The happy endings are up to you! Here are some of my ideas if you're not sure. Or if you're curious.

Personally for Gascoigne, his wife doesn't leave and die, and his kids are waiting for him. He escapes beasthood and lives to see the end of the hunt.

Queen Annalise is freed from her metal-head contraption, and she is able to walk amongst the living, no longer confined by her prison.

Arianna survives the night and does not become impregnated by Odeon. Another option is that she does, but she doesn't go mad and chooses to love the baby despite it all.

Eileen survives to hunt the hunters another day, she is also free to retire peacefully if she so chooses.

Djura stays vigil over old Yharnam until (in my own canon) the beasts vanish once the night is over. He is freed from his self imposed exile and allowed to mourn the tragedy of Old Yharnam.

Henryk does not go mad, and survives the night to live another day. Perhaps this time, although much is lost, another endless hunt won't happen in his life time.

Simon survives after hiding in the hut, and when the Nightmare is over, his spirit is freed, no longer burdened by the horrors that took place.

Lady Maria does not stay vigil in the clocktower for as long as she did (implied to be a VERY long time) and her loneliness, guilt, and self imposed "punishment" is forgiven by you, the Good Hunter. Since she is part of the Nightmare, once it is over, her spirit is able to move on. Gameplay wise you HAVE to kill her to get to the fishing hamlet, and there is no way around this. The happiest ending is arriving earlier, and freeing her from the vigil.

Iosefka does not get killed by the imposter, and her genuine attempts to help the civilians are/provide a safe dwelling is successful. She survives the night.

Odeon Chapel Dweller survives the night, but with all the (right) npcs/civilians sent to him, he is not longer outcasted by Yharnam society due to his appearance. Instead he is venerated for his kindness and ability to provide a safe space whilst so many others focused on only helping themselves.
