Kakaomælkkoncentrat!
Chocolate milk concentrate. Very indulgent, tastes a little bit like chocolate ice cream.
Ingredients:
100 g dark chocolate (50+% cocoa)
4 teaspoon cocoa powder (unsweetened) or 5 chocolate liquor drops*
5-6 tablespoon sugar
1 teaspoon vanilla extract (optional, required for ice cream like flavor)
1/4 L cream (38 % fat content)
* chocolate liquor is the step in the chocolate making process just before cocoa butter and cocoa powder have been seperated. It is not an alcohol, despite the name.
How to:
Melt chocolate and cocoa powder and sugar and vanilla in a pot on medium heat while stirring slowly but consistently
Add cream and stir
Give it a quick boil at medium high heat while stirring. Like you want to see bubbles through the stirring. Do NOT under any circumstances leave it. It will burn.
Remove from heat and stir until it does no longer bubble
Put in fridge to set completely (usually takes 12+ hours). If it is not fully set it will not dissolve in milk properly.
Keep in fridge as it is milk
For 1 mug of hot cocoa you take 1 big tablespoon concentrate and put in the mug. Add milk to amount of hot chocolate wanted. Heat at 50-60% for 2:30 minutes in microwave and stir.
For 0.5 L jug of cold chocolate milk you take 1-2 tablespoons of the concentrate (depending on how much chocolate flavor you want) and add milk until it is covered. Stir and stir and smoosh and stir until mostly dissolved. Add milk up to what feels like a proper amount of chocolate milk. Put in fridge for 30 minutes for the concentrate to dissolve fully. Stir before serving as it will settle.
