This week

This weekend we lost my grandad and my aunt one day after the other. It was a terrible weekend and hard to see the positives in life but …. I had my vaccine (part one) on Sunday.

Wonderful friends sent flowers and vegan brownies and vegan cupcakes and made us feel very loved. We are so lucky to have such wonderful people in our lives we really really are.

Made vegan pho tonight which was amazing. So so tasty and will be having it a lot in the future even post veganuary.

Should I try the entire Cheesecake Factory dessert menu and share?? This was great! 🍓

General Tso’s Tofu

Ingredients

For the general Tso’s tofu

• 10 ounces firm tofu (275 g), cubed
• 2 tbsp tamari or soy sauce
• 1 tbsp apple cider vinegar
• 6 tbsp cornstarch
• Oil of your choice, I used extra virgin olive oil
• 2 cloves of garlic, minced

For the sauce

• 3 tbsp tamari or soy sauce
• 3 tbsp apple cider vinegar, see notes
• 3 tbsp vegetable stock or water
• 3 tbsp cane, coconut or brown sugar
• 1 tbsp cornstarch
• 1/8 tsp red pepper flakes, optional
