I feel like I simply. Could Not take the pressure of writing an official Star Trek novel or novelization, because, as someone who loves making silly jokes For The Bit, the potential repercussions are so intense.
You write one line about Spock getting drunk off the sucrose in a mint and suddenly there are 50,000 fics about Spock's addiction to chocolate and everyone has to rethink the entirety of the chemical properties of the Vulcan diet
Can you imagine what a misplaced pun might do

Anne Jane Thornton, a 15-year-old girl, dressed as a cabin boy on a transatlantic voyage to find the man she loved, who had gone to America in 1832. On arrival, she found he had died so she took posts on other ships, calling herself Jim Thornton. On her return crossing to London on The Sarah, a crew member noticed that she was a woman and she was taken to the ship's captain, who kept her on as a crewman.

I wish Voyager had explored why Tuvok chose to go into Security upon re-entering Starfleet. He was a science ensign in 'Flashback' so it seems he made a conscious decision to be in security and it's such a potentially interesting field for a Vulcan since (to my knowledge) every other main Starfleet Vulcan introduced is a scientist first and foremost.

Husband: I have a question.
Me: What?
Husband: I was thinking about something this morning. When was the last time you wrote some PWP?
Me: … months. At least.
Husband: Maybe you should do something about that.
