Reposted from @veganfoods.daily Vegan Spinach and Artichoke Dip with fresh baguette by @twospoons.ca 💛 1 cup raw cashews 4 cloves garlic, finely chopped 1 small onion, finely chopped 2 teaspoons coconut oil 5 oz (140g) baby spinach 1 can (400 ml/14 oz) artichoke hearts, strained and pat dry, chopped 1 ¼ cups almond milk 1/4 cup nutritional yeast 1 tablespoon lemon juice 2 teaspoons miso ¾ teaspoon sea salt ½ teaspoon pepper 2 vegan demi baguettes (1 box, 400g) 1. Pre-heat oven to 375F/190C. Add the raw cashews to a small bowl and pour boiling water over top. Let soak. 2. In a medium-sized skillet add the garlic, onion and coconut oil. Bring to medium heat and cook until softened (about 10 minutes). Then add the baby spinach and cook until wilted (about 3 minutes). Add the artichoke hearts and simmer to remove any access water 3. Strain the cashews and add to a high-speed blender with the almond milk, nutritional yeast, lemon juice, miso, and salt and pepper. Blend until smooth. Add the cooked spinach and artichoke and pulse a few times for a chunky texture. 4. Transfer the mixture to a small baking dish (I used an 8 x 2 inch round dish). Cook for 20 minutes, or until the dip becomes fragrant and starts to lightly brown around the edges. Let cool slightly. 5. Bake demi baguettes on a baking tray for 8-10 minutes at 410F. Let cool, then slice. Optional to toast the slices by turning the oven to broil and spreading the baguette slices onto the baking tray. Toast for 1 minute, or until golden brown, flip and toast the other side. Use the baguette slices for dipping into the spinach and artichoke dip. *Note: This recipe uses artichoke hearts packed in water, not oil. It’s typically found in canned form. Simmer for 10 minutes or until thickened. 🥜 take 1 cup of creamy peanut butter and add 1 T of protein powder and stir to combine. 🥜 take 10 muffin liners and line your muffin pan. Pour melted chocolate to coat the bottom of your liners. Place in fridge for 10 mins to set. 🥜 once cooled place a T of rasp in the centre of muffin liners with another T of peanut butter. Tomato and Basil Risotto by @thefoodietakesflight 🍅 So comforting! ❤️ Get the recipe: TOMATO AND BASIL RISOTTO Good for 2-3 servings 3 1/2 cups vegetable stock, or more depending on desired doneness 3/4 cup uncooked arborio rice (this is essential) 1/4 cup chopped red or white onion 2 cloves garlic, minced 2 tbsp olive oil 1/4 cup dry white wine (optional but highly recommended!) 1 cup chopped tomatoes 1/2 cup chopped sundried tomatoes** 1 tbsp basil, chopped 1 tbsp tomato paste 1 tsp salt, or to taste* Extra basil, for topping Notes: *The seasoning of your risotto will depend greatly on your stock. If your stock is well seasoned, you’ll need to add minimal salt to the risotto **The sundried tomatoes I used were those bottled and soaked in oil. Feel free to use dried ones. Steps 1. Prepare your stock. I simply boiled around 4 cups of water then added in a cube of vegetable stock. You can opt to make your own stock by boiling leeks, celery, carrots, and onions with a generous amount of salt for 3 hours. 2. In a large pan/pot, heat the olive oil. Add in the onions and garlic. Sauté until tender and aromatic. 3. Once cooked, add in the chopped tomatoes. Sauté for 2 minutes. Add in the arborio rice. Coat in the oil-tomato mixture well. 4. Pour in the white wine. Mix until it has been absorbed (the rice will turn a bit creamy). 5. Pour in 1 cup of the stock to the rice. Add in the tomato paste, basil, and sun dried tomatoes. 6. On medium heat, continue to mix frequently until the rice absorbs the stock. Keep stirring until the rice absorbs the liquid. 7. Add another 1/2 cup of the stock. Mix frequently until it is absorbed. Repeat this step every 5 mins or so. 8. After 25-30 mins or so, rice should be perfectly cooked and still chewy. Season with salt as needed. 9. If the risotto is a bit dry, feel free to add in 1/4 cup of stock and mix well. 10. Follow @thedeliciousgreen |Thanks to @healthyfitnessmeals for this great recipe. 💙 🍲Ingredients 🍲 8 oz. wheat short pasta 1 tsp salt 1 tsp olive oil 2/3 cup plain greek yogurt 1 lemon juice & zest of 1 tsp Old Bay seasoning 2 tbsp chopped chives salt and pepper to your taste 8 ounce crab meat cut into bite-size pieces 8 ounce pre-cooked shrimp cut into bite-size pieces 1/2 cup celery finely diced 🍲Instructions 🍲 1 - Boil the water in a large pot with some salt and a drizzle of oil. 2 - Add the pasta, stir well and cook until al dente, about 8-10 minutes or according to the package directions. Once done, drain the pasta in a colander and run under cold water; set aside. 3 - Meanwhile, in a salad bowl, whisk yogurt together with the lemon juice, zest, Old Bay seasoning, chopped chives, salt, and pepper. Stir in the pasta and toss to evenly coat. 4 - Add in the shrimp, crab, celery, and gently fold. Creamy Broccoli Pesto Soup with Pan Fried Gnocchi By @plantbased.traveler Recipe: Ingredients: 2 tbsp vegan butter 1 small-medium onion (1/2 cup chopped) 3 garlic cloves 1 large celery stalk or 2 smaller ones 1/4 cup all-purpose flour 5 cups vegetable broth (+ 1 extra cup if needed) 1 one-pound bag of frozen broccoli 1/3 cup oil-free vegan kale pesto * Topped with: Crispy pan-fried mini gnocchi Fresh parsley Optional: Vegan cheese shreds ________________________ Finely dice peeled onion, garlic and celery. Heat up vegan butter in a deep pan or dutch oven, and sauté onions and celery until fragrant, about 3-4 minutes. Add garlic and cook for another minute. Add flour to the veggie mix, and stir for a minute, then stir in vegetable broth. Bring to a boil, whisking continuously until soup thickens. Add frozen broccoli but reserve about 1 cup of florets to add later. Simmer for 10 minutes, then blend soup until smooth. Either use an immersion blender or let the soup cool down enough to transfer to a blender. Add remaining broccoli florets to the blended soup, and simmer for a few more minutes or until broccoli florets are tender. If needed add some more water or broth to thin out the soup. Stir in pesto at the end, and if using vegan cheese shreds. Season to taste with salt and black pepper. In the meantime, pan fry gnocchi in a non stick pan with some vegan butter until crispy. Top broccoli soup with crispy gnocchi, fresh parsley, and enjoy! *Homemade pesto made with kale, basil, almonds, lemon juice, garlic, nutritional yeast, salt. Citrus & Pomegranate Kale Salad🥬 1 bunch kale, leaves cut off the stems & chopped Clementine oranges Pomegranates Toasted pepitas (toasted at 375 degrees for 5-6 minutes) Honey-lemon vinaigrette: 2 lemons, juiced + 4 tsp honey + 1 tsp olive oil + cracked pepper . 1. Massage the kale leaves in a splash of olive oil & lemon juice for 5 minutes. Then add your oranges & pomegranates & toss them with your dressing.
