Alaskan sourdough starter batch two! This was our carryover starter from last week’s vintage Alaskan Sourdough pancake recipe. This week, we let it rise for 24 hours in the greenhouse where it was a cozy 78 degrees. Black Midnight Devil’s Food Cake

Growing up, Saturday was baking day at my house. My Mom would bake a cake, a pie or cobbler, and maybe make some pudding for the upcoming week. The season would dictate many of the baking items. Every supper ended with some sort of a dessert and we had to finish our meals before the treat was allowed! It was never a chore for me to finish supper…hmm….wonder why I always have had to fight my weight???

One of my favorite cakes was my Mom’s Black Midnight Devil’s Food cake. It was baked in a 8 x 8 inch old square pan. She would save some coffee from breakfast to add instead of water as she said that made the flavor much more intense. It wasn’t a hugely sweet cake, but oh my. When topped with her Fudge frosting, it was to die for. The frosting was a semisweet frosting that went on smooth, but then hardened into a solid, almost candy layer.

My birthday was this last weekend and I had a hankering for that cake. But I knew if I made it (or my husband made it), I’d be tempted to eat it all at one sitting. So we decided to bake it into cupcakes instead. Dave pitched in and did the cupcakes and frosted it with that Fudge frosting. He didn’t realize that the frosting would harden so he wasn’t as quick with the 14 cupcakes as he probably should have been, but the taste was just as fudgy as I remembered. They added so much to the intense, rich, moist cake. Oh….what a great birthday treat! Here are both recipes for your enjoyment:

BLACK MIDNGHT DEVIL’S FOOD CAKE

½ cup of shortening 1 ½ cup shifted flour

1 ¼ cup of sugar 1 ½ tsp baking soda

2 large eggs ½ tsp baking powder

½ cup of cocoa

1 cup of hot water or hot coffee

Grease and flour one 8 inch x 8 inch square pan. You can also use two 8 inch round pans or cupcake pans. (this will make approximately 14 cupcakes).

Preheat oven to 350 degrees.

1. Combine cocoa and hot coffee (or water) in a small bowl. Stir to dissolve cocoa completely. Set aside.

2. Combine Flour, soda, and baking powder in another small bowl. Mix well.

3. Cream shortening and sugar in a medium bowl. Add 1/3 of flour mixture and mix well. Then add ½ of cocoa liquid and mix to combine. Add another 1/3 of flour and mix well. Add last ½ of liquid and mix to combine. Finally add last of four mixture and beat until well combined.

4. Pour mixture into greased and floured pan(s).

5. Bake until a toothpick comes out clean. Square pan will take 45-55 mins, 8 inch rounds 30-35 mins and cupcakes 15-20 mins.

6. Cool and top with frosting.

My mother usually made this in the square pan and did not remove it from the pan. After frosting it, she would just cut into squares to serve it to us.

CHOCOLATE FUDGE FROSTING

2 squares of baking chocolate (2 oz)

2 tbs. butter

1 ½ cup confectioners (powdered) sugar

Dash salt

3 tbs milk (may not need this much)

1 tsp vanilla

1. Melt butter and chocolate together and let cool

2. Pour melted chocolate/butter into powdered sugar and beat until combined.

3. Add vanilla

4. Starting with 1 tbs of milk and beat the milk into the frosting. Continue to add milk by teaspoons full until desired consistency is obtained.

5. Frost cake immediately as this will harden on the cake pretty quickly.
