“His Little Harem”
Katara finds them all snuggling fast asleep in the oldest girl's bedchambers, Zuko still holding the storybook he’d been reading to them.  There's already a glimmer in the woman’s eyes, and a grin -- small and precious -- forming on her face as she reaches for her necklace instinctively.  After so many years of knowing this man, it's like she's getting to know him all over again. --Personal Note-- There’s a part of me that likes to believe Zuko and Katara became parents to multiple daughters later on. Considering that teenage-angsty-broodish Zuko had always been awkward around women, I like to think Katara would refer to them as “his little harem” like an inside joke, just to make Zuko blush.

For me, it would demonstrate how funny destiny really is.  
For Katara, she would not only learn to love someone she’d seen as her mortal enemy, but also embrace his culture as much as her own, and raise bi-racial, bi-cultural children together in a new world.  
For Zuko, a boy who'd grown up enduring his father's abusive treatment, Zuko would instead be an involved, lovable, caring -- dare I say goofy? -- dad to his children, and would not play favorites (unlike Firelord Ozai, or even Aang, as we learn in LOK...), and encourage them to appreciate their Fire and Water culture equally. 
I also felt bad that Zuko never really had the chance to be around gentle, compassionate female role models after his mother's disappearance (Azula? Mai? Pssh) so wouldn't it be great if destiny gave him not only a beautifully-unexpected soul-mate as well as four daughters who would teach Zuko to be patient, loving, and kind?  
... I mean, the idea just melts my heart!
