustard oil, cumin seeds, bay leaf and pointed gourds. Cover and cook on high heat for 4 minutes. Turn heat to low, add potato and papaya, mix well, cover and cook for 2 minutes. Add tomato, green chilies and ginger, mix well, cover and cook for 2 minutes. Add salt, turmeric powder, cumin powder and coriander powder, mix well, cover and cook for 2 minutes. Add water and sugar, mix well, cover and cook for 6 minutes.

  • Best enjoyed in summer.
  • Ensure the pointed gourds are lightly toasted before adding the potatoes and papayas.

Bean and cheese burritos


1 can refried beans

¼ cup taco or enchilada sauce

2 t cumin

1 t garlic

1 t paprika

1 t black pepper

6 soft taco shells

8 oz cheese, shredded

¼ small onion diced small

1 Roma tomato, diced

Mix beans with spices and taco sauce. Split up into the shells. Top with onions and tomatoes, then most of the shredded cheese. Roll and place in 13x9 baking dish. Top with the rest of the cheese. Bake @350 for about 12 minute until cheese is melted.
