Street Corn Queso
Chef’s Note: Very simple. Toppings are a necessity

Ingredients
Queso
2 tbsp unsalted butter
1 garlic clove, minced
1/4 to 1/2 tsp cayenne
2 tbsp all-purpose flour
2 cup milk
4 cup shredded cheddar cheese
2 cup shredded Monterey Jack cheese
corn tortilla chips, for serving
For topping, per each serving / serve as a whole
1 tsp vegetable oil
2 tbsp / 1/2 cup frozen corn
(opt.) 1 tsp / 1/4 cup crumbled queso fresco
2 tbsp / 1/4 white onion, chopped
2 tbsp / 1/2 jalapeño/poblano, thinly sliced into rounds
Cilantro leaves, for garnish
Chili powder, for garnish
Instructions
1. Add butter to a saucepan/pot and let melt.
2. Add garlic and cayenne and cook until fragrant, 1 minute.
3. Add flour and whisk until smooth. Cook 1 to 2 minutes, until flour is no longer raw.
4. Add milk and bring up to a simmer. Cook, stirring occasionally, until milk has thickened slightly, 2 to 3 minutes more.
5. Add cheese, in batches and whisk until smooth and melted completely.
6. Charred corn: Heat vegetable oil in a small saucepan. Add corn and cook, stirring occasionally, until corn takes on some golden charred color, 4 to 6 minutes. Set aside.
7. When ready to serve, give queso a final stir. Top either the entire thing, or spoon out into individual servings. Toppings of: charred corn, queso fresco, onion, jalapeno, cilantro, and sprinkle with chili powder

Selling
            For corn to be sold to people as tortillas first, it is generally processed after harvesting. This is to prevent the disease, pellagra. When corn travelled the world after it was discovered by Europeans, pellagra followed in its wake. The disease itself debilitates a person over the years due to a lack of niacin in their diets. When you consume corn all your life without extra nutrients you eventually go insane and die, long after developing strange sores.12 Thankfully, we know how to prevent this disease, through nixtamalization. To sell corn tortillas, or other corn based staple foods, they must first not kill you. 
            The nitmalization process was once done by women in Mesoamerica, as part of their daily duties of making the corn dough to make tortillas with.13 The harvested corn kernels were leached in a solution of lime, usually wood ash or crushed limestone. This process releases the niacin in the corn, allowing it to reach its fullest nutrition potential. In addition, nixtamalization loosens the outer layer of the kernel, making it easier to work with the dough. Mesoamerica did not have pellagra. In modern times, nixtamalization occurs in the corn flour factory. Gleaming vats process the corn and make it safe to turn into a wide variety of products. 
            Some of these products, but concerning corn tortillas here, will be sold at the taqueria, the Mexican grocery store. This is a place to both buy tortillas and consume them. At the taqueria, corn tortillas are more popular than the white flour tortillas also common in the United States. These places offer both a gathering place for a community of immigrants and a place for long time residents to discover new flavors, and fresher tortillas. If someone doesn’t want to go to a taqueria to buy corn tortillas, they are sold at any number of stores across the country. In addition, tortillas in the form of chips are hiding under all our noses in the form of nachos. 
            Gas stations and movie theaters offer another avenue for the purchase of the corn tortilla, in its deep fried “chip” formation. These are served alongside hot dogs, a quintessentially American food. They represent a quick snack for those seeking a burst of heat with their zesty cheese and fiery pickled jalapenos. Prepackaged nachos represent an easy way to purchase already prepared corn tortillas, but using fresh ones opens up a world of possibilities.

new food rules for me<3
i think if i can make a list of foods to allow myself to eat and really avoid everything else, it’ll be a lot easier for me to keep it up so!!
can eat whenever:
-strawberries
-pickles
-water, gum
ALWAYS avoid:
liquid calories of any kind
diet sodas / anything carbonated (low/no cal but cause bloating and still bad for you)
ice cream (i don’t enjoy it very much, but once i have a little it’s hard to stop myself. i especially hate vanilla flavoring and creamy things, i just don’t feel well after)
dairy in general tbh
pasta, mac and cheese, pizza (i really don’t enjoy it very much but i try to enjoy it and overeat because i like the feeling, i always regret it and feel sick. there are just better options tbh)
fine, in limitation:
corn flakes or other low cal cereal (like 300kcal for a whole bowl, but it’s so easy to overeat)
french bread (when it’s fresh it’s very hard to avoid, high calorie so i’d rather just chew and spit a piece until i get grossed out than cut it out completely)
chocolate (hard for me to avoid when it’s in front of me, i just try to take very small pieces at a time and then wrap up the leftovers... even if i come back for it ((let’s be honest, i definitely will)), i can at least space it out a bit)
fast food (examples below) (if i stop myself completely, i’ll just end up giving up and binging/ ordering waaay too much when i finally go back to it tbh. i’m trying to keep it minimal/ maybe once a week or every other week.)
fast food go-to’s:
mcdonalds: 10piece chicken nugget, medium fry: 460 + 350 = 810 kcal
kfc: small popcorn chicken, small fries: 362 + 260 = 622 kcal (i’m uncertain about the sizing and found different results on calories... but i’m going to count this anyway because i NEVER end up finishing the chicken and i throw away like half of it)
starbucks: two bacon gouda sandwiches: 370 + 370 = 740 kcal (trying to avoid liquid calories so no drink)
chipotle: build your own taco/burrito kit (yes, the one for kids haha) with flour tortillas, white rice, shredded cheese, and guac: estimated 1000kcal (i’m unsure because the amounts are difficult.... probably a little less because i can never finish it all but i do also get chips. no drink)
NOTE: if i’m really craving something, the best thing to do is eat some of it along with fresh fruit (i.e. cheetos, bread) or in the case of fast food, to try to order the smallest version of the meal you want (i.e. 4pc nugget and sharing a small fry, or just eating a bite of everything and then throwing it away) so you can’t go back and get seconds afterwards. instead of refusing to eat what you really want to and binging on crap later, i think it’s easier to give in a little and then make up for it later. plus, i’ve noticed that most of the foods i crave taste so much better in my head... when you eat it and are disappointed, it’s less appetizing in the future

Today I have Made Soup again and this time it’s one of my favorite recipes which I’ve discovered is only available on the Wayback machine.  So I’m gonna repost it here for posterity.
Tex Mex Chicken and Rice Soup

Ingredients:
3 tablespoons olive oil
divided coarse salt and fresh black pepper
1 pound boneless chicken breasts, cut into small cubes
1 small onion, diced
1 red or green bell pepper, diced
1/2 cup finely chopped black olives
3 cloves garlic, minced
1 + 1/2 teaspoons chili powder
1 teaspoon dried oregano(preferably Mexican), crushed between fingertips
1/2 teaspoon dried thyme
1/2 cup uncooked long or medium-grain white rice, rinsed well in a wire strainer with cold water
5 cups low-sodium chicken broth
1 cup salsa
2/3 cup fresh or frozen corn
for serving:
fresh chopped cilantro
lime wedges
shredded sharp cheddar cheese
sour cream
tortilla chips
Instructions
In a large soup pot heat 1 tablespoon of oil over medium heat. Season the chicken well and cook, stirring often so all sides get browned. Remove to a dish and set aside.
Add 2 tablespoons of oil to the pot over medium-low heat and saute the onion, pepper, garlic and olives together 5 minutes, season well with salt and pepper and stir often.
Mix in the chile powder, oregano, thyme and rice, cook 3 minutes.
Stir the chicken back into the pot and add the broth, salsa and corn. Bring to a simmer and cook 30 minutes. Stir and taste often - seasoning as needed.
Serve with toppings like cilantro, cheese, sour cream, lime and tortilla chips if desired.
This soup is really adaptable.  I usually make it with leftover chicken or turkey (like right now) rather than from raw.  The veggies also can be subbed for whatever you have/like. (I like adding chopped zucchini in the later half of cooking to replicate this one soup from a restaurant I love.)  I added black beans this time cause forgot to get corn and also don’t have a lot of leftover turkey.  You can also use fresh herbs if you have them/prefer.

okay so these are all HEB-brand things except the last two. and sorry, this is so long... i got carried away. but i've gone to HEB my whole life so i am an HEB-expert lmao.
bakery section:
seasalt tortilla chips
hijole tortilla chips <- if you like spicy, these are a MUST!
fresh tortillas (especially the mitad y mitad/half-and-half, they're a combo of flour and corn)
tres leches cake (usually served in a little square but i'd also recommend the whole cake)
rosemary sourdough
pan dulce, specifically the conchas or pineapple empanadas
deli:
fresh guacamole and salsa and queso
culinary cowgirls queso (blanco/white flavor)

i unintentionally stuffed my belly today. this wasn’t even supposed to be a stuffing, but once i started eating i couldn’t stop.
all i had for breakfast around 11am was a bagel. i was kind of nervous all morning and didn’t really have an appetite. i ran a few errands before realizing it had been hours since i had the bagel and nothing else. i decided to get chipotle because i haven’t had it in awhile. i got a bowl with white rice, black beans, mild/medium/hot salsa, corn salsa, and cheese.
i came home and put my things away before sitting down to eat. i had some tortilla chips at home, and decided to eat them with my bowl. the whole day my belly didn’t growl, and it honestly didn’t feel that empty. but for some reason once i started eating, i felt ravenous. i guess the bagel was long gone. i quickly ate the entire bowl along with the chips, and my belly was full but not stuffed. i knew that i was satisfied and could be done, but i was craving something sweet.
i had just bought a pint of milk and cookies, my favorite ben and jerry’s flavor. i decided to open it, thinking i would only a eat a few bites because i was already getting pretty full. i ate the entire pint. it was so delicious, i almost felt like i couldn’t stop. about halfway through, my belly began to feel even more stretched out. i knew i wanted to finish the whole thing, hoping i wouldn’t upset my belly. i was so full by that point that i sat the container down and let it melt. once it was melted, i decided to just drink the rest.
my belly is so full and bloated now. it’s so gurgly too. i think i upset my poor belly. it is so noisy, and i can feel everything moving inside. the gurgles are so loud. luckily i was able to record some of the noises, and i’ll post it right after this. everything was so delicious in the moment, but im already regretting this impromptu stuffing. all i can do now is rub my rumbly belly and hope that everything digests smoothly.

Wieiad binge edition
breakfast: hashbrown (120), apple (65), egg white (17) ~ 202
lunch: blueberries (16), mandarin orange (40), tortilla chips (50), gum (5), baby carrots (28) ~ 139
snack: strawberry cottage cheese (160), 3 ginger snap cookies (70). i ate it bc i was going to the doctor and needed to temporarily put on weight but i just ended up binging. then in the car i ate kettle corn (450) and chocolate covered nuts (800) 😭
then when i got home i ate chips and guac, peanut butter, granola, a chocolate covered pretzel, a couple cookies, and weighed myself and i was 136, then purged and flushed but i forgot to weigh myself after
i stopped counting at this point, i ate a few more cookies, another chocolate covered pretzel, pickles, and a taco. then i made this bowl with cottage cheese, granola, peanut butter, graham crackers, a cookie, and cheerios, but i didnt finish it and purged.
THEN i finished the bowl, ate more cottage cheese, a couple more cookies, drank some selzter, and purged again but (tmi kinda gross!) not much came out and most of it was just like this slimy brown water 😭
then i weighed myself again and i was 136, i rlly hope some of it is water weight or bloating. i think i ate like 4k cals today. i wanna stop purging and switch to c/s but idk how yall do it cause i always accidentally eat the food 🦧😔

A Non-Comprehensive List of "Foods That Don't Really Exist In Australia Compared to America" In My Experience Thus Far
(Some of these you can find at specialty US food/import stores if you're lucky though!)
Saltine crackers
Graham crackers
Yellow/orange mac and cheese. It is white-ish here, comes in a smaller quantity but costs more, and does not taste the same. I tried making it like I would back home and my partner said "This slaps!" but I thought it was kinda dreadful :x
Twizzlers. Okay a lot of American candies are going to be missing but this is the one that hurts me most. Like, oh no they don't have Mike & Ikes- who the fuck cares.
Funky ice cream flavours in tubs. Australia does ice cream treats really well, you are pretty much guaranteed delicious results if it is individually wrapped. But anything outside of basic vanilla (which tastes VERY different from any American vanilla ice cream I've ever had in my life), chocolate, and neapolitan in a tub is gonna be goddamn scarce. I have managed to track down mint chocolate chip and cookies & cream but they were gross. Anything more complex- think moose tracks, chocolate cherry chip, brownie, rocky road, cookie dough, etc- you are shit out of luck my friend because if they do exist here they come in specialty brand pints exclusively and they are at least $12 a pop, kys
Jif peanut butter
Breakfast or "country" sausages. I actually had no idea that was exclusively an American thing until I moved here. No one knows what I'm talking about and I just gesture helplessly when they ask for details because I don't know what's in those either! I've never had to think about it before! But I better find out 'cause it's time to start making them myself. Send help.
(Good) Mexican food, just as a whole -_-;
Root beer. For some reason they have Ginger Beer but not Ginger Ale and I swear there is a difference but it probably doesn't matter
Ranch dressing?? I'm a good midwestern girl what is this fresh hell
Cheez-its, cheetos, cheez whiz, goldfish crackers- most salty cheese snacks. Your average grocery chain like Woolies or Coles isn't gonna have these and it's a little weird.
Fruit snacks. Presumably because they don't have enough fruit for Australia to legally call them that. I have found some at Costco but that's about it. Side note, the Kirkland chocolate chips bag says "Great for baking and snacking" so they've manually put a plain white sticker with black text over it that says "Great for baking and cooking" :')
Egg rolls. Actually most Chinese American food which. Okay that makes sense now that I think about it but orange chicken my beloved... crab rangoon... egg rolls... They do have "spring rolls" but they are kinda shit! Korean food is everywhere though and it is goddamn delicious. Oh and you can get mochi ice cream 10 for $10 at Coles. There's limited flavours obviously but they have strawberry and mango and that is all that matters tbqh (black sesame is a 0/10, truly awful)

Lemonade. Australians will insist they have lemonade but it is fucking carbonated!! I'm like no no it's not supposed to be fizzy, it's not like a Sprite. "So it's just lemon and sugar water...?" Yes!!! God!!
